10 Minute Easy Asian Cucumber Salad Recipe

cucumbers

red onion

fined diced red pepper

rice wine vinegar

honey

sesame seeds

sesame oil

red pepper flakes

sea salt

Add VERY thinly sliced cucumber, sliced red onion, diced red pepper, and sesame seeds to a medium size bowl. Set aside.

In a small bowl mix together rice wine vinegar, honey, toasted sesame oil, red pepper flakes, and sea salt .

Add dressing to the cucumber bowl. Toss to mix everything.

Serve immediately or cover and let sit in the refrigerator for an hour or two to let all the flavors meld.

This is the creamy cucumber salad recipe we've been making forever. It's the perfect balance of creamy and crunchy and it goes well with nearly every main dish. It's super simple to make and is always a hit!

Cucumber Salad

cucumber,

plain thick yogurt (can sub mayo for dairy-free)

mayonnaise (can be light)

apple cider vinegar (or 1 teaspoon white vinegar)

black pepper

Slice the cucumber and place the rounds into a medium-sized bowl.

Add the remaining ingredients and toss to coat.

I made this for my family last night to go with your baked pork chops. It was delicious!

Absolutely delicious! Highly recommend this recipe. Was such an incredible addition to our summer BBQ. I do want to call out the importance of a high quality feta (grass fed, grocery store brand) and the English Cucumbers (so much more crunchy!). Both things really made a difference. I adjusted some of the portions because we like it creamy!!! E.g. extra mayo and feta ;)

I made this to go with your Juicy Baked Chicken Thighs, which I have made millions of times, and it is so wonderful!  Crisp, cool and full of flavor.  In addition, the next day when I ate it, I anticipated that the cucumbers would have lost their crispness, but they were just as crispy and crunchy as the night before! Creamy Cucumber Salad 

A refreshing snack or appetizer with cucumbers stuffed with cream cheese and walnuts

Stuffed Cucumber Bites

cucumber

oz walnuts (chopped)

oz cream cheese

white pepper

Fresh parsley (chopped)

Paprika to serve (optional)

Cut the top and bottoms off the cucumber.

Lightly peel the cucumber lengthways, leaving the odd strip of skin on, as a stripe.

Cut the cucumber in half lengthways and scoop out the seeds.

In a bowl mix the cream cheese with the pepper and parsley with a fork, mashing well.

Add the walnuts and combine thoroughly.

Spoon the mixture into the cucumber halves.

Cut the cucumber halves into four quarters.

Sprinkle with the paprika and any extra parsley.

Grilled Korean Flank Steak with Spicy Cucumber Salad

soy sauce

c. rice wine vinegar, divided

garlic,

tbsp. ginger

tbsp. honey

lb. flank steak

In a saucepan, bring rice and 2 cups water to a boil, then reduce heat and simmer, covered, 15 minutes. Remove from heat and let sit, covered, until ready to use. Fluff with a fork and season with salt. Top with sesame seeds.

In a large bowl, combine ½ cup soy sauce, vegetable oil, half the rice wine vinegar, garlic, ginger, honey, 2 tablespoons sesame oil, and 2 tablespoons Sriracha. Pour half the sauce over flank steak and marinate 10 minutes. Reserve remaining half.

Heat a grill or grill pan over high heat. Season steak with salt and pepper and grill 5 to 6 minutes per side for medium-rare. Transfer to a cutting board and let rest 5 minutes, then thinly slice across the grain. Pour juices into small bowl of remaining sauce and stir to combine.

Drizzle steak with sauce and garnish with scallions. Serve with cucumber salad and rice.

making it tonight also. i thought it was me, but the directions were a bit strange to follow. the cucumber salad is ready and the marinade tastes great. i expect it to be yummy.

Place the sliced cucumbers (4) and red onions (1 cup) in a bowl. Toss with 1 ½ tablespoons salt until evenly coated. Transfer to a colander and place over a bowl.

Cover with plastic wrap and place in the fridge to drain for 4 hours or overnight. Throw out the liquid that's accumulated in the bowl.

In a mixing bowl, mix together the mayonnaise (1 cup), sour cream 91 cup), vinegar (2 tablespoons), sugar (1/4 teaspoon), black pepper (1 ½ teaspoons), dill (1/2 cup), and 2 teaspoons salt until evenly combined.

Layout cucumbers in a single layer on a thick layer of paper towels then top them with a second layer of paper towels. Press lightly to remove any extra moisture. 

Add the cucumbers to the mayonnaise mixture and toss to coat well. Cover with plastic wrap and place in the fridge for 2-4 hours to allow flavors to marry. 

When ready to serve, taste for seasoning (I added 1/2 teaspoon salt and 1/2 teaspoon black pepper and tossed). Best served cold.
