Make the most of your glut of damsons by making this damson chutney recipe. Cooked with apple and gently spiced, it's fab served as part of a cheeseboard. It makes a great homemade foodie gift as well!

Damson Chutney

(2lbs) damsons, pitted

Bramley apples, peeled,

(1lb) onions, peeled and finely chopped

(1lb) raisins

green chilli,

(1lb) brown sugar

(½ tsp) cayenne pepper

(2 tsp) salt

(1 tsp) ground allspice

(1 tsp) cinnamon

(1 tsp) ground ginger

(2 tsp) pepper

juniper berries

(1½pt) white wine vinegar

milliliters (2 tsp) balsamic vinegar

Place all the ingredients in a large heavy bottomed saucepan.

Heat the contents slowly until boiling point is reached.

Turn the heat down until a consistent slow simmering point is reached.

Cook for at least 2 hours but no more than 5. Check on it every 30 minutes and stir occasionally.

Towards the end of cooking time stir the chutney more to ensure that nothing sticks and burns at the bottom. It will thicken when it cools.

Pour into sterilised containers and seal with airtight lids. Enjoy as part of a cheeseboard!

Once I saw the picture on the recipe card I knew I had to replicate it and just have the chutney with some bread and cheese, wow what an incredible flavour.

Damson Jam

1kg (2.2lbs) damsons

1.25kg (6 cups) jam sugar

water

First, stone the damsons with a cherry pitter.

Place the damsons, jam sugar and water in a large saucepan or preserving pan.

Slowly heat the contents, while stirring, letting the sugar slowly dissolve in the water and fruit juices.

Bring to a rolling boil and maintain it for 15 minutes. During this period you’ll need to keep stirring the sauce to prevent it sticking in places and subsequently burning.

Remove from the heat and test the jam. E.g. Take a small dollop of jam onto a cold saucer and cool.

Push your finger from one side into the jam. If the skin has formed wrinkles, the setting point has been reached. If it hasn’t wrinkled, boil for another 2 minutes and test again. Repeat this process until the desired wrinkles form.

Pour the jam in sterilised jars and seal with a clean lid. This recipe yields 5 x 370ml (1lb) jam jars and makes excellent foodie gifts!

I like jam on hot buttered toast, and also on hot rice pudding, especially in winter.
