Shortcut Dirty Rice

bacon grease (or another neutral oil like vegetable oil)

yellow onion (diced - about 2 cups)

green bell pepper

celery

garlic (minced)

beef

sausage (like Jimmy Dean or Tennessee Pride)

rice

beef broth

salt

pepper

green onions (sliced thin)

Heat the bacon grease in a large skillet or large dutch oven with a tight-fitting lid over medium heat.

Add the onion, pepper, and celery to the skillet. Cook, stirring often, until the onions are translucent - about 3 minutes. Add the garlic and cook until fragrant, being cautious not to burn - about 1 minute.

Add the ground beef and sausage. Season lightly with creole seasoning, then increase the heat to medium-high. Cook, stirring frequently, and breaking up the meat with a wooden spoon. Cook until meat begins to brown - about 8 minutes. Drain away excess fat - if desired.

Add the uncooked rice and stir to combine. Stir frequently to toast the rice in the rendered fat - about 5 minutes. Slowly add the broth. Add salt and pepper to taste. Bring to a boil, reduce to a simmer, and cover tightly. Cook 20 to 25 minutes, stirring a few times, or until the rice is tender to your liking. Add more creole seasoning or salt and pepper to taste. Garnish with sliced green onions, if desired.

I cook for nine people every evening, six adults and three kids (8,10, &amp; 14). Pleasing all is impossible! I cooked dirty rice using your recipe two nights ago, mainly because I like dirty rice. I had enough other food to feed everyone, but believe it or not the dirty rice recipe was the star of the night. Of course I knew all the adults would love it, but I was pleasantly surprised when all three kids ate not one, but two helpings. This recipe goes in my special recipe box. (There’s really no such thing, but you get my drift!) This hearty recipe will most likely be on my two week rotation of meals. Cajun Dirty Rice Recipe

pork sausage

chicken livers, (finely chopped)

green bell pepper, (about half a pepper)

yellow onion, (1 onion)

long-grain rice, rinsed, (I use Uncle Ben's converted rice)

green onions, (sliced)

garlic

Worcestershire sauce

chicken broth (or water)

creole seasoning, (I use Tony Chachere’s)

parsley

salt and black pepper

In a large Dutch oven or 6 to 8-qt saucepan with a lid, sauté all the meat (sausage, beef, and liver) over medium heat, breaking the large pieces with a wooden spoon as it cooks. Season with a little salt and pepper. Cook a few minutes until the meat is no longer pink.

Add the bell pepper, onions, and celery to the pot. Cook for 5-7 minutes, until the veggies soften and start to brown.

Add the rice, green onions, and garlic; continue to stir for 1-2 minutes until the rice begins to turn opaque.

Add the Worcestershire sauce, stock, and Cajun/Creole seasoning. Mix well, lower heat to LOW, and cover. Simmer for 20 minutes or until the rice is tender and all the liquid has been absorbed.

Remove from the heat and stir in chopped parsley. Serve hot.
