Borracho Beans 

15 ounces canned pinto beans, drained and rinsed

bacon,

onion, diced

jalapeno, diced

garlic cloves,

chili powder

ancho chili powder

oregano

salt

cumin

tomatoes

oz dark beer

brown sugar

cilantro,

In a dutch oven over medium heat, cook the bacon until crispy. Leaving as much bacon grease as possible, remove the bacon from the pot and set aside to crumble once cooled.

Add the onions and jalapeño to the pot and cook for 4-5 minutes or until onions are translucent. Add the garlic and spices. Cook for an additional minute, stirring constantly.

Add the drained beans, tomatoes with juices, and beer. Reduce heat to low and simmer for 18-20 minutes.

Stir in brown sugar and remove from heat.

Top with cilantro and crumbled bacon. Serve hot.

Frijoles Borrachos (Drunken Beans)

pinto beans ((2 cups))

center

finely diced yellow onion

jalapeño peppers,

garlic,

(12-ounce) bottle of dark beer

chicken broth

molasses

dried Mexican oregano

lime juice

cilantro

Rinse and Soak

Rinse beans (sort out any foreign objects) and place in a large bowl. Cover with cold water and cover. Soak overnight (at least 12 hours). Rinse and drain well. 

Cook Bacon

In a large pot over medium heat, add bacon and cook until lightly brown and fat has rendered, 5-7 minutes. 

Saute Vegetables

Add onion and jalapeño and cook until softened, about 5 minutes, stirring frequently. Add garlic and cook, stirring, for 1 minute or until fragrant. 

Add Beer

Add beer and scrape any brown bits off the bottom of the pot.

Simmer

Add beans, broth, brown sugar, molasses, oregano, chili powder, salt, and cumin. Stir to combine and bring to a boil. Reduce heat, partially cover pan, and simmer for 2 ½ hours or until most of the liquid is absorbed and beans are tender, stirring occasionally.

Serve

Before serving, stir in lime juice and cilantro. Serve in bowls.
