Make the crepes by melting the butter and allowing it to brown slightly. Set aside.

In the same pot, warm the milk. Remove from heat.

In a bowl, whisk flour, cocoa powder, and sugar. Mix in eggs.

Gradually mix in butter and warm milk. Chill.

On a nonstick skillet over medium heat, pour ¼ cup (60 ml) of crepe batter, and tip the pan to cover the entire bottom surface. Cook until bottom surface of crepe begins to brown, then flip.

Cool crepe. Repeat until all of the crepe batter is used.

Stack crepes on top of each other, with whipped cream between each layer. Once assembled, trim edges for a cleaner look, if desired.

For the ganache, bring the heavy cream and sugar to a boil, and pour over chocolate and butter. Let cool.

Top with sifted powdered sugar (optional).

Twist up thin strips of peeled carrot into simple, abstract roses to add a special touch to carrot cake.

Twisted Carrot Roses From 'BraveTart' Recipe

water (about 1 cup; 225 grams)

sugar (about 1 cup; 200 grams)

Peel the carrots, then place on a cutting board; with a vegetable peeler pressed firmly against the root end, drag the blade down its length. Discard the first few thin and irregular strips, and continue peeling to amass a pile of thick, even ribbons.

Combine water, sugar, and salt in a 2-quart stainless steel saucier over medium heat, and bring to a boil. Drop carrot ribbons into the bubbling syrup, simmer 30 seconds, then shut off the heat. When cool enough to handle, fish out a ribbon and let the excess syrup drip off.

Holding the skinny end with your dominant hand, twist and wrap a carrot ribbon around itself to form a "bud." Continue twisting and wrapping to create the remaining petals, then tuck the end of the strip underneath itself. If you like, more strips can be added to create a larger rose. Place on a fully frosted Brown Butter Carrot Cake, repeating with additional carrot roses to create a lush bouquet.

Orange Crème Caramel (Lactose Free)

For this recipe you will need a large roasting pan, tea towel, a round cake tin that will fit in the roasting pan. Make sure the cake pan isn’t spring form so nothing leaks. 

Place the tea towel onto the bottom of the roasting pan and preheat your oven to 160°C.

In a small saucepan add the cup of sugar and the ¼ cup of water. Stir and place on a low heat until the sugar dissolves.

Increase the heat and bring the mixture to the boil. 

Keep cooking the mixture without stirring. It will eventually turn and light yellow. 

Keep a close eye on the mixture as the colour will change quite quick. When the colour reaches a lovely brown caramel colour take it off the heat imminently. Remember the residual heat from the pan will keep cooking the sugar and turning it darker. It is always better to be cautious and take it off slightly early rather than having it burnt.  

Carefully pour it into the cake pan. It is liquid sugar and it is very hot, be careful. 

Place the zest and milk into the microwave container. Microwave for 3 minutes until the milk becomes hot. 

Alternatively place and a saucepan and bring to a quick boil. As long as the milk becomes hot using a saucepan should not matter. 

In a separate bowl add the eggs, yolks, sugar and vanilla. Whisk until well combined. 

Time to temper the mixture with the hot milk. 

Pour the egg mixture into the hot milk very slowly whilst continuously whisking. If you add it in all at once there is a risk that the eggs will cook and become scrambled eggs. 

Now that you have made the custard grab the cake pan and a fine mesh sieve. Pour the custard mixture through the sieve into the custard pan. 

Cover the cake pan with foil and place onto the tray with the tea towel. Add some hot water to the roasting pan. Enough to come up halfway to the outside of the cake pan. 

Place into the oven and bake for an hour until set. A perfectly baked custard will wobble slightly when given a gentle shake.  

Remove the cake tin from the roasting pan using oven mitts and leave at room temperature until it cools down. Then place into the fridge to set. Preferably overnight. 

To serve run a knife around the edge. Place a plate over the top and quickly turn the caramel over to release it from the pan. Serve with the mint and orange slices.

How to Naturally Dye Easter Eggs (Using Ingredients You Already Have at Home!)

You can also start with raw eggs and cook them in the dye bath as described in this how-to on onion-skin eggs. I found that with dyes like the hibiscus tea and beets, the color was more concentrated with the refrigerator method. Of course, this method requires clearing out some space in the refrigerator.Play around with different ingredients to find new colors, or soak in different dye baths for a layering effect.Beware that the actual shade of the final eggs may change when exposed to the air and dried.Keep in mind the effect of the dyes varies depending on how concentrated the dye is, what color egg you use, and how long and how many times the eggs are immersed in the dye. Err on the side of more material rather than less when creating your dye.

Step 1

Place 1 cup water and 1 cup dye option of choice (purple cabbage, onion skins, etc.) in a small saucepan and bring to a boil over medium-high heat.

Step 2

Reduce the heat down to low. Cover and simmer until the color is a few shades darker than you want for your egg, 15 to 30 minutes. Drip a little dye onto a white dish to check the color.

Step 3

Remove the pan from the heat. Let cool to room temperature. Pour through a fine-mesh strainer set over another saucepan or bowl. Press on the solids in the strainer to extract as much liquid as possible. Discard the contents of the strainer. 

Step 4

Measure the amount of strained liquid. Add 1 tablespoon distilled white vinegar per 1 cup strained liquid and stir to combine.

Step 5

Arrange 6 room-temperature, hard-boiled eggs in a medium bowl or quart container (like a yogurt container). Carefully pour the cooled dye over the eggs and make sure they are completely submerged.

Step 6

Refrigerate until chilled and the desired color is reached, a few hours or up to overnight. Remove the eggs from the dye and dry with paper towels. If you want your eggs to be more vibrant and less pastel, give the eggs multiple soaks in the dye, being sure to dry them between stints in the dye.

Step 7

When the eggs are dyed to the desired color, dry each one thoroughly with a paper towel. Gently rub in little oil neutral oil into each egg. Polish with a paper towel. Refrigerate until ready to use.
