Easy Coconut Rice

jasmine rice

coconut milk

water

salt,

sugar,

fresh cilantro, chopped (optional for garnish)

In a medium sized pot, rinse the jasmine rice several times until the water runs clear. Drain any excess water and add the coconut milk, water, salt and sugar.

On high heat, allow the mixture to boil. Once it starts to boil, turn the heat down to low and cook covered for 20 minutes.

Uncover and continue to cook for 5 minutes. Fluff and serve. Garnish with some chopped cilantro.

Came out nutty, rich and lightly sweet with a good quality coconut milk. Surprised it was that good being so easy. This is my new rice hack.

Easy Coconut Rice Recipe

Combine the ingredients in a large saucepan. Cover and bring to a boil.

Reduce heat to medium-low, and simmer for about 20 minutes – until rice is fluffy and liquid has been absorbed.

Remove from heat and allow rice to sit for an additional 5 minutes. Fluff with a fork before serving.

Been using this recipe for years now and it’s great. I use less salt, but that’s the only change I make. Pairs great with teriyaki chicken. I make “French toast fried rice” the next day with it- I fry it in coconut oil with a bit of cinnamon and additional brown sugar and it has French toast vibes.

WTF this rice is ridiculous! The usual ratio is 1 cup of rice to 1 cup of liquid. This is 1 cup of rice to 2 cups of liquid. 30 minutes after starting it, I STILL have liquid in the rice and it's gross and gummy. What a waste of food! Do not recommend,

I LOVE this recipe. Such a simple upgrade from plain white rice, and the toasted coconut really brings it to the next level. I could eat this all day long. Next time I make it (which can't come soon enough), I plan to extend the cook time on mine by a few minutes. Not sure if it's an altitude thing, but the rice was still a little wet and just a smidge underdone with the 15 minutes. Still ate it all, though! Delish!

I made this tonight and it was delicious!  The recipe was easy. Everyone liked it. It does make a lot though, there were four of us and I had quite a bit left over. (We will eat it as leftovers but I may half it on occasion). I’ll definitely make it again.

I loved this coconut rice! My husband who isn't too keen on coconut really liked it as well. It had the perfect amount of coconut flavor, not too strong. Super easy to make and tasted great with teriyaki chicken.

Coconut Rice Recipe 

jasmine rice, rinsed

lemongrass, minced

ginger root

Makrut lime leaves

In a medium saucepan or pot, stir the rice with coconut milk, water, lemongrass, and salt.  Add ginger slices and lime leaves if using.

Bring to a boil with the lid off. Turn down to a gentle simmer, put the lid on, and cook for 20 minutes.

Turn the heat off leave the lid on and let sit for 10 minutes (don&#8217;t be tempted to peak!).

Remove aromatics- ginger and lime leaves. Fluff with a fork and serve.

I made this with brown rice, so adjusted the cooking time &amp; liquid amounts. Added some lime zest &amp; juice after it had steamed. Wonderful! Thank you.
