This Creamy Mashed Cauliflower recipe will make you forget that mashed potatoes even exist! A comforting, buttery and garlicky mashed cauliflower recipe that is VERY easy to make and it’s done in just 15 minutes! It&#x27;s low in carbs but BIG on flavor.

Creamy Mashed Cauliflower

cauliflower florets, (about 1 head cauliflower)

butter, (divided)

garlic, (roughly chopped)

buttermilk

parmesan cheese

salt

pepper

chopped fresh parsley, (for garnish)

IF ROASTING THE CAULIFLOWER: Preheat oven to 450˚F. Toss the cauliflower florets with a tablespoon of olive oil; spread on a rimmed baking sheet and roast for 20 minutes, or until tender.

IF BOILING THE CAULIFLOWER: Fill a large frying pan with 1/4 inch water; add 1/2 teaspoon salt and bring to a boil. Add cauliflower florets; cover the pan and cook for 10 minutes, or until tender and soft. DRAIN WELL and set aside for 3 minutes to steam-dry.

In a large frying pan (use the same pan that you used for the cauliflower, just wipe it down) melt 1/2 tablespoon butter.

Add garlic and cook for 30 seconds, or until fragrant. Remove from heat.

Stir steamed (or roasted) cauliflower florets to the pan with the garlic.

Add remaining butter and buttermilk.

Grab the immersion blender and blend to a desired consistency.

Stir in parmesan cheese, Italian seasoning, salt and pepper. Taste for seasonings and adjust accordingly. Add more butter or buttermilk to make it creamier.

Transfer to a serving bowl and garnish with parsley.

Serve.

This side dish is easy, healthy, and incredibly delicious!  Creamy cauliflower blended with zesty leeks and garlic will have you craving your veggies!

Cauliflower Leek Purée

cauliflower

Tbsp butter

leek (thinly sliced (at least 1 1/2 cups))

garlic (chopped)

butter

plain Greek yogurt

tsp salt

tsp pepper

Rinse off the cauliflower and dry with a paper towel.  Place cauliflower on a cutting board and remove any &quot;stems&quot; and leaves.  Place both heads of cauliflower in a large pot with enough water to cover an inch above the vegetables.  Boil on medium-high heat until cauliflower is tender, about 15 minutes.

Remove cauliflower from pot and allow to drain and cool to the touch.  Remove all white &quot;heads&quot; from the cauliflower and place them in a bowl.  Discard the stem.

While cauliflower is cooking, rinse and slice the leeks then peel and chop the garlic.  In a sauté pan over medium/high heat, melt 3 tablespoons butter.  Reduce heat to medium then add sliced leeks and chopped garlic, cooking until leeks are tender, about 10 minutes.

Using a food processor, purée cooked cauliflower and sautéd leeks and garlic in batches.  Place purée mixture in a large mixing bowl.  Add 2 tablespoons melted butter and stir until well blended.  Add the yogurt and blend until purée is creamy.  Add salt and pepper and taste for seasonings.  Top with chopped chives.

A wonderful twist on the classic cheese soup prepared with cauliflower, bacon, cheddar cheese, and a splash of cream.

Cauliflower Cheese Soup

bacon, (diced)

yellow onion, (diced)

(about

garlic, (minced)

thyme

chili powder

parsley

salt and fresh ground pepper (to taste)

chicken

heavy cream

cheddar cheese

nutmeg

cheddar cheese, (for garnish, optional)

dried chives, (for garnish, optional)

Add 1 tablespoon butter and diced bacon to a dutch oven or large soup pot; cook over medium-high heat for 2 minutes, or until bacon is crispy.

Remove bacon from the pot with a slotted spoon and set aside.

Add remaining butter to the bacon fat in the pot and melt.

Stir in onions and carrots; cook for 2 minutes.

Stir in cauliflower florets, garlic, thyme, chili powder, and parsley.

Season with salt and pepper and cook for 3 minutes, stirring occasionally.

Add chicken broth and bring to a boil.

Lower heat to a simmer and stir in the heavy cream; simmer for 12 to 15 minutes, or until veggies are tender, stirring occasionally.

Puree with an immersion blender OR working in batches, puree in a blender machine; blend until creamy and smooth.

Pour blended soup back into the soup pot; increase heat to medium, add shredded cheddar cheese and nutmeg, then stir until melted.

Taste for seasonings and adjust accordingly.

Remove from heat.

Garnish with previously prepared bacon, shredded cheddar cheese, if using, and chives.

Simple and delicious stir fry recipe made with cauliflower and homemade pepper masala powder.

Cauliflower Pepper Fry

300 gram Cauliflower florets

Water

Turmeric powder

Salt

& 1/2 teaspoon Peppercorns

Fennel seeds

Cumin seeds

Dry red chili

Cinnamon stick

Cloves

Ginger Garlic

(5 Curry leaves

Onions, chopped

Salt (as required)

Cilantro / Coriander leaves, chopped

For Blanching cauliflower - In a bowl add cauliflower florets, hot water, 1/2 tsp Turmeric powder, 1 tsp salt, mix well and soak for 5 mins. After that strain the florets and keep aside.

Pepper masala powder -  In a pan dry roast, peppercorns, fennel seeds, cumin seeds, dry red chili, cinnamon, cloves for 2 mins at low to medium heat (don’t burn the masala). Cool down completely and grind to a fine powder.

Chop onions, take 2 cloves garlic & 1 inch ginger crush together, arrange remaining ingredients for cooking.

Preparation : 

Take a pan, pour oil, once heated add crushed ginger garlic and saute for 2 mins at medium heat.

Add curry leaves and sauté till it splutters, add in chopped onions and saute for 4 to 6 mins, until onions are translucent.

Then add 1/2 teaspoon turmeric powder and give a quick mix for few seconds.

To the pan add blanched cauliflower, 1/4 teaspoon salt and stir fry for a minute.

Pour 1/4 cup water, cover and cook for 5 mins at low heat.

Cauliflower pepper fry

Open the lid, saute till all the water evaporated from the pan.

Finally add in the freshly prepared pepper masala powder and saute for 2 to 4 mins at low heat. Check for seasoning and add salt as required.

Garnish with chopped cilantro.

Final Preparation

Cauliflower pepper fry is ready, serve it hot with steamed rice, sambar or roti.
