Easy Dumpling Soup (Potsticker Soup)

tbsp sesame oil

ginger

large carrots, julienned (or 1 cup if using pre cut)

Heat sesame oil in a soup pot set over medium heat

Add the garlic and ginger and sauté until fragrant, about 3 minutes.Add chicken stock, soy sauce, green onions, carrots and salt to the pot and bring to a boil

Add the dumpling (potstickers) to the pot and bring back up to a boil

Serve topped with sesame seeds and fresh green onions

Quick Dumpling Soup

ginger (minced)

garlic (minced)

vegetable broth

tbsp miso paste

vegetable dumplings (frozen)

pack brown rice ramen

carrots

greens (chopped)

onion

tsp chili flakes

½ tsp sesame seeds (toasted)

Heat a medium sized pot over medium heat. Add the ginger and garlic, and saute for 2 minutes, until fragrant. Add in the vegetable broth, soy sauce and miso paste. 

Bring the soup to a boil, then add the frozen dumplings, noodles, carrots and greens. Allow to simmer over low to medium heat for a few minutes until the dumplings are cooked through and the noodles are soft. 

Transfer to bowls and garnish as desired. Enjoy immediately.

6-8 green onions chopped (, white and green separated)

Tablespoons rice vinegar

lb frozen small dumplings

baby bok choy

Chili Crisp (, for garnish)

Make Broth: Heat oil in a large soup pot over medium heat. Once hot, add whites of the green onion, garlic and ginger and cook for 2 minutes. Add soy sauce, rice vinegar, a pinch of sugar, and broth. Bring to a boil, reduce heat and simmer for a few minutes. Season with a little white or black pepper, to taste. Taste and add, salt, only if needed.

Cook dumplings in a separate pot of hot boiling water until they float. Drain.

Add bok choy and half of the chopped green onion to hot broth and cook for 2 minutes, until wilted.

Serve: Place about 8 mini dumplings in each serving bowl. Ladle 2 cups soup into each bowl, over the dumplings. Garnish with cilantro, green onion and a small scoop of chili crisp on top.

Last night I made this delicious dumpling soup. The flavors tasted so fresh.  The bok choy absorbed the flavor a bit but in a good way-like a burst of more flavor. I used the frozen mini pork and vegetable dumplings and served with edamame. The chili oil took it to the next level. My family loved it and said it was like eating soup from a restaurant. In a large bowl, combine the pork mince, spring onion, garlic, pepper, Shaoxing wine and soy sauce. Mix well until everything is evenly combined.

Step 2

Shape the mixture into small bite-sized meatballs, about the size of a golf ball.

Step 3

Lightly coat each meatball in potato starch, then dip it into cold water and coat again with potato starch. This creates a delicate outer layer that mimics a dumpling wrapper.

Step 4

Place a large pot over medium-high heat and bring the chicken stock to a boil.

Step 5

Carefully drop the coated meatballs into the boiling broth.

Step 6

Allow the dumplings to cook for 5-6 minutes or until they are cooked through and floating to the surface.

Step 7

Add the bok choy and cook for another 1-2 minutes or until just tender but still vibrant.

Step 8
