Use few coals under the oven and more on top. Check at ten minutes. Pay attention for signs of rapid cooking down the edges. If the edges appear to be cooking too rapidly, you are in danger of scorching the bottom - move some coals from beneath the oven to the lid, If renewing coals, add to the top first. Rotate the lid and oven 1/4 turn opposite directions when checking bread at ten and twenty minutes. Cornbread is done when firm, golden and cooked through[; twenty-five minutes or so with a hot oven, but it can be twice that if your heat fails.

The most delicious homemade cinnamon raisin bread! It has a doughy inside with sweet raisins and cinnamon, and a crunchy outer crust. Serve toasted with butter for absolute perfection!

Cinnamon Raisin Bread Recipe

(360 grams) all-purpose flour

water

tsp active dry yeast

Tbsp brown sugar

tsp salt

raisins

Make the dough: In an electric mixer add warm water, sugar, and yeast. Stir and let sit for 5 minutes for yeast to activate tip: sugar feeds yeast so I include it in this process. Add raisins, cinnamon, flour, and salt. Use bread mixing attachment and mix together until dough forms. If dough is too wet or dry, add water/flour 1 Tbsp at a time until right consistency.  

Let it rise: Toss dough on lightly floured surface, place in lightly greased bowl. Cover with a damp dish towel and let sit in a warm area for 3+ hours. Dough should be doubled in size. Tip: I like placing my dough in the oven with the light on (oven is off). This helps create a consistent climate for the dough while the light creates a small amount of warmth to help it rise.

Preheat oven to 450F.

Transfer dough: Place dough on lightly floured surface and form into ball again (keep lightly flouring your hands to prevent sticking). Lay dough on parchment paper, lightly dust paper to prevent sticking, and lift edges of paper to transfer dough into dutch oven.

Bake: Cover with lid and bake for 30 minutes, uncover and bake for 5-10 more minutes until golden brown.

Let it cool: Remove and let bread cool for 20 minutes before slicing.

Classic Beef Stew

lbs. beef stew meat (browned)

olive oil

red potatoes (peel, rinsed and quartered)

carrots

onion

garlic (peeled and smashed)

thyme

black pepper

beef broth

corn starch

Brown

In a single layer, not crowded brown the stew meat on all sides.

Heat

Heat the olive oil in a large skillet over medium high heat.

Transfer

Transfer each piece of browned meat to a bowl. Repeat until all of the stew meat is browned.

Brown the stew meat

Layer

In a large 8-quart Dutch oven or 8-quart pottery or clay casserole dish (13 inch round and 4 inch deep) layer the meat, potatoes, carrots, onion, and garlic.

Season

Sprinkle the dried thyme, salt, and pepper over the top. Add the bay leaf.

Pour

Pour the beef broth into the casserole dish over the stew ingredients. The ingredients should be almost covered with the beef broth.

Cover

Place the lid on the Dutch oven or casserole dish. If you do not have a lid cover the top tightly with aluminum foil crimping it tightly around the edged of the pan.

Cook

Cook the beef stew in a preheated 350 F. degrees oven for 2 1/2 hours. After 2 1/2 hours remove the casserole dish from the oven. Remove the lid or aluminum foil.

Thicken

Mix the corn starch with the water until dissolved. Pour the thickener into the stew and mix with a large spoon.

Recover

Recover the casserole dish and return it to the oven. Cook for another 30 minutes until the gravy has thickened. Once thickened remove the stew from the oven.

Serve

Serve the stew immediately with rolls or French bread.
