Date Night Lemon Pappardelle with Shrimp

shrimp

butter, divided

fresh garlic, grated (less than one clove)

white wine (I usually eyeball it)

heavy cream

salt

Parmesan cheese (optional)

lemon juice

pappardelle

black pepper

Pasta

Cook according to package directions (add a big pinch of salt to your water for better-tasting pasta). Drain and reserve some water. Toss pasta with olive oil to prevent sticking.

Lemon Pasta Step 1

Sauce

Melt 2-3 tablespoons butter over medium heat. Add the garlic; sauté for 1-2 minutes (do not brown the garlic). Add the wine; let it sizzle out for a few minutes. Add the cream; bring to a simmer. Add the lemon juice, salt, and optional Parmesan; bring down to low heat.

Lemon Pasta Step 2

Shrimp

Pat shrimp dry with paper towels. Heat one tablespoon of the butter in a large skillet over medium heat. Add the shrimp, season with salt, and flip when pink (1-2 minutes per side). Cover with foil and set aside.

Lemon Pasta Step 3

Assemble

Toss your pasta with the warm sauce. Serve alongside a pile of fresh, juicy, hot, buttery shrimp. Serve with freshly cracked black pepper and little wedges of lemon. Ooooh baby.

No flavor to the shrimp! No red pepper? No brining? Basil, anything. Very bland, sorry.

I was nervous about blandness too, but the garlic, lemon, and parmesan made this both delicate and delicious.

This recipe looks delish! But can I ask a potentially dumb question?  Why don't chefs, restaurants... etc.  take the tails of shrimp?  Especially when its a dish like this, with twirly pasta?? I have never understood this.  Do people actually eat the tails?

This was excellent.  Made it for Valentine’s Day for my 93 year old mom and husband. Huge hit!  Had 12 Oz pasta so increased sauce by half. This would be great even without the shrimp.

So simple, yet so good! Quick recipe and creamy, but not too creamy. I used chicken broth instead of white wine, since I didn’t have any wine and I finished the fish off with more ground pepper, fresh parsley, Parmesan and red pepper flakes. Will definitely be making again!

(I’ll be using red wine instead of white so I hope it goes well) Stupid question: when you reserve some of the water from cooking the pasta, do you let the pasta sit in it while you’re cooking the shrimp? Or do you set aside some of the pasta water for the sauce? It’s not clear in the recipe. Thanks!

Date Night Mushroom Pasta with Goat Cheese - swimming in a white wine, garlic, and cream sauce. Perfect for a date night in!

Date Night Mushroom Pasta with Goat Cheese

whole wheat farfalle pasta

butter

mushrooms,

garlic

white wine (about 1/3 cup)

heavy whipping cream

broth (as needed)

Parmesan cheese

spinach, chopped

goat cheese

PASTA: Cook the pasta according to package directions. Drain and set aside.

MUSHROOMS: Heat the butter and oil in a large skillet or pot over medium high heat. Add the mushrooms and saute until golden brown and soft, 5-10 minutes. The mushrooms will cook down and reduce in size. Add the garlic and white wine (it should sizzle a bit) and give it a few good stirs. Add the whipping cream and salt.

TOSS: In a large pot, toss the pasta with the mushroom sauce from step two. Add some or all of the broth if you feel like you want there to be more sauciness (it sort of depends on personal preference &#8211; we had it with the added broth, and without, and it was good both times).

SERVE: While the pasta is still warm, stir in the Parmesan cheese. Just before serving, stir in the spinach and goat cheese, or just top each serving with a few hunks of goat cheese.

You have absolutely no idea how much I love you right now!! I just got my guy to try goat cheese, and he loves it!! So I have been looking for every and anyway to cram it into our menus. This will be happening at my house ASAP!! Although I will have to make him a steak on the side because he is one of those "There has to be meat for it to be a meal" kind of guys. Ppfffttttt pasta, mushroms, and goat cheese is good enough for me!

AMAZING rigatoni with sausage, kale, tomato cream sauce, Parmesan, and red pepper flakes! Perfect for date night!

Date Night Rigatoni

lb. rigatoni + 2 cups reserved pasta water

olive oil

fennel or celery

yellow onion, chopped

lb. ground mild Italian sausage

garlic,

fennel seeds,

tomato paste

dry white wine or chicken broth

kale

red pepper flakes

Cook rigatoni according to package directions in well-salted water. Reserve 2 cups of the starchy water when you drain.

Sausage

Heat olive oil in a large, deep pot over medium high heat. Add the fennel and onion. Saute until very soft &#8211; about 10 minutes. Add the sausage. Cook, breaking into small pieces, until browned all the way through.

Turn the heat down. Add the garlic, fennel seeds, and tomato paste. Sauté until fragrant &#8211; about 3 minutes. Add the wine; let it sizzle out. Add the cream; let it come to a low simmer. Stir in the kale. Season with salt.

Fall In Love

Toss sauce with the cooked pasta. Add reserved pasta water as needed to thin the sauce. Stir in freshly grated Parmesan cheese. Finish with red pepper flakes and more Parm. Serve with a glass of wine because THIS IS VERY ROMANTIC AND FANCY!

My daughter loves when I make this dish. She is having a baby and I would love to make this for her and her hubby and freeze half for them to have an easy dinner after the baby is born. Does anyone know if it freezes well?

This is one of my go to dishes- I can’t recommend it enough. Make sure to do wine and fennel - they are super important to the dish. It’s also great with half hot Italian and half mild sausage.

Hi there! I love using canned, full fat coconut milk in place of heavy cream! I made this recipe and subbed the coconut milk, it was delicious. I actually have not purchased heavy cream in quite a long time since using this! Enjoy!

I used silken tofu which I blended into a cream consistency - it sounds strange but it worked great, didn't taste like anything, was perfectly creamy and has the added bonus of low calorie + extra protein! Would recommend for anyone who is lactose free.

Just made this for dinner, and it is absolutely delicious! I left the fennel and celery out just because I forgot them at the store, and I used half and half instead of heavy cream because it's what I had on hand, but OMG so good! And a great way to sneak a bit of green into our diets!

I initially discovered this via  Instagram just as I began meal planning for the week. Wow, am I grateful I did. Pinch of Yum has been my go-to for recipes during weeks I’m feeling particularly culinarily uninspired (most weeks lately). I made this just a few hours ago (sans the cellery and wine, which I subbed for chicken broth) and it was delightful and fresh and  delicious. This was so yummy! We are in an extremely hot end of summer in our part of Australia but as soon as I saw this, I had to make it (and then we went to the beach to cool down LOL). A definite keeper of a recipe!

Made this last night and wow was it fabulous! My husband said it reminded him of a meal we had while on vacation eating at a nice Italian restaurant (that's a really good thing). I roughly halved the recipe, added a diced tomato and swapped spinach for the kale. Next time I want to add diced carrots and even more tomatoes. Can't wait to make this again!

Great flavor! Next time I will not use a full pound of pasta and will use half a pound. The full pound really diluleted the sausage/ veggie/sauce to pasta ratio. I had to dig around in the pot the make sure we both had sausage and kale.
