Crockpot Chili (Cook-off Winner!)

hardwood smoked bacon

red bell pepper, (finely chopped)

green bell pepper, (finely chopped)

(~2 stalks) celery, (finely chopped)

(~1 small) yellow onion (finely chopped)

jalapeno peppers, (optional* seeds removed and finely diced)

(15 ounces EACH) chili (pinto) beans in medium sauce

(15 ounces) chili (pinto

(28 ounces EACH) petite diced tomatoes, (undrained)

(6 ounces) tomato paste

(32 ounces) ground beef chuck

(16 ounces) Italian sausage

chili powder

oregano

cumin

basil

salt (& 3/4 teaspoon pepper)

cayenne pepper

paprika

white sugar

Worcestershire sauce

garlic

sized beef bouillon cubes

sour cream, cheddar cheese

In a skillet over medium heat, cook the bacon until crisp. Remove on to a paper towel lined plate and dab off the excess grease. Set aside.

Reserve the bacon grease in the skillet.&nbsp;Remove the stem and seeds from the red pepper. Finely chop. Remove the stem and seeds from the green pepper and finely chop.

Finely chop the celery. Remove the peel of the onion and finely chop. Chop the jalapeno pepper and remove the seeds if desired -- leave them in for extra heat.*

Add the red pepper, green pepper, celery, onion, and jalapeno pepper to the skillet with the reserved bacon grease. Saute the veggies over medium heat until tender. Transfer to the crockpot.

Add in the three cans of chili beans (undrained and do not rinse), petite diced tomatoes, and tomato paste to the crockpot.

In the same skillet used to cook the bacon and veggies, cook the ground beef chuck and Italian sausage until no longer pink over medium high heat. Drain off all the fat and add into the slow cooker.

Add all the seasonings to the crockpot. Crumble up the bacon (or chop) into very small pieces and stir that in the crockpot. OR reserve the bacon in the fridge and add at the end. Stir everything together.

Cover and cook on low for 6-8 hours. Taste and adjust seasonings (salt, pepper, chili powder, etc.) Enjoy with fresh cilantro, sour cream and cheddar cheese.

Easy Crockpot Chili

beef (browned)

15 oz cans dark kidney beans, drained

tomato sauce

tomatoes

chili seasoning

water

cheese

corn chips

After beef is browned, and grease drained, place in crockpot. Add in kidney beans, tomato sauce, tomatoes, chili seasoning and water. Stir until well combined.

Cook on LOW for 6-7 hours or HIGH for 4 hours.

Serve with your favorite chili toppings, such as cheese, sour cream or corn chips!

Mix uncooked ground meat with 1 tsp garlic powder, 1 tsp kosher salt, and 1 tsp pepper. Mix together well. Heat olive oil in a large skillet over medium-high heat. Once oil is hot, add ground meat and cook until browned, breaking it up while you cook.

Cook

Transfer cooked meat to slow cooker. Add in the rest of ingredients to the browned meat. Cook on Low for 6-7 hours or high for 4-5 hours. (If using a Dutch oven or heavy pot on stovetop, bring to simmer for 4 hours.)

Garnish

Keep warm until ready to serve. Garnish with desired toppings.
