Curry Chicken Salad

chicken

celery

raisins

red onion, chopped

avocado

curry powder

apple cider vinegar

ground pepper

sea salt

Tablespoons cashews (optional)

In a large bowl, stir together mayo, apple cider vinegar, curry powder, pepper and salt.

Add shredded chicken, celery, raisins and red onion to the bowl. Stir until well combined.

Taste and adjust seasonings, if needed. If mixture seems too dry, add more mayo.

Serve on bread as a sandwich, in lettuce wraps or over a bed of greens.

This was great! I made as directed except used chopped pecans in place of the cashews and added a little bit of honey. So good! Been eating in lettuce wraps.

Absolutely DELICIOUS!! I used dried cranberries instead of raisins.... made a big batch and have had it every day for lunch! So tasty!

So yum! I wasn't sure about curry powder cold with the raisins but I LOVE it! My husband is also a fan. So quick to whip up. Great lunch option!

Healthy Curry Chicken Salad

The flavor in this curry chicken salad is absolutely incredible! Infused with delicious spices and flavors, this twist on your classic chicken salad recipe is going to blow you away! 

Mayonnaise

tbsp Yellow Curry Powder

tsp Onion Powder

Honey

Salt

Pepper

lb Cooked, Shredded Chicken ((Store-bought rotisserie works great))

Celery, (diced)

Pineapple, (diced)

Cashew Halves ((optional))

Green Onion, for garnish ((optional))

Combine all the chicken salad ingredients in a large bowl and set aside.

Add all the dressing ingredients to a medium bowl and whisk until combined.

Pour the dressing over the salad ingredients and toss until the chicken is coated well.

Serve in sliced croissants, with crackers, or on a bed of lettuce for a gluten-free option.  Garnish with more cashews and green onions if you desire!

Delicious! We added cayenne, some diced jalapenos, and chives. Even my "yuck, Greek yogurt" husband loved it.

Quick and easy lunch that was full of flavor! Seriously so good! Spices were just right and loved the different textures from the cranberries, almonds and celery. Didn't have Greek yogurt, so used half mayo/half sour cream to still get a little tang. Yum! This is a keeper!

Place chicken, onions, cilantro, celery, cashews and raisins in a medium mixing bowl.  

Place dressing ingredients in the order listed in a blender or Nutribullet (if you're salt sensitive, you can start with 1/2 tsp and season to taste). Blend until smooth. 

Pour dressing over salad and toss to combine. Serve!

Best chicken salad recipe I've ever had! We love tahini in our house so when I saw this recipe, I knew we had to try it. We couldn’t find raisins because apparently in Florida there is a shortage so we ended up using dates and that worked out great. Such a good meal prep option too!
