Here's a super moist, low fat carrot cake recipe perfect for Easter or anytime of the year. This is made with a can of crushed pineapple which makes it very moist.

Super Moist Carrot Cake with Cream Cheese Frosting

all-purpose flour

whole wheat flour

sugar

coconut

tsp baking soda

salt

cinnamon

canola oil

eggs

vanilla

carrots (peeled)

pineapple

walnuts

oz 1/3 fat Philadelphia Cream Cheese

tsp vanilla extract

Preheat oven to 350°.

In a large bowl, combine flour, sugar, coconut, baking soda, salt, and spices; stir well with a whisk.

In a medium bowl, combine oil, eggs, and vanilla; stir well.

Add grated carrots and pineapple; mix well.

Fold wet ingredients with the dry ingredients, batter will be stiff and dry but keep folding it and it will all come together. Fold in 1/4 cup chopped nuts.

Spoon batter into an 8" x 3" cake pan coated with cooking spray.

Bake at 350° for about 40-50 minutes, depending on pan size or until a wooden toothpick inserted in the center comes out clean and cake is pulling away from sides of pan. Cool cake completely on a wire rack.

To prepare frosting, beat together cream cheese, powdered sugar and vanilla until smooth. Spread frosting over top of cake.

Garnish with remaining chopped walnuts.

Oreo cookies

In a food processor finely crushed Oreo cookies into fine crumbs. If you don’t have food processor, place Oreo cookies into ziplock bag and crush the cookies with a rolling pin.

Using a fork mix crushed Oreo with melted butter, then press the mixture into the bottom of 9 x 13 inches dish. Place in the fridge to firm.

Beat cream cheese, softened butter, sugar and vanilla until it’s light and creamy. Stir in 1 cup Cool Whip. Spread the mixture over the crust and place in the fridge.

In a medium bowl mix chocolate instant pudding with 2 and 3/4 cups cold milk. Whisk for a few minutes until the pudding starts thickening. Spread the pudding over the cream cheese layer. Place in the fridge for 10 minutes.

Spread 2 cups Cool Whip on top and sprinkle with crushed Oreo. Refrigerate at least 4 hours before serving.

Garnish with Peeps and Easter egg candies.

Sry disappointed in the chocolate lasagna. The cream cheese filling is not light enough to spread over the layer of Oreo.  The oreo crumbles mix in with the spread and it is a complete mess. I will delete this pin for sure.

Preheat oven to 350 degrees. Grease and flour two 8-inch or three 9-inch cake pans.

In a medium bowl whisk together flour, baking soda, cinnamon, and salt. In a large bowl cream together oil, applesauce, vanilla, sugar, and brown sugar. Mix in eggs, one at a time, then stir in carrots. (If adding raisins and/or nuts stir in now).

Stir dry ingredients into wet ingredients until there are no more streaks of flour in the batter. Divide between prepared cake pans.

Bake for 35 minutes or until an inserted toothpick into the center comes out clean.

Turn cakes out onto cooling racks and allow to cool.

Prepare the frosting while your cakes cool. In a sauce pan, melt butter over medium heat. Once completely melted, continue to cook 2-4 minutes longer until the color goes from pale yellow to a dark amber color. Remove from heat.

In a large bowl cream together cream cheese and butter. Mix in vanilla and salt. Add powdered sugar, one cup at a time mixing after each, until frosting is smooth and fluffy.

Assemble cake by spreading frosting on top of all three layers, then spreading around the sides of the cake. Top with chopped pecans if desired and store in airtight container until ready to serve.

Step 1

Combine flour, yeast, dried fruits, spices, orange zest and 1/2 tsp salt flakes in the bowl of In a stand mixer fitted with the dough hook.

Combine milk and honey in a small saucepan and stir over medium heat until lukewarm. Remove from the heat, stir in butter and orange blossom water to combine, then stir in egg.

Step 3

Mixing on low speed, gradually add milk mixture to flour mixture, then increase speed to medium-high and knead for 8-10 minutes until smooth and elastic. Transfer dough to a lightly buttered bowl, turn to coat, cover with plastic wrap and stand in a warm place for 45 minutes-1 hour or until doubled in size.

Meanwhile, preheat oven to 200°C and line a large baking tray with baking paper.

Knock back dough on a lightly floured surface and divide into 12 even pieces. Roll each into a ball and place on prepared tray, leaving 2-3cm between each. Cover loosely with a clean tea towel and stand for 45 minutes-1 hour until doubled in size.

Step 6

For the piping, stir flour and milk in a small bowl until smooth. Transfer to a zip-lock bag and cut a small hole in one corner. Pipe a cross on each bun and bake for 10 minutes, then reduce oven to 180°C and bake for 12-15 minutes until golden and buns sound hollow when tapped.

Step 7

For the orange blossom glaze, stir honey and orange juice in a small saucepan over medium-high heat to combine, bring to the boil, remove from the heat and stir in orange blossom water. Brush generously over warm buns, pouring any remaining glaze over (the buns will soak up the extra glaze) and serve. Buns are best eaten on the day they are made, but are also excellent toasted after a day or two.
