This creamy lemon broccoli pasta recipe comes together fast and makes a delicious and comforting meatless meal! 

Creamy Broccoli Pasta

Salt & pepper (to taste)

Boil a large, salted pot of water. Cook the pasta al dente according to package instructions. When the pasta is 2-3 minutes away from being done, you will add the broccoli to the water.

Add the butter to a skillet over medium-high heat, and once it&#039;s melted, stir in the flour and cook for 1-2 minutes.

To the skillet, add in the garlic, broth, lemon juice, and Italian seasoning. Let it bubble for a minute or so.

Whisk in the cream and let it cook for a few minutes until it&#039;s thickened up to your liking, then stir in the parmesan cheese and take the pan off the heat.

Drain the pasta and broccoli and add it to the skillet. If the sauce has thickened up too much, add a small splash of the pasta water prior to draining it. Season the pasta with salt &amp; pepper (I&#039;m generous with both) as needed and serve immediately with extra parmesan grated on top if desired.

A quick pasta recipe, perfect for a weeknight. Melted broccoli in a garlicky, chilli oil, finished with a shower of parmesan. It doesn't get any better.

Melted Broccoli & Anchovy Pasta

Large Heads of Broccoli

Mild Green Chillies

Garlic Cloves

Tin of Anchovies

Tbsp Balsamic Vinegar

Parmesan

Fusilli

Parsley (25 grams)

Trim the broccoli stalk, then chop the broccoli into smaller chunks, place into a food processor and blitz until minced. Peel the garlic cloves and finely mince. Thinly slice the chilli. Grate the cheese.

Bring a large saucepan of salted water to the boil.

Meanwhile, drizzle 5 tbsp of olive oil into a large frying pan over medium heat. Once hot, add the garlic, chilli and anchovies, cook until the fish has broken down, 3-4 mins. Add the balsamic and let it evaporate fully. Add the broccoli and cook until almost mushy, 6-7 mins.

Once the water is boiling, add the pasta in and cook for 3 mins until it’s just under al dente.

Using a slotted spoon, transfer the pasta into the pan with the broccoli. Add some pasta water and stir through until the sauce emulsifies and the broccoli breaks down even more.

Take it off the heat, stir through three-quarters of the cheese, adding more pasta water if necessary. Taste and season with salt and pepper, if needed.

Serve the pasta with a sprinkle of the remaining cheese.

A delicious, simple, under-30-minute dinner than anyone can make!

Easy Broccoli Pasta

olive oil (or vegetable broth)

oz bow tie pasta

pasta water (reserved from cooking)

yeast

lemon (juiced)

Bring a large pot of water to a boil. Add the broccoli, and cook for five minutes until soft. Using a spatula, transfer the broccoli to a pan over low heat, reserving the water in the pot. 

Cook the pasta in the remaining broccoli water according to package directions, reserving at least 1 1/2 cups of the pasta water when you drain. 

Now, in the pan with the broccoli, add the olive oil and garlic. Saute until you can mash up the broccoli, almost into a pesto-like sauce. You can add some water a tablespoon at a time to thin the broccoli floret sauce, as needed. 

At this time, add the drained pasta, nutritional yeast, salt, pepper and lemon juice. Stir, adding the reserved pasta water 1/4 cup at a time as needed. 

This Italian Broccoli Pasta is an authentic dish from my Sicilian grandmother. It's a quick and easy recipe, perfect for any weeknight.

Italian Broccoli Pasta

broccoli (about 2 small heads)

1lb rigatoni pasta (or pasta of choice)

extra virgin olive oil,

garlic,

red pepper flakes

(2 ounces) pecorino romano cheese, finely grated

Kosher salt and fresh cracked pepper

Boil water. 

Prep vegetables

While water heats up, cut head of broccoli into large florets. Remove the tough outer layer of the stem and cut into 1-inch chunks. Mince garlic.

Boil and chop broccoli

Cook broccoli in boiling water for 5-7 minutes, until fork tender. Remove with a slotted spoon, reserving water in pot. Chop broccoli into 1/2 inch or smaller pieces.

Boil pasta. 

Bring pot of water back to a boil. Season generously with salt. Add pasta and cook until 1-2 minutes short of al dente. Reserve 1 cup of pasta cooking water. Drain pasta.

Cook broccoli sauce. 

While pasta cooks, place olive oil, garlic and red pepper into a large, room temperature sauté pan. Turn heat to medium. Once garlic sizzles for a few seconds, stir in the chopped broccoli. Season with salt and pepper. Pour in about 1/4 to 1/2 cup of pasta water. Bring to a boil. Allow to simmer for about 3-5 minutes so broccoli further softens and breaks down. This pasta is best with very soft broccoli (even softer and more broken down than in my photos is great).

Finish pasta. 

Add cooked pasta to broccoli sauce. Toss to combine. Remove from heat and stir in cheese. Taste for seasoning. Add more pasta water to loosen sauce, if needed. Serve topped with a drizzle of extra virgin olive oil and cracked black pepper or more cheese, if desired. Enjoy.

Such a great standby, and so easy. I'm Calabrese, and this is one of my go-to dishes. I think cooking the pasta in the broccoli water is a great idea!
