Vanilla Diplomat Cream

milk (480 mL, preferably 3.5% or 2% milk)

g sugar (6 tbsp)

salt

cornstarch ((cornflour), 3.5 tbsp)

tsp vanilla extract (15 mL)

butter

gelatin powder

water

whipping cream (30 mL, chilled)

heavy whipping cream (240 mL, chilled)

confectioner’s sugar (28 g)

Place the milk in a saucepan, and heat over medium high heat. Bring it to a simmer, almost to a boil.

While the milk is almost heated, place the sugar, egg yolks, cornstarch, vanilla extract, and salt in a bowl. Whisk until you have a thick, smooth mix. Place this bowl with the egg mix on a towel or napkin (to prevent the bowl from slipping while whisking, in the next step), and set aside until the milk comes to a boil (almost to a boil).

As soon as the milk starts to simmer / bubble, remove it from the heat. Slowly pour about a half of the hot milk in a thin stream, into the egg mix, WHILE WHISKING CONSTANTLY to temper the egg mix. When the eggs have been tempered, add the egg mix back into the hot milk in the saucepan.

Heat the custard base, over medium heat, while whisking vigorously until it starts to thicken – this should take about 1 – 2 minutes depending on the heat of your stove and size of your saucepan.

While whisking, let the custard come to a boil (the custard will release bubbles). Lower the heat and cook for a further 1-2 minutes after you see the first bubbles break the surface. Lower the heat and whisk constantly for about 30 – 60 seconds after the first bubbles break the surface.

Remove from the heat and add the butter. Whisk in the butter, until it’s completely mixed in.

Pour the custard into a bowl and immediately cover the surface with plastic wrap, making sure the plastic wrap is touching the whole surface. This is to prevent a custard skin from forming on top. You can also choose to pass the custard through a sieve to remove any lumps.

Let the custard cool down to room temperature and then let it chill in the fridge for a few hours or overnight, until completely chilled.

Vanilla Pastry Cream

Place the 1 cup chilled whipping cream (heavy cream) in a chilled metal bowl (of your mixer). Add the sugar and mix it in. Keep the bowl in the fridge until you’re ready to whip it.

Place the water in a small microwaveable bowl. Sprinkle the gelatin and stir it in. Allow the gelatin to bloom in the water for about 10 minutes.

Microwave the bloomed gelatin for about 10 – 20 seconds to dissolve the gelatin. But do NOT let it boil.

Stir in the 1- 2 tbsp of chilled heavy cream to temper the gelatin mixture.

Start whisking the chilled heavy cream-sugar mix on high speed on your mixer, and quickly pour in the gelatin mixture. Make sure the gelatin is not poured directly onto the whisks, since this will cause the gelatin to set and form clumps.

Whisk the heavy cream on high for a few seconds to incorporate the gelatin.

Once the gelatin is incorporated, lower the speed to medium high, and whisk the cream until it's just starting to form mid peaks.

Use a whisk to manually whisk the cream the rest of the way until it reaches stiff peaks. Make sure to NOT let the heavy cream curdle / become grainy.

Use immediately.

Stabilized Chantilly Cream

Place the chilled pastry cream in a large bowl (with enough room to mix in the whipped cream).

With a balloon whisk, whisk the chilled pastry cream until smooth and creamy.

Fold about ⅓ of the whipped cream into the pastry cream. Once well mixed, fold the rest of the whipped cream into the custard.

Use immediately, before the gelatin sets.

This Diplomat Cream - or Crème Diplomate in French - is one of the classic French Pastry Cream that combines Pastry Cream, gelatine and Whipped Cream. It is a super creamy, rich yet light cream that makes the most delicious desserts and pastries filling or topping!

Diplomat Cream (Crème Diplomate)

500 ml (2 cups) Full Cream Milk ((wholemilk))

Vanilla Paste (or 2 fresh vanilla beans)

Egg Yolks

60 gr (1/4 cup) Caster Sugar (or fine white granulated sugar)

gr (1/4 cup) Cornstarch

gr (1 1/2 teaspoons) Gelatine Powder (plus a little bit cold water (see note 3))

180 ml (3/4 cup) Heavy / Thickened Cream

Place the Milk and Vanilla Paste in a saucepan, whisk well and heat up on low heat until it starts to simmer.

While the milk is heating up, whisk together the Egg Yolks and Sugar in a heat-proof mixing bowl. Add the cornstarch and whisk until smooth.

Pour the hot milk over the Egg Yolk/Sugar mixture while whisking. Whisk well until smooth, then transfer back into the saucepan (see note 1).

Place the saucepan back on the stove on low heat. Keep whisking until the custard starts to thicken, about 2 to 3 minutes (see note 2). When it starts to boil, keep whisking for 30 seconds to a minute, then remove from the heat.

Place the Gelatine Powder in a small bowl and mix in a little bit of very cold water (see note 3). Set aside for a few minutes to let it bloom, or until you get a thick paste.

Add the Gelatine to the warm pastry cream and whisk well until completely dissolved. Transfer into a large shallow pan (see note 4), cover with plastic wrap touching the surface then place in the fridge to cool down for about 1 to 1,5 hours (see note 5).

Pastry Cream

Place the cold Heavy / Thickened Cream in a large bowl (or the bowl of your stand mixer) and whip on medium to high speed until you get stiff peaks. Make sure not to overwhip of the cream will get grainy.

Whipped Cream

Take the pastry cream out of the fridge and transfer into a large mixing bowl. Loosen the pastry cream with a whisk if needed, then gently fold in the Whipped Cream in 3 or 4 times until all combined (see note 6).

Use straight away (see note 7) or store in the fridge for 2 to 3 days covered with plastic wrap touching its surface.

Vanilla Crème Diplomate (Diplomat cream)

500 g whole milk

corn starch

g sugar

fine sea salt

vanilla extract vanilla

g unsalted butter

heavy cream (cold)

In a medium-sized saucepan, heat the milk just until boiling point. 

In the meantime, in a separate bowl, combine the egg yolks, egg, corn starch, sugar and salt using a whisk. 

Once the milk has reached scalding point, pour 2/3 of it to the egg mixture, in a slow and steady stream, whisking continuously so you don&#39;t cook the eggs. Once you tempered the egg mixture, return it to the saucepan with the remaining milk and continue cooking, whisking constantly, until it thickens.Cook for another 1-2 minutes to make sure there isn&#39;t any cornstarch aftertaste.

When it&#39;s done, add in the vanilla and butter and whisk until everything is combined, silky and smooth.

Strain the pastry cream to a clean bowl through a sieve, to get rid of any cooked egg bits and lumps. Cover with cling film (plastic wrap) touching the surface to prevent skin forming. Let it cool at room temperature for about an hour, then place it in the fridge to cool completely.

Transfer the cold pastry cream to a mixing bowl (it will be stiff, gelatinous-like) and give it a mix with an electric hand mixer to make it creamy again.In a separate bowl, whisk the cold heavy cream to stiff peaks and add it to the pastry cream. Mix everything together at medium-high speed until fully combined and smooth.

Place the creme diplomate in a disposable piping bag fitted with a piping nozzle to fill choux, eclairs, doughnuts or cake! :)

Recipe for smooth vanilla diplomat cream, a pastry cream with gelatin and whipped cream

250 ml (1 cup) milk

vanilla bean vanilla

g egg yolks - (2-3 yolks)

sugar

g (1/4 cup) cornstarch

gelatin

200 ml (3/4 cup) heavy cream

Place the gelatin leaves in a bowl of cold water and let sit for 10 minutes.

Heat the milk with the vanilla bean, split and scraped, until it boils, then let it steep for 10 minutes.

Place the egg yolks, sugar and cornstarch in a large bowl and beat with a hand whisk for 2 minutes until smooth.

Remove the vanilla bean from the milk and pour it over the egg yolks while mixing with the whisk.

Return the mixture to the saucepan and bring to a boil over medium heat while stirring until the pastry cream thickens. As soon as it starts to boil, extend the cooking time by 2 minutes.

Remove from the heat and add the gelatin leaves and mix vigorously to incorporate them.

Pour the pastry cream immediately into a baking dish and cover with cling film and place in the refrigerator until completely cooled.

Pastry Cream:

Place the cold, full-fat heavy cream in a medium bowl.

Mix with an electric mixer for about 3 minutes on medium speed until the mixture is stiff like whipped cream.

Whipped cream:

Remove the pastry cream from the refrigerator and place in a large bowl.

Using an electric mixer, blend the pastry cream for 1-2 minutes to loosen it.

Add the whipped cream to the pastry cream and mix with a spatula until you have a smooth and firm diplomat cream.

Use immediately or place in the refrigerator.
