red chilli, finely diced (de-seed if you don’t

coriander

skinless fillets of firm white fish,

tsp cumin

paprika

tsp sea salt flakes

garlic clove,

olive oil

corn tortillas

avocados

lime, juice only,

I am a broad church: when I’m not craving a bowl of food that delivers the same soothing taste from mouthful to mouthful, I like the sort of meal that involves a table full of bits and pieces. These fish tacos are a case in point, and rest assured that the actual preparation is much more low-effort than you might think.

This fuss-free and thrifty pesto salmon tart is a doddle to prepare and uses ingredients from the freezer. Defrost the fish and pastry overnight for a speedy after-work supper.

Each serving provides 752kcal, 33g protein, 55g carbohydrate (of which 3g sugars), 43g fat (of which 14g saturates), 3.5g fibre and 1g salt.


Pesto and salmon parcels

pack frozen ready-rolled puff pastry

x 125 grams/4½oz frozen skinless salmon fillets

flour,

tbsp sun-dried-tomato pesto (from a jar)

tsp full-fat or semi-skimmed milk

lemon juice

black pepper

basil

400 grams/14 ounces frozen cooked rice

200 grams/7 ounces frozen mixed vegetables

This blackened fish recipe uses sea bream but fillets of any firm white fish, such as catfish or monkfish, would also work well. Delicious served with <a href="http://www.bbc.co.uk/food/recipes/dirty_corn_85450">dirty corn.</a>
