easy creamed spinach

A creamy, dreamy, gourmet side dish of buttery wilted spinach in a homemade velvety butter sauce.

STEAKHOUSE CREAMED SPINACH

olive oil

baby spinach

unsalted butter

onion

all-purpose flour

milk, (whole milk works best)

salt

pepper

¼ teaspoon sweet paprika

nutmeg

Heat olive oil in a saucepan or large skillet set over medium-high heat.

Add spinach to the heated oil and cook for 2 minutes, or until wilted, stirring frequently.I suggest cooking the spinach in 3 batches so it fits comfortably in the skillet, and cooks evenly. Use about a teaspoon of oil with each batch.

Remove from heat and transfer spinach to a cutting board; once it is cool enough to handle, chop up the spinach. Set aside.

Wipe down the saucepan.

Set saucepan over medium heat.

Add butter to the pan and melt it. Swirl around from time to time to melt nicely and prevent from browning.

To the melted butter add the onion and cook for 2 minutes, or until just softened.

Sprinkle flour over the onions; cook and whisk for 2 more minutes, or until lightly browned.

Add the milk in a slow stream while whisking; whisk until completely combined and the mixture begins to boil and slightly thicken.

Whisk in salt, pepper, paprika, and nutmeg.

Reduce heat to low and continue to cook for 5 minutes, whisking frequently.

Add the chopped spinach; stir to combine and continue to cook for 5 more minutes, stirring frequently, folding in the spinach as you stir. You want to mix and stir to completely combine the spinach with the sauce.

Remove from heat.

Taste for salt and pepper, and adjust accordingly.

Serve.

Easy Creamed Spinach

Parmesan cheese (optional topping)

Melt butter in a large skillet over medium heat.  Add onion and cook, stirring frequently, until onion is tender (about 3 to 4 minutes).

Add garlic and cook until fragrant, stirring constantly (about 30 seconds).

Add heavy cream, cream cheese, salt, pepper and nutmeg.  Stir until cheese is melted and mixture is smooth.

In a bowl or large measuring cup, whisk together milk and flour.  Pour into mixture and stir to combine.

Cook, stirring constantly, until thickened (about 3 minutes).

Add spinach and stir well to combine.  Cook (stirring frequently) until spinach is heated, about 1 to 2 minutes.  Season with additional salt and pepper, if desired.

Sprinkle with freshly grated Parmesan, if desired.

Creamed Spinach

lbs fresh spinach, roughly chopped into 1 inch pieces

salt and black pepper

balsamic vinegar

panko bread crumbs

lemon,

cream cheese,

fontina cheese (white cheddar also delish)

Heat the olive oil in a very large pot or Dutch oven. Add the the spinach in batches, stirring to wilt until all the spinach has been added. Cover the Dutch Oven and cook on medium-low, stirring every few minutes, until the spinach is soft, about 10 minutes. Add the balsamic and stir to combine. If the spinach starts to brown, reduce heat to low and continue to cook.

While the spinach is cooking, melt the butter in a small skillet over medium-high heat. Add the panko bread crumbs and season with salt and freshly cracked black pepper. Stir and sauté until the bread crumbs are golden-brown, about 3 minutes. Stir in the lemon zest and remove from the heat.

Add the cream cheese in small pieces into the spinach over low heat. Stir the cream cheese until it&#039;s melted into the spinach. Add the fontina, lemon juice and heavy cream and combine for about 1 minute until the fontina is melted. Transfer the spinach mixture to a serving bowl and sprinkle the toasted panko over the top to serve.
