Combine the soy sauce, rice wine, sesame oil and ginger in a bowl. Put half the shrimp, half the cilantro and all the scallions in a food processor and pulse; add just enough of the soy mixture to create a smooth paste, about 1 to 2 tablespoons. Transfer to a bowl. Roughly chop the remaining shrimp and cilantro, add them to the bowl and stir to combine.

Place a dumpling skin on a work surface, moisten the edges with water, and put 1 teaspoon of the filling in the center. Gather the edges of the wrapper up around the filling, squeezing gently, to pleat the sides; some of the filling should remain exposed. Repeat with the remaining dumpling skins and filling, keeping the dumpling wrappers and dumplings covered with damp towels while you work.

Rig a steamer in a large pot over an inch of water; bring to a boil and reduce to a simmer. Meanwhile, add the lime juice to the remaining soy mixture to make a dipping sauce.

Put as many dumplings in the steamer as you can fit in a single layer and cover the pot. Cook until the exposed filling turns pink and the wrappers are tender, 4 to 6 minutes, then transfer the dumplings to a serving platter. Repeat with the remaining dumplings. Serve with the dipping sauce.

This recipe yields about 35 to 40 dumpling wrappers that are about 12 to 13 grams each and 3 1/4 to 3 1/2 inches in diameter, which is a good for medium-sized potstickers potstickers. If you want to make larger dumplings, aim for wrappers that are about 14 or 16 grams, and they&#x27;ll roll out to about 3 3/4 inches in diameter. This recipe will make about 30 or so large wrappers. Feel free to adjust the size of each dumpling wrapper to your liking. If you need visuals, you can reference the photos in the blog post or the video below.

Pour all the flour and water into a mixing bowl. Use chopsticks or a wooden spoon to stir everything together. Mix until all the water is absorbed and shaggy pieces of dough start to form.

Let the dough rest. If you are pressed for time, you can start rolling out the dough into wrappers after about 20 minutes. However, I prefer a longer resting period of at least 45 minutes. The dough feels more supple when it rests longer, making the wrappers easier to roll out. (see note 3)

If you want to store the wrappers for later use, roll out the dough. Brush potato starch (or tapioca starch) over all the wrappers before stacking them up. Tightly wrap the stack of wrappers with plastic wrap. Then, transfer them into an air-tight container. You can refrigerate these for up to 2 days or freeze them for up to a month, as long as no freezer burn develops around the wrappers.

NOTES

I have a variable temperature kettle that I use to heat the water to the right temperature. You can mix cold water with boiling hot water to get the same results. Note that you'll likely need more cold water than boiling hot water. You can also run your tap at the hottest setting and use that hot water. 

In the video, I mention that the dough pieces should be between 12 to 14g for medium-sized dumplings and 14g to 16g for larger dumplings. Those are measurements that I like when I'm using the dough to make potstickers. I want the wrappers to be slightly thicker so that they can withstand the heat during the pan-frying process. It's a matter of personal preference, really. If you are making steamed or boiled dumplings, you'll probably want the dumplings skins to be thinner. For example, with xiaolongbao (小籠包/soup dumplings), I've seen many recipes recommend the wrappers to be about 9 to 10 grams each because you want the dumpling skins to be very thin. 

Also, I'm rolling out the wrappers until they're about 3.5 to 3.75 inches in diameter.

If you don't have rolling pins at all, you can use a jar to roll out the wrappers. You can also roll out sheets with a pasta machine and use a cookie cutter to cut out the shapes. The cookie cutter should be at least 3.5 inches in diameter

How to Make Dumpling Wrappers (Dumpling Skins/餃子皮) | Lisa Lin

As with any dumplings, making mandu requires lots of space, time and hands. In other words, it's the perfect project food for your next dinner party. Double or triple this recipe so all of your guests can take home leftovers. And if anyone finds it too difficult to fold the classic dumpling shape, offer up the alternate cigar shape. Its ratio of crispy brown crust to moist filling is perfect.

Mandu

Grapeseed, canola or other neutral-tasting oil

Flour

Set a fine-mesh sieve over a medium-size bowl. Quarter the block of tofu, and place in the strainer. Cover with a bowl, and place 1 or 2 canned goods in the bowl to weigh it down. Set aside for 1 hour to press water from tofu.

Place the bean sprouts in a medium bowl. Season with 1 teaspoon salt. Toss to combine. Set aside for 1 hour.

Line four baking sheets with parchment paper. Set aside.

Bring 6 cups of water to a boil in a medium pot, and season with 1 tablespoon salt. Blanch the watercress for 10 seconds. Spread out onto one of the baking sheets in a single layer, and allow to cool, then squeeze out any excess water, and chop finely.

Squeeze out the tofu to remove any excess liquid, then crumble finely into a large bowl. Squeeze out bean sprouts, chop finely, then add to tofu. Add watercress, pork, kimchi, garlic, ginger, scallion whites, garlic chives, sugar, soy sauce, sesame oil, black pepper, mirin and 1 teaspoon salt. Use your hands to combine the mixture vigorously for about 90 seconds, until the pork becomes tacky and sticks to your palm.

Preheat a small frying pan, and add 1 teaspoon neutral-tasting oil. Make a thin, silver-dollar-size patty of filling and cook it through on both sides. Taste and adjust salt, garlic, ginger and soy as needed. The filling should be pleasantly savory.

For the filling (can be made up to one day in advance):

Lightly dust remaining baking sheets with flour. Fill a small bowl or spray bottle with cool water.

Place a wrapper in the palm of your hand and spoon in 2 teaspoons or so of filling. Lightly spray or brush water onto the edges of the wrapper, then fold the edges over to seal, squeezing out air bubbles as you go. If using square wrappers, fold corner to corner to form a triangle. (You could stop here, if you like.) Holding the dumpling in one hand, use the index finger of your other to gently poke an indent into the center of its base (the bottom of the filling). Folding the dumpling around the indent, draw both of its bottom corners together to form a fortune-cookie shape. Overlap the corners and press to seal them together. Place onto floured tray in a single layer. Repeat with remaining filling and wrappers.

Alternate version: To form cigar-shaped dumplings, spread 2 teaspoons filling in a line along the center of a square wrapper, then roll wrapper around the filling, leaving the last 1/2 inch of the wrapper unrolled. Pinch the ends of the dumpling to seal. Connect five cigars by nestling each onto the unrolled edge of the previous one and pressing to adhere. Carefully lift and place onto floured tray.

At this point, dumplings can be cooked or frozen. To freeze, freeze in a single layer until solid, then pack into zip-sealed freezer bags. Freeze for up to 2 months.

For the dumplings:

If using bamboo steamer, fill a pot with same dimensions as basket with 2 inches of water. Bring water to a simmer. Cover steamer and set atop pot. If using a metal steamer insert, set inside large pot, and add water just until it starts to come through the bottom of the insert. Cover pot, and bring to a simmer. Steam for 7 minutes until dough is tender. Serve hot.

To steam-fry the dumplings, set a cast-iron or nonstick pan over medium-high heat. Add just enough oil to coat the bottom, then carefully place a single layer of dumplings into the pan. Fry until bottoms are golden brown, about 4 minutes, then carefully add about 1/4 cup water to the pan and cover. Steam for 3 minutes until dough is tender and the water has evaporated. How To Make Dumpling wrappers

In a large bowl, mix the flour, salt, and water with a spatula, chopsticks, or your hands, until you form a rough dough. Then transfer it onto a working surface and knead for a couple of minutes into a slightly smoother dough. The dumpling dough should be slightly tacky without being sticky.The flour you use and the humidity/temperature of where you live can all affect how absorbent the flour is and the amount of water you&#039;ll need, so add a little extra flour or water, if needed, just one tsp at a time until it&#039;s right.

Wrap the dough in plastic wrap and allow it to rest for 1 hour in the refrigerator. This time will allow the gluten to develop for a softer, more supple dough that&#039;s easier to roll out and shape. If you&#039;re using flour that contains higher levels of protein/gluten, then a slightly longer rest time is recommended.

By hand

Add the flour, salt, and water to the bowl and mix at low speed with the dough hook attachment. Once all the water has been incorporated into the flour, increase the speed to medium-low. Continue mixing for about 2 minutes, until a dough forms and all the loose flour has been gathered into the dough. Turn off the stand mixer and transfer the dough onto a surface. Knead it by hand a few times, then shape it into a ball. Place the dough ball back into the mixing bowl and cover it with a damp towel or a silicone lid. Let it rest for 1 hour.

With a stand mixer

While the dough rests, gather the tools you&#039;ll need: a rolling pin, a kitchen towel, and a cutter - you can use a cookie cutter, the rim of a wine glass, a small bowl, or something similar based on the size of the dumpling wrappers that you want.

When the dough is rested, cut away a section of the dough (I used about 1/3 of it). Make sure to re-wrap the un-used dough and place it back in the fridge to stop it from drying out.Time to shape the dumpling wrappers. There are several ways to do this, including rolling out dough sheets and cutting out the shapes, weighing and individually rolling each wrapper, or the traditional Chinese/Japanese method, which relies on skill to hand-roll and shape each piece. As I&#039;m a beginner, I decided to use method one, which is the easiest.

Step 2: Roll out the dough

Roll out the sheet to roughly 6.5 inches (16.5 cm) wide, cutting off the uneven edges. Then use a sharp knife or a pizza cutter to cut squares around 3x3 inches (7.5x7.5 cm) in size.Gather the scraps to re-roll, though it may be easiest to do this with all the scraps after rolling and cutting out from all the dough portions. Make sure the scraps are wrapped up if you aren&#039;t using them immediately.The dumpling wrappers dry out fairly quickly, so place any rolled wrappers under a kitchen towel no matter which method above that you use. If possible, get your household joining in - one person to cut the dumpling wrappers, the next to fill and pleat/seal them. Working in small batches is best to avoid them drying out.

For Square Wrappers

Using a rolling pin, roll the dough as thin as possible. Aim for 2mm for general dumpling/wonton/ potsticker wrappers and 1mm for gyoza wrappers. You should be able to see your fingers through the dough. If you have a pasta machine, you can use it to help roll out the dough.Then, using your cutter tool of choice, cut out the wrappers. If you plan on stacking the wrappers, make sure to dust each one with cornstarch liberally so they don&#039;t stick together.

For Round Wrappers

If you&#039;re brave enough to take on the measuring method, then it&#039;s best to make sure that the wrappers are even in size by weighing the dough. As a general rule:9-11g works well for smaller, thinner wrappers like gyoza wrappers.12-13g is perfect for a medium-sized dumpling.14-15g will work for larger &#039;potsticker&#039; style dumplings.However, feel free to experiment to see what size (and weight) you prefer for your homemade dumpling wrappers. Most varieties aim for a size of about 3-4 inches (7.6-10cm) in diameter. With gyoza, try to aim for 1mm thickness; with other dumplings, 2mm should be fine.

They&#039;re now ready to fill and pleat - like these mushroom dumplings. You can also fill them with other veggies, shrimp, chicken, pork, kimchi, etc.

To Measure and Roll

To store: dust each wrapper well with starch and create a stack (or stacks). Wrap the stack tightly in plastic wrap and then place that in an airtight bag, squeeze out the excess air, and store it in the fridge for 1-2 days. They may last up to 3, but it&#039;s a risk as they will begin to dry out and can turn a grey-ish color too.To freeze: starch and wrap the dumpling/gyoza wrappers as mentioned above then freeze for 1 month. To thaw the wrappers, defrost them, covered, in the fridge or on the kitchen counter, and then use as usual. Alternatively, you can prepare your filled dumplings and freeze them. You can then cook them from frozen!Make sure to use water to seal any dumpling wrappers that have been stored as the starch will inhibit its&#039; ability to seal.

How To Store Dumpling Wrappers

Making dumpling wrappers at home is easier than you may think. All you need is good old all-purpose flour, salt and water. The result is tender and chewy wrappers that are easy to work with. 

How to make homemade dumpling wrappers

all purpose flour (about 280 grams, more for dusting)

Add 2 cups of flour to a bowl. Dissolve 1/2 teaspoon of salt in 2/3 cup of hot water. Gradually add the water to the flour while mixing with a spoon and checking the moisture level.

Mix it by hand, squeezing and digging into the dough with your fingers, until the dough comes together, and knead with the heel of your hand until the dough is smooth but slightly stiff. You can adjust the dough by kneading in a little more flour or more water by a teaspoon or wetting your hands.

Cover with a plastic wrap, and let it rest for 30 minutes to an hour. After resting, the dough should feel soft and smooth. (This is a good time to start making the filling.)

Shape the dough into a rectangular/oval disk on a lightly floured work surface. Using a sharp knife, cut the dough into 3 long pieces.

Roll a piece with both hands to make a thin log, about 1-inch diameter and about 8-inch long. Cover the remaining dough to keep it from drying out.

Cut the log into 3/4-inch pieces (10 to 11 pieces). Press the cut side with your palm to flatten to a small disk. Dust and roll out each disk with a small rolling pin to a thin 3.5 to 4-inch circle. (You can also use a round cutter or wine glass to make a perfect round.) Repeat steps 5 and 6 with the remaining 2 logs. It’s best to make a few wrappers at a time and wrap the filling in. Always cover the dough and wrappers that are not being used.

The dumpling wrappers can be stored for up to 2 days in the fridge. Dust each piece with cornstarch or potato starch before stacking up. Wrap the stacked dumpling wraps with a plastic, and keep it in an airtight plastic bag. You can also freeze the dough the same way.

Blanch the spinach in boiling water. Puree in a food processor. Run it through a sieve, pressing with a spoon, to extract green juice, about 2/3 cup. Add water if needed. Heat it up in the microwave to about 170°F. Follow the same steps for the wrappers above.
