Excellent, simple recipe. I used chopped kale and lemon as garnish.

I soaked beans overnight and simmered for 1 hour, Nope beans where not done. I agree with the other reviewer who said beans needed to simmer another 3 hours till tender. 4 hours got me there. Not sure why such a substantial time difference.

Need to cook them for over 3 hours.   Definitely don’t cook in the time noted in the recipe. Flavor was delicious.

This recipe is absolute rubbish. For a start 4" of water (above the beans) is 3.5 pints in an 8" pan and 5.25 pints in a 12" pan. Describing volume in this way is plain ridiculous. Much better to say something like: "fill to the level of the beans, then add 1/2 pint and keep adding water to that level until the beans are cooked".

Not only that I followed the recipe and found the cooking time not to be 45 minutes but approaching 3.5 hours before they were the beans were of the correct consistency. We ate late that night.

Using a gas stove my carbon footprint must have risen over 4 fold. I shall never rely on this site again and I very much doubt I shall cook my own black beans again if I can help it. Cooking and canning them in a central facility is much more carbon friendly and not much different in price. One can always add additional flavouring to factory canned beans to suit.

This is a great recipe and the one I’ve used twice now without fail.  Adding rice wine vinegar at the end is a nice touch!

Great recipe! I use my instant pot and throw it all in together after rinsing the beans, no soaking. I do like to top mine with cilantro before I serve them.  Black beans are my go to bean.  Thank you for sharing your recipe!

How finely do you need to chop the aromatics? In the picture you’ve just tossed the onions in with skins on, do the skins soften enough over the cooking that they’re not nasty? Do you remove the aromatics after cooking or just scoop around them?

Fresh green beans, oven roasted till tender with a drizzle of olive oil, fresh garlic, salt, and pepper. The beans are garden fresh. A fantastic with any meal.

Oven Roasted Green Beans

green beans,

olive oil

garlic,

salt and pepper, to taste (Note 1)

non-stick baking spray

Preheat the oven to 425°F. Spray a sheet pan with non-stick spray and set aside.

Place the green beans on the sheet pan. Drizzle with olive oil, minced garlic, salt, and pepper. Be sure to move beans around so they are well coated with the ingredients.

Place the baking tray into the oven and bake for 12 to 15 minutes. Halfway through cooking time, move the green beans to ensure they brown on both sides.

After 12 minutes, taste test for doneness. The beans should be crisp with a hint of golden brown. Roast a bit longer if needed. Re-season if needed.

Serve beans with your favorite main dish.

Homemade Vegan Baked Beans [Boston Style]

For a spicy kick: ⅛ teaspoon or more cayenne (optional)

(15-ounce tomato puree

brown sugar

molasses

white wine vinegar

soy sauce

Salt and pepper (to taste)

Prepare for awesomeness.

Preheat your oven to 350 degrees F (180 degrees C). In a saucepan over medium-high heat, heat the oil and fry the onion and garlic until both are somewhat translucent and soft.

Add in the chili powder and cayenne (if you are using it) and cook for a few minutes. Add the tomato puree, brown sugar, molasses, white wine vinegar, and soy sauce and bring to a low boil. Once boiling, add salt and black pepper to taste.

Let simmer for about 10 minutes, then add the beans and simmer for an additional 10 minutes.

Put the mixture into a casserole dish and bake for 15 minutes.

Let stand for about 5 minutes before serving, and garnish it with sliced green onion or parsley. Allow it to cool for further thickening.

A filling, tasty, and high-protein bean bowl that's completely vegan. It doesn't get much healthier than this.

Miso Mushroom Bean Bowl

Shiitake Mushroom

White Onion

Garlic Clove

Drained Butter

Reserved Butter Bean Liquid

Soy Sauce

Smoked Tofu

White Miso

Cashew

Lemon

Nutritional Yeast

Salt

Black Pepper

Water

Cavolo Nero

Chive

Black Sesame Seed

Sourdough

Soak the cashews in boiling water for 15 mins until plump and soft. Meanwhile, roughly tear up the mushrooms with your hands and dice the onion.

Fry the mushrooms in a stainless steel frying pan for 7-8 mins with a little olive oil and salt, until they begin to crisp up and turn a nice shade of brown. Remove and set aside. 

Pour all the cashew cream ingredients into a blender and blitz until you have a thick, silky and pourable paste. Season to taste. 

In the same frying pan (no need to clean), fry the diced onion in plenty of olive oil with a pinch of salt for 6 mins. Add the garlic and fry for 2 mins. Grate the tofu directly into the pan and fry for 5 mins. 

Tip in the butter beans and their juices. Bring to a simmer, stirring frequently for 10-15 mins. Add half the crispy fried mushrooms, 4 tbsp cashew cream and the soy sauce or tamari. Stir well and season to taste. ​​Add a splash of water if you want it saucier.

Meanwhile, blanch the cavolo nero in boiling water and transfer it to a bowl. Add olive oil, a squeeze of lemon, salt and pepper to make a lemony cavolo nero oil. 

Decorate with the rest of the cream, mushrooms, chives, the lemony cavolo nero oil, sesame seeds and plenty more extra virgin olive oil. Serve with crusty sourdough. 

An absolute banger!!! Will be making this one again for sure :) great flavours, textures, and not too hard but looks fancy at the end. I exchanged the onion for leeks for a subtler flavour

I was unsure about how the cashew cream would turn out, but was very surprised.  Very tasty and creamy, would make this recipe again!

Tastes so good but it’s not saucy enough… just a bit like tofu scramble! What have I done wrong? Not enough water in the cashew cream?

I needed to adapt this- e.g. frozen mushrooms,  no cavalo nero, so I threw in spinach at the end and it was delicious - so it's a forgiving recipe. The cashew cream was good- but it tastes lovely without it so you can skip this stop if you're short on time.

Fab dish! Served two with a little left over. I perhaps need to reduce my portion sizes but it was soooo good ☺️😂

Made half of this recipe and it’s lasted through one dinner and three breakfasts so a very balanced and filling meal or add-on. Pairs well with Fable’s pulled mushrooms if you’re in a pinch or having a lazy day.
