Vegetarian fajitas

can black beans,drained

coriander,finely

flour tortillas

½ tsp chilli powder

½ tsp smoked paprika

½ tsp ground cumin

lime,juiced

To make the fajita mix, take two or three strips from each colour of pepper and finely chop them. Set aside. Heat the oil in a <a href="https://www.bbcgoodfood.com/content/top-five-non-stick-frying-pans">frying pan</a> and fry the remaining pepper strips and the onion until soft and starting to brown at the edges. Cool slightly and mix in the chopped raw peppers. Add the garlic and cook for 1 min, then add the spices and stir. Cook for a couple of mins more until the spices become aromatic, then add half the lime juice and season. Transfer to a dish, leaving any juices behind, and keep warm.

Tip the black beans into the same pan, then add the remaining lime juice and plenty of seasoning. Stir the beans around the pan to warm them through and help them absorb any flavours of the fajita mix, then stir through the coriander.

Warm the tortillas in a <a href="https://www.bbcgoodfood.com/review/best-microwaves-test">microwave</a> or in a low oven, then wrap them so they don’t dry out. Serve the tortillas with the fajita mix, beans, avocado and soured cream for everyone to help themselves.

seitan (12 ounces, sliced)

baby bella mushrooms (sliced)

Cook the quinoa according to package directions and mix in 2 teaspoons maple syrup and lime: see here how to cook quinoa

While the quinoa is cooking, heat the olive oil in a large pan over medium high heat.

Add the minced garlic and sauté until fragrant. Add in the sliced bell peppers, the seitan slices, mushrooms and tomatoes. Stir together and add all the seasonings and stir in. Reduce heat to medium and allow all the ingredients to cook until softened, for about 15 minutes. Add in the black beans to heat through and mix in with the rest of the ingredients. Add salt and pepper to taste and add more seasonings if desired.

Remove from heat.

Per bowl, add ½ cup quinoa, ¼ cup lettuce and split the rest of the ingredients into 4 equal bowls in desired quantities. Serve with lime wedges on the side and enjoy!

One Pan Baked Fajitas Recipe

chicken tenders

taco seasoning

salsa

red bell pepper (sliced)

yellow bell pepper (sliced)

onion (sliced)

Preheat the oven to 375 degrees.

In a greased 9x13 pan, lay your chicken in an even layer across the bottom.

Sprinkle chicken with 1/2 package of taco seasoning. Pour salsa on top of chicken and seasoning and spread into an even layer.

Layer vegetables over chicken and salsa and sprinkle with remaining taco seasoning. Drizzle the entire dish with olive oil.

Bake for 40 minutes or until your chicken has reached 165 degrees.

Slice chicken into strips and serve on tortillas with cheese and your favorite taco seasonings.

Sheet Pan Fajitas Recipe (For a Crowd!)

chicken

1-ounce packets Old El Paso™ Fajita seasoning

vegetable oil

sour cream (guacamole, cilantro, lime wedges, etc.)

Preheat your oven to 425° Fahrenheit. Divide the chicken, bell peppers, and onions between two rimmed half-sheet pans.

In a small bowl, whisk together the fajita seasoning and vegetable oil. Drizzle half of the mixture over each of the sheet pans. Toss the chicken and vegetables until well coated in seasoning.

Place both sheet pans in the preheated oven. Roast for 10 minutes.

Turn on the oven’s broiler. Broil the fajitas, checking and stirring every 60-90 seconds, until charred to your liking (about 3-5 minutes total).

Serve with flour tortillas and choice of toppings.
