Peel the cucumbers. Cut in half lengthwise. Then slice into thin pieces. Place the sliced cucumbers into a large bowl.

Add the chopped dill, minced garlic, the zest of one lemon, 1 tablespoon of lemon juice, 1/2 cup plain greek yogurt, sugar, 1/2 teaspoon salt, and 1/4 teaspoon ground black pepper.

Toss until the yogurt blends into a thin dressing. Taste, then salt and pepper as needed. Serve cold.

English cucumbers, (about 2 to 2½ pounds)

mayonnaise

sugar ((add a bit more if desired))

white vinegar

Morton kosher salt

black pepper, (if desired)

Slice cucumbers and onion thinly, and add them to a large bowl. I prefer the slices to be between 1/16&quot; and 1/8&quot; thick - a mandoline works great for this!

In a small bowl, stir together sour cream, mayonnaise, sugar, white vinegar, salt, and dill. If desired, thin down the dressing with a little more vinegar, or some milk or cream. Pour dressing over over sliced cucumbers and onion, and fold to combine.

Cover and refrigerate for 1 to 2 hours. Fold right before serving and sprinkle with black pepper if desired.

Absolutely delicious.  I have been making this recipe for several years now.  My husband doesn't want cucumbers any other way.  Before he only wanted them in vinegar with salt and pepper.
