Instant Pot Chicken and Rice is a one-and-done dream dinner. Chock full of flavors you&#x27;ll love like Italian seasonings, garlic, and paprika and finished with a squeeze of lemon, this dish is perfect for those long winter nights. 

Instant Pot Chicken Breast and Rice

chicken breasts

olive oil

salt and pepper

long grain white rice, rinsed (see note)

Set Instant Pot to SAUTE and drizzle with 1 tablespoon oil. Stir together dried herbs, garlic powder, onion powder, and paprika. Rub chicken with 1 tablespoon oil, then season all over with salt and pepper to taste, and finish with the seasoning blend. Add chicken to pot, brown for 1-2 minutes on each side, then transfer to a plate. 

Add butter to the pot. Once melted, stir in garlic. Stir in rice along with dried herbs and salt and pepper to taste. Stir in broth.

Set steam rack in the pot with the handles up. Place chicken on the rack. Cover and set to PRESSURE COOK or MANUAL for 5 minutes. Cook, then do a natural release for 5 minutes, remove lid. Transfer chicken to a plate. (see note)

Fluff rice with a fork. Taste and add salt and pepper if needed.  Squeeze fresh lemon juice over chicken and rice, and serve.

This quick fix Salsa Verde Chicken and Rice recipe could not be any easier. There's only 4 ingredients! Plus, everything cooks in the same skillet - even the rice - so you only have to wash one dish. Super simple to throw together on a busy weeknight!

Rinse the chicken breasts and pat dry. Cut into bite-sized pieces (about 1-inch cubes). Season generously with salt and pepper. In a large pot or dutch oven (something with a lid), heat the olive oil over medium-high heat.

When the oil is very hot, add the chicken in a single layer and cook until the outside is golden brown, about 1-2 minutes per side.

Add the rice, salsa verde, and chicken broth. Bring to a boil then cover, reduce heat to low, and simmer for 20 minutes until the rice is tender. Serve and enjoy!

This was easy and delicious. My husband and 16 year old daughter liked it. Will definitely make again.

Stir

Add all of the marinade ingredients to a bowl and stir together.

Marinate

Place chicken thighs in a glass dish, pour marinade over the chicken, and turn each piece to coat. Cover dish and marinate chicken in the fridge for at least 30 minutes and up to overnight.

Sear Chicken

Preheat your oven to 350 degrees fahrenheit. In a large ovenproof skillet, heat 2 tablespoons olive oil on medium-high heat. Add chicken thighs skin-side down and cook until skin is golden brown, about 5 minutes. Reserve the leftover marinade as you&#039;ll add that back in later.

Flip

Flip the chicken and cook another 5 minutes. Remove chicken thighs from skillet and set aside.

Clean Pan

Use your tongs to scrape and remove any browned bits, and bunch up a couple of paper towels to soak up some fat from the pan, but not all. Reserve a little bit of grease to cook the onions.

Saute

Add the diced onions and stir for 1-2 minutes, or until they start to become translucent.

Add the chopped spinach, garlic, oregano, salt, pepper, and reserved marinade. Stir for another 30 seconds or until the spinach starts to wilt.

Add the rice to the skillet, and stir well to coat the rice with the oil.

Pour

Pour the chicken stock into the skillet and stir well. Bring this to a simmer on the stove.

Bake

Arrange chicken thighs on top of the rice, then cover the skillet and place in the preheated oven. Bake for 35 minutes. Remove the lid, return the skillet to the oven, and bake until chicken is cooked through and rice is tender, about 10 minutes more.

Rest

Let the chicken and rice rest for 5 to 10 minutes. The rice will look really dark as the spinach and onions rise to the surface. Just fluff the rice up with a fork to mix everything back together before serving.

Serve

Top with chopped parsley and grilled lemon slices or fresh lemon zest.

Easy Chicken and Rice Bake Dinner for Two

A delicious, easy, and budget-friendly meal – it’s not too good to be true! Creamy chicken and mushrooms with rice is comforting, satisfying, and tasty.

Creamy Chicken and Mushrooms with Rice

yellow onion, diced

chicken thighs, cut into bite-sized pieces

white mushrooms, sliced thickly

In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until browned on all sides and cooked through. Remove to a bowl and set aside.

Reduce heat to medium and add onions. Cook, stirring, until softened and translucent, about 5 minutes. Add mushrooms and continue cooking until mushrooms are cooked. Add chicken back in along with garlic. Cook for 1 minute or until fragrant.

Reduce heat to medium-low and add cream cheese, cheddar cheese, and milk. Continue to cook until cheese has melted and a creamy sauce has formed. Add more milk if desired to thin sauce.

Serve over cooked brown rice, and garnish with fresh parsley.

Stove top Chicken and Rice is a simple dinner made in one dish on the stove that everyone will love. Make with chicken, carrots, apple, rice, and chicken broth, it's a quick meal for any busy night.

Heat a large cast-iron Dutch oven or skillet over high heat (something with a lid). Add the olive oil, and heat until the oil is shimmering. Carefully add the chicken to the hot pan and let it cook on one side without turning until deep golden brown on the bottom, about 5 minutes. Flip the chicken over and cook on the second side for another 5-6 minutes until the chicken is golden brown and cooked through.

Remove the chicken from the pan and set it on a plate. Set aside.

Reduce the heat to medium and add the onions, carrots, and apple to the same pan that you just took the chicken out of. Cook, stirring often, until the onions are translucent, about 5 minutes.

Add the garlic and rice, and cook for 2 minutes.

Add the chicken broth, oregano, and half the parsley and cook with the lid on, stirring occasionally, until the rice is cooked through, 18 to 20 minutes.

Remove from the heat and let the mixture rest for 5 minutes. While the rice is resting, slice the chicken against the grain. After the 5 minutes are up, add the chicken, the rest of the parsley, and salt and pepper to taste.

Chop 1/2 of a medium size onion, chop 2 stalks celery and peel and chop 2 carrots.

Toss diced vegetables into Instant Pot

Add 1 cup Wild Rice Blend on top of vegetables and place chicken breasts on top.

Season Chicken breasts with salt, pepper, thyme

Add Broth and place Lid on Instant Pot.  Close and lock pressure valvue

Set to Pressure Cook for 15 minutes allowing a 10 minute Natural Pressure Release

Release remaining pressure and open lid

Remove chicken and shred with forks.  Chicken will easily fall apart.  Stir shredded chicken into cooked wild rice

Serve Hot

This! This has become one of our Monday night staples. Quick and easy and great for planned leftovers! Excellent directions. I have made it with fresh or frozen-solid chicken breasts. Sometimes I use broth and sometimes just Better than Bouillon dropped into the water in the pot. We often like to stir in a large spoonful of plain Greek yogurt and grated cheese after its all done which is reminiscent of a creamy cheesy old-school casserole. Love this. Thank you!

The taste was great however I used unfrozen chicken breasts (1.5 lbs) and followed the recipe exact with my IP and the chicken was way over cooked. Not sure I missed something? 10 mins on pressure cook and then 15 mins slow release? I thought it seemed like a lot compared to a lot of other foods I’ve cooked but I followed the recipe. Definitely chewy and overcooked. Super bummed about that as I was really looking forward to this tonight. Maybe I could try again but would quick release only after 5 mins. Thoughts?

This One Pot Coconut Chicken and Rice Recipe is the perfect quick and easy weeknight meal for your family! It&#039;s flavorful, delicious, and makes for easy clean up!

One Pot Coconut Chicken and Rice

chicken thighs (patted dry)

ginger

coconut milk

rice (uncooked)

unsweetened, coconut

green onions (diced)

limes

cilantro

Preheat the oven to 400F.

Heat a drizzle of oil in the Dutch oven to medium to medium-high heat.

Sprinkle salt and pepper over chicken.

When the oil in the pan is hot brown the chicken in the oil for 3-4 minutes per side. Remove from the pan and set on a plate.

Add the onion and ginger to the pan. Heat until tender and translucent, about 5 minutes.

Pour coconut milk and broth into the pan and stir to scrape up any browned bits.

Add rice and stir to coat.

Nestle the chicken into the rice mixture and sprinkle with coconut.

Add a tight fitting lit to the pan.

Bake at 400 degrees for 20-25 minutes, or till rice is tender and chicken is cooked through.

Sprinkle green onions and cilantro over all the rice and chicken, and then squeeze lime juice over everything. Add salt and pepper to taste.

Serve right away.

This was amazing! So rich but not too heavy. The perfect comfort food! We put the lime, coconut, cilantro and green onions in little bowls so each person could customize their garnishes.

i first tried this recipe months ago when i first started cooking... it was easy and convenient. my family loved it. ever since then they're always asking me to make it. even now that I'm a much more experienced cook its a dish i love making and that my family enjoys. I've found too that using cream of coconut gives it a nice flavor. adding yogurt/sour cream with capers too? even better. thank you so much for this lovely recipe

Delicious, add a little garlic powder with salt and pepper , sprinkling on chicken.  Also at end I add mandarin oranges .  Crowd pleaser !

Wait, does jasmine rice work for or against the flavors in this dish? In the main post it's recommended, but here it says to avoid it and just use long grain white rice.
