The basis of this dish is a classic white sauce, with lots and lots of cheese added. The end result is a rich cheesy pasta dish that's hard to resist.&nbsp;

Baked Mac and Cheese

Pasta (454 grams)

milk (720 milliliters)

cream (240 milliliters)

flour (60 grams)

unsalted butter (113 grams)

tsp nutmeg (1 grams)

tsp black pepper (4 grams, freshly ground)

oz gruyer cheese (283 grams, freshly grated)

oz sharp cheddar (283 grams, freshly grated)

parmesan (35 grams)

bread crumbs (60 grams)

Add pasta to a pot of boiling salted water. Cook according to instructions and drain when al dente. The pasta should be ready just before your sauce.

While the pasta is cooking, heat the milk and cream in a pot making sure not to allow it to come to a boil.

Melt 7 tablespoons of unsalted butter in a large pot. Add the flour and whisk while it cooks on low heat for 2 to 3 minutes.

Add the hot milk and cream in while whisking and cook until thickened, 2-3 minutes.

Remove from heat and mix in the cheeses, salt, nutmeg, paprika, and pepper.

Melt one or two tablespoons of butter in a pan and mix with the breadcrumbs. Cook over medium heat while stirring until the breadcrumbs are a light golden color. Season with salt and pepper to taste then mix in about three tablespoons of shredded parmesan.

Add the cooked pasta and mix well. Transfer to a baking dish or ramekins and top with the  some more cheddar and parmesan and the toasted breadcrumb mixture.

Bake at 375 for about 35 minutes.

This Skillet Baked Mac and Cheese with crunchy buttery topping is such a crave-worthy dish! Homemade macaroni and cheese has never been this delicious!

Skillet Baked Mac and Cheese

dry elbow pasta

unsalted butter

all purpose flour

salt

black pepper

Preheat oven to 350 degrees Cook pasta according to package directions. I recommend cooking the pasta a minute less than the directions. Drain and set aside for a few minutes.

To prepare roux, melt butter into a medium saucepan over medium heat. Once melted whisk in flour, salt and pepper. Stir and cook for 3-4 minutes until color of roux gets slightly darker. Slowly whisk in milk, stirring continuously until thickened, about 2 minutes. Reduce heat to a simmer and stir in 2 cups of cheese until melted.

Transfer cooked pasta to 12-inch cast iron skillet over low heat. Pour cheese sauce over top, stirring to combine.

Top mac and cheese with remaining 1 cup of shredded cheese, crushed crackers and bacon pieces. Bake for 20-25 minutes until cheese is melted and hot. Serve warm.

Creamy Baked Mac and Cheese

½ cups sharp cheddar cheese (shredded (save 1 cup for topping))

white cheddar cheese (shredded)

tbsp chopped parsley (optional)

Preheat the oven to 400 F.

Cook your pasta to less than al dente, about one minute from package directions.

To make the homemade mac and cheese sauce, you will need to melt the butter in a non-stick pan on low heat.

Add in the flour and whisk or mix with a wooden spoon and continue stirring until the mixture bubbles up. Add in the milk, pasta water, spices, salt and continue whisking until the sauce is nice and smooth.

Add in the shredded cheese, both white and sharp cheddar (only use 1 ½ cup of sharp cheddar, save 1 cup for topping)

Continue to whisk the mixture together until some of the cheese melts a bit and incorporates with the sauce. The cheese does not have to melt all the way because it will melt in the oven.

Toss the pasta around with the sauce to coat well. If you need the sauce to me more thin, add a little more pasta water and mix.

Transfer the mac and cheese to a baking dish (11 x 9 inch or similar). Add a layer of shredded cheddar cheese to the top.

To prepare the panko crust, melt 1 tbsp. of butter in a non-stick skillet. Add in the panko crumbs, paprika and toast to give the crumbs a very light golden color.

Turn of the heat and add in the grated parmesan cheese. Mix together and then top the cheddar cheese with the panko crumb mixture. 

Bake in a pre-heated 400 F oven for 15-20 minutes until hot and bubbly.

Remove from the oven and allow the dish to cool for a few minutes. Garnish with some fresh chopped parsley and serve.

Boil pasta according to package instructions, just until al dente. Don’t overcook! Strain (don&#39;t rinse) and set aside.

Shred cheese and set aside to allow to come to room temperature.

Preheat oven to 350 degrees F. Lightly grease a 8x8 baking dish.

Cook bacon in a large skillet over medium heat until crispy, about 5-7 minutes. Remove bacon to a plate lined with paper towels. Remove some, but not all of the grease from the pan and chop/crumble into pieces.

Make Cheese Sauce: Add 1 tablespoon butter to the pan and then whisk in flour. Cook, stirring, for 2 minutes. Reduce heat to low and gradually whisk in milk. Add the cornstarch to the half and half and whisk until smooth. Gradually add it to skillet followed by mustard, chicken bullion, onion powder, garlic, powder, parsley, salt and pepper. Cook sauce, stirring well, for a few more minutes, just until it begins to slightly thicken. Remove from heat and stir in shredded cheddar cheese. Taste and add additional seasonings, if needed.

Add bacon (reserve a handful to top at the end), and cooked pasta and toss to evenly coat in sauce. Pour mixture into 8x8’’ baking dish. Sprinkle parmesan cheese on top.

Breadcrumb topping: Add panko, melted butter and olive oil to a skillet (or the saucepan used to cook the pasta). Cook over medium-high heat, stirring constantly, until the crumbs are golden brown. Evenly sprinkle over the mac cheese. Add remaining bacon crumbles on top.

Bake 15-20 minutes or until bubbly. Serve warm.

In a large saucepan over medium heat, melt the butter.

Add flour and sea salt and whisk to combine.

Cook for 1 minute until mixture is slightly brown.

Add milk and half and half and whisk until the mixture is smooth.

Add sour cream (or Greek yogurt) and whisk until smooth.

Cook on medium-high heat until the mixture is thickened (about 3-5 minutes), whisking constantly. Do not let it boil.

Once mixture is thick (sticks to the back of the spatula), reduce heat to low and add cheese. Whisk until cheese is melted and mixture is smooth.

Make the cheese sauce:

Add cooked pasta to the pot of cheese sauce and stir until the sauce is evenly distributed.

Transfer mac and cheese to the baking dish and spread in an even layer.

Sprinkle topping over the mixture.

Bake for 10-15 minutes or until cheese is melted. If you like a crispy top, bake until the top is lightly browned.

Remove from oven and let cool for 5 minutes, serve warm.
