A nutrient-rich salad that is easy to throw together and naturally supports the body's detoxification system.

The Best Detox Salad with Lemon-Ginger Dressing

lemon juice

olive oil

ginger (, to taste)

garlic

raw honey

cabbage ((green, purple, or both))

carrot (, shredded)

fresh flat-leaf parsley (, roughly chopped)

avocado (, sliced)

raisins

To prepare the dressing, combine all of the ingredients in a blender, starting with just 1-inch of fresh ginger, and blend until smooth. Add more ginger to taste, if desired, and set aside.

To prepare the salad, toss together the cabbage, carrots, and parsley in a large bowl and top with the sliced avocado and raisins.

Top the assembled salad with 3 to 4 tablespoons of the lemon-ginger dressing and let it marinate for 5 to 10 minutes before serving. Store leftover dressing in an airtight container in the fridge for up to a week.

Detox Salad with Sesame Ginger Dressing

kale and cabbage mix (I used Trader Joe’s Cruciferous Crunch Collection)

quinoa

edamame

bite-size apple chunks (about 1/2 an apple)

almonds

avocado

sriracha (optional)

Tablespoons rice vinegar

tamari

sesame oil

maple syrup

ginger

black pepper

Whisk together all the dressing ingredients in a small bowl.

Package salad ingredients in a portable container until ready for lunch. Toss greens with the toppings. Add sliced avocado and drizzle on the dressing. Add a squirt of sriracha if you like to spice things up a bit and enjoy!

spinach

pea shoots

feta cheese

almonds, crushed

avocado,

jalapeño pepper (I left the ribs

Greek yogurt

lime

salt

agave nectar

cilantro

scallions

Puree all the dressing ingredients together, adding the cilantro last and stopping when the texture feels right to you. I went for little green flecks of cilantro and scallion throughout.

Toss the salad ingredients together with dressing; serve immediately.

I am a fellow MN and we went to FL for spring break 2 weeks ago.  Loved the sun and warmth!  So hard to leave and return to 20 degrees and snow!  Salad looks awesome!  Funny comment about your chicken pox scar...I have the same one on my cheek ;)  Just started following your blog...love locals!

I just finished listening to "The Book Thief" last week!    It was AMAZING!!!    Worth all 11 discs.  You felt such a range of emotions throughout the book!  I definitely also did tear up when Rudy died!   :'(
