<p>This tasty dill potato salad is just like Grandma's: it's bursting with fresh herbs and flavored with olive oil and vinegar.</p>

Dill Potato Salad

baby yellow potatoes

shallot (about 1 large)

fresh dill, minced

parsley

onions,

white wine vinegar

teaspoon kosher salt

capers, drained

olive oil

pepper

Fill a large pot with cold water and add 1 tablespoon kosher salt. Add the whole potatoes and bring to a boil. When it comes to a boil, boil for about 5 to 8 minutes, depending on the size. Cook until fork tender (taste test to check).

Mince the shallot. Finely chop the dill and parsley. Thinly slice the green onions, if using.

When the potatoes are done, drain them. When they are cool enough to handle, slice them into bite sized pieces. Place the potatoes in a bowl and gently mix in the minced shallot, white wine vinegar, kosher salt, and 1/2 cup warm water. Let stand for 5 minutes, gently stirring occasionally. The potatoes will absorb the water as they stand.

Add the dill, parsley, green onions, drained capers, olive oil, and a few grinds black pepper. Taste and add additional salt if necessary (we added 1/4 teaspoon more). Serve warm or room temperature.

Swedish Dill Potatoes Recipe (+ Creamy Dill Sauce)

& 1/2 pounds potatoes (750 grams)

butter

tbsp flour, (heaping)

cream

milk

dill

salt and pepper, (for seasoning)

To make these dill potatoes, start with using a medium or a large pan to boil your preferred potatoes.  Cook until they&#39;re soft.

Drain the water from the potatoes and place them back on the heat for 2 to 3 minutes to remove additional moisture --- set aside to cool.

To prepare the creamy dill sauce, place a small or medium-sized saucepan over medium-low heat.

Add and melt butter.  

Add flour and mix until it turns into a soft paste.

Add cream and whisk to avoid getting clumps.

Slowly add milk and continue whisking; then lower the heat and simmer for around 4 to 5 minutes. 

Season with salt and pepper --- and nutmeg, if desired. 

The creamy sauce would be slightly thicker now.  Mix with a spatula or wooden spoon, scraping the sides of the pan and making sure that there are no lumps in the cream.

Pour sauce into cooked potatoes and mix.

Add chopped dill, then mix again to combine evenly.

Serve your creamy dill potatoes, and enjoy!

Swedish Dill Potatoes (+ Dill Cream Sauce!)

You have two of the most-loved ingredients in Finland for this fish soup -- dill and salmon. Add some cream and vegetables in there and you’ll have a delightful bowl of Lohikeitto; give this easy salmon soup recipe a try!

Lohikeitto Recipe (Finnish Salmon Soup)

tbsp butter

pc leek, (thinly sliced (only white/lighter part))

carrot, (diced)

potatoes, (diced)

fish stock

salmon

heavy cream ((double cream))

dill, (roughly chopped)

salt and pepper, (to season)

Start preparing your lohikeitto by placing a medium-sized (or large pan) over medium heat.  Add butter.

Once the butter has completely melted, add thinly sliced leek.  Cook until slightly soft.

Add carrot and potatoes.  Mix.

Add fish stock.  Cover pot with a lid, adjust heat to medium-high, and bring to a boil.

Adjust heat back to medium-low and simmer your salmon soup until vegetables are almost cooked.

Add salmon fillet and heavy cream. Mix to combine.

Turn the heat back to medium.  Cover with a lid and continue cooking lohikeitto for 4 to 5 minutes.

Season by adding salt and pepper.  Mix.

Add dill to finish your lohikeitto.  Turn heat off.

Cover with a lid and keep covered for 2 minutes.

Making Finnish salmon soup:

Transfer to individual bowls.

Garnish lohikeitto with more freshly chopped dills, if desired.

Serve.
