This is an easy recipe for Bombay Aloo also known as Bombay Potatoes. This is a classic aromatic Indian dish and can be eaten as a side dish to your main or as an appetizer. You will find it on the menu on all Indian restaurants, so this is about recreating Bombay Aloo in your own home.

Cut the potatoes into

Cut the potatoes into a half or small quarters depending on their size. Place in a saucepan, cover with water and add a little salt and boil for 10-12 minutes.

In the meantime, in a large, deep frying pan, add the oil and the onions. Fry for about 5-8 minutes until translucent and sticky. Add the garlic. Half the chillies and throw them in the pan. Continue frying all ingredients for another 2-3 minutes until the garlic cloves get a bit of colour. Add the spices: turmeric, ground coriander, garam masala, fresh ginger and mustard seeds. Mix to coat all ingredients in spices and fry for another 1-2 minutes until it starts to smell aromatic.

Tip the tomato sauce

Tip the tomato sauce and reduce the heat to low. Simmer for a few minutes. Drain the potatoes then add them to the pan. Allow it to simmer until the tomatoes sauce is reduced to a thick sauce. Taste and adjust the seasoning as needed.<br />
Remove the halved chillies, scatter with fresh herbs and enjoy hot.
