Beautifully presented, this cucumber avocado salad is tasty, creamy and ever so moreish! The creamy garlic salad dressing is silky, strong in flavour and ever so delicious. You’ll be coming back for more of this spicy green salad!

Creamy Cucumber Avocado Salad

garlic

tsp salad onion (finely chopped)

mayonnaise

Greek yoghurt

apple cider vinegar

Worcestershire sauce

tsp sugar

broad bean

flat leaf parsley

coriander

avocado

jalapeno (finely diced)

olive oil (extra virgin)

salt (to taste)

pepper (to taste)

Make the dressing first as it needs to sit in the fridge for 2 hours.

Peel the garlic cloves and chop roughly.

Peel the salad onion and chop to yield ½ tsp.

With a hand blender, blitz the garlic, salad onion, mayonnaise, Greek yoghurt, apple cider vinegar, Worcestershire sauce and sugar until completely pureed and well combined.

Place in the fridge for a minimum of 2 hours.

Salad Dressing

Cut the cucumber into half. Then cut it down lengthwise around the seeds. Discard the seed. Cut the cucumber into small cubes.

Bring a small saucepan of water to the boil. Add broad beans and boil for 2 minutes. Remove and run under cold water to stop the cooking process. To remove the skin, peel off a small bit at the top and then from the bottom squeeze the broad bean and it will pop out of the skin.

Roughly tear the parsley and coriander leaves to yield ½ cup each. Discard the stem.

Cut the avocado in half. Discard the seed and peel the avocado. Do so gently as we want the avocado to stay nice and smooth. Place one half flat on the chopping board and slice very thinly. To stop the avocado from sticking to the knife, push down each slice before removing the knife so it stays in place. After slicing, gently fan out the avocado. Let it fan out in its natural curvature. Slowly manipulate it to create a circle. Do the same for the second half.

Salad

Remove the dressing from the fridge and allow it to stand for about 15 minutes so it gets to room temperature.

Place about 8 tbsp on a flat platter. Spread it out evenly by picking up the plate and swirling it so the dressing spreads out evenly. Like you would a pancake batter in a pan.

Put the cucumber, broad beans, parsley, coriander and jalapeno into a medium size mixing bowl. Add ½ tsp olive oil, salt and pepper and mix until well combined. Place salad on ¾ of the plate on top of the dressing.

Using a large knife or a flat frying utensil to, slide it under the sliced avocado, lift gently and place it on the side of the plate. Do the same for the second half.

Season with salt and pepper and serve immediately.

The viral shake-in-a-jar cucumber salad made high-protein with crispy roasted chickpeas, creamy avocado, and a big handful of fresh herbs. Vegan, gluten-free, and ready in minutes.

Viral Cucumber Salad (High-Protein Chickpea Version)

425 g chickpeas (drained and patted dry)

tsp smoked paprika

garlic powder

tsp cumin

tsp salt

cucumbers (thinly sliced)

red onion (thinly sliced)

avocado (diced)

spring onions (sliced)

g herbs (cilantro, dill, parsley) (chopped)

lemon juice

tsp agave syrup

oregano

tsp chili flakes

tsp black pepper

Roast the chickpeas. Pat the chickpeas dry, then toss with the olive oil, smoked paprika, garlic powder, cumin, and salt. Spread on a tray and roast at 400°F (200°C) for 25 to 30 minutes, shaking halfway, until deep golden and crisp.

Slice the base. Thinly slice the cucumbers and red onion, ideally on a mandoline, and layer them in a large jar.

Add the soft layers. Add the avocado, spring onions, and chopped herbs.

Season and dress. Pour in the lemon juice, olive oil, and agave, then sprinkle over the oregano, chili flakes, salt, and pepper.

Top and shake. Tip the crispy chickpeas over the top, seal the jar, and shake well until everything is coated. Eat straight away while the chickpeas are still crunchy.

Best cucumber avocado salad dressed with an Asian style umami miso sesame dressing! Add peaches, nectarines or heirloom tomatoes in the summer and reach for grapefruit and blood oranges during the winter months. You'll want to keep a variation of this salad on repeat year round!

Cucumber Avocado Salad with Miso Sesame Dressing

Persian cucumbers ((or 2 English cucumbers that

Hass avocados ((pitted + sliced thick))

onion

peaches

lime juice (freshly squeezed)

Tbsp white miso

Tbsp toasted sesame oil

maple syrup

Tbsp shoyu

sesame seeds ((+ 2 Tbsp for garnish))

slice cucumbers

Scrub and rinse the cucumbers then slice them into rounds if using the Persian variety. If using English cucumbers slice them lengthwise and then cut at an angle into bite size pieces. (You want them to have a nice bite to them so don’t slice too thin, maybe 1/3 inch or so). Add them to a large bowl or serving platter.

cut avocados + peaches

Cut the avocados in half, carefully discard the pit and slice the flesh into 1/3 inch thick pieces or so. Add to the platter with the cucumber and sprinkle with the red onion. Do the same with the peaches if using.

mix dressing

In a separate bowl whisk together all the dressing ingredients until a smooth emulsion is achieved. Pour half of it over the cucumber and avocado then add more as you see fit. Garnish with basil or cilantro leaves whichever you fancy and serve the extra dressing on the side.

The easiest most delicious and beautiful thing I’ve made this year! Can’t wait to try it with all the suggested variations like grapefruit wow this is one amazing salad!
