Easy Dubu Jorim (Korean Braised Tofu)

Cut tofu into 1/4 inch thick pieces, and pat dry to remove moisture (this will yield a crispy exterior). Lightly season with salt and pepper and set aside.

Add all sauce ingredients into a bowl. Add onion, green onion, and chili pepper, and mix to combine.

Heat oil in a large skillet over medium heat, carefully add the tofu pieces and sear both sides until golden-brown, about 2-3 minutes.

Pour the sauce over the tofu and cook for about 5 minutes, flipping occasionally. Cover and simmer for another 2-3 minutes until the sauce is reduced to a thick consistency.

Garnish with the reserved green onions and sesame seeds, and serve immediately with rice, noodles, or any other dish of choice. Enjoy!

Dubu Jorim (Korean Braised Tofu)

firm tofu

garlic ((minced))

soy sauce ((not the low sodium kind!))

Tbsp sesame oil

Tbsp rice vinegar

Tbsp sugar

Cut tofu into 1/2-inch thick squares.  Pat both sides dry with a paper towel.

Heat a non-stick skillet with 1-2 Tbsp neutral oil over medium heat.  When the pan is hot but not smoking, add tofu.  It will splatter so be careful!  Cook until crispy and browned on one side, about 3-4 minutes. (Do not disturb!  Let the tofu be!)  Flip and repeat.

Meanwhile, mix sauce ingredients (except water) into a small bowl.  When the tofu has finished frying on the second side, keep the heat on medium and spoon sauce over the tofu squares.  Then immediately add water into the pan.

Simmer until sauce is reduced and the tofu has absorbed all that saucy flavor, about 5-6 minutes.  Lower the heat if the saue is reducing too fast and burning.  Shake the pan from time to time to prevent sticking.  Feel free to add more water, 1-2 Tbsp at a time, if the sauce reduces too much.  This step goes quickly so watch carefully!

Transfer to a serving platter and make sure to spoon up all the pan sauce.  Garnish with green onion and sesame seeds.  Serve with rice and kimchi.  Enjoy!

Dubu Jorim - Korean Braised Tofu

400 g firm tofu (pressed

spring onion / green onion (chopped finely)

tbsp cooking wine

Press out tofu on a plate with a heavy weight (around 1 kg / 2 lbs) for 10 minutes to extract as much water as possible. Slice into steaks and pat dry with a paper towel on both sides. Optional: Sprinkle salt and pepper over the tofu steaks to your liking.

Prepare the tofu

Add the spring onion, garlic, gochugaru, sugar, soy sauce, cooking wine, sesame oil and water into a small bowl. Mix well until combined.

Prepare the seasoning sauce

Heat the vegetable oil in a large frying pan over medium high heat. Add the tofu steaks and fry for 2-3 minutes on one side until golden brown, then flip. Top with the sliced onion and allow to soften while you fry the other side of the tofu.

Reduce

Once cooked to your liking, pour over the seasoning sauce. Reduce to medium heat and cook until all the liquid has evaporated and the sauce is sticking to the tofu (around 2-4 minutes).

Serve hot with rice and / or garnish with toasted sesame seeds.
