This cucumber shrimp salad is a deliciously fresh twist on a classic. Juicy, bite-sized shrimp gets tossed with crisp cucumbers, green onion, fresh dill, and a creamy lime dressing. Watch the video below!

Cucumber Shrimp Salad

shrimp

English cucumber (small diced)

green onions (thinly sliced)

mayonnaise

sour cream

lime

dill

Dijon mustard

garlic (minced)

salt

Stir

Make the dressing. To make the dressing, stir together the mayonnaise, sour cream, lime zest and juice, dill, mustard, garlic, salt, and pepper. Set aside or place in the fridge.

Cook

Cook the Shrimp. Bring a pot of water to a boil. Add the shrimp and cook for 2 to 3 minutes, until cooked through and pink.

Chill

Make an Ice Water Bath. While the shrimp are cooking, prepare an ice water bath. Remove the shrimp to the ice water bath using a skimmer. Let them cool for 3 minutes, then drain them in a colander. Chop them into bite-sized pieces.

Stir it all together. In a mixing bowl, stir together the chopped shrimp, green onion, diced cucumber, and dressing, until creamy.

Thank you for another delicious recipe. The lime dressing is so refreshing and tangy. Everything blends together nicely. It is a nice recipe to have in the fridge during the week with so many different ways to enjoy it.

Great recipe!  However, after sitting in the frig overnight, the dressing was completely diluted and watery. I used an English cucumber and light mayo and sour cream. Could this have caused the problem?  If not, will definitely make it again but dress it only right beginning eating that portion.

I love shrimp and I love a cool refreshing salad, so this is the perfect combination of both!  Found it in your cookbook which I received as a Christmas gift.  I've made it many times, sometimes for company but most often just for me to eat straight out of the bowl....  absolutely delicious! Thanks, Lisa.

This is one of our favorite meal prep salads. It's so easy to make and is fresh and filling. (I made it the day before we went camping up the canyon then packed it in the cooler.) Everyone in the group was asking if they could have more. It was a hit!

I just meal prepped this for the work week. Had to make a few changes based on what was in my fridge: I used light sour cream and Miracle whip. I omitted the salt due to the swaps. I also used the little pre-cooked shrimp salad shrimp for ease. I also used two English Cucumbers to help make this stretch for 5 days. 

I'm looking forward to pairing this with some Dave's Killer Bread thin slice Powerseed bread.
