The Easiest Greek Grilled Chicken is ideal for summer BBQs. Loaded with oregano and brightened up with lemon juice this family-friendly dinner is going to be your summer's best friend.

Easiest Greek Grilled Chicken

chicken breasts, prepared

olive oil

tbsp red wine vinegar

lemon

garlic

tsp smoked paprika

oregano

tsp fresh cracked pepper

tsp sea salt

In a large bowl, add the olive oil, vinegar, lemon juice, zest, garlic, paprika, oregano, and salt. Mix everything together.

Marinate

Add the chicken to the bowl of marinade. Cover the bowl of chicken with plastic wrap. Set in the refrigerator and allow to marinate for at least 30 minutes, but it&#8217;s best to marinate 1 hour up to 6 hours.

Heat your BBQ

Whether you use a grill or grill pan, oil the grills well while the grill is still cold. For the BBQ, preheat to 400ºC before adding the chicken. As for the grill pan pre-heat to a Medium-High.

Cook

Place the chicken on the grill and cook for 5-7 minutes on each side. Your chicken is fully cooked once the internal temperature 165ºC.

Rest

Allow the chicken to rest for 5 minutes before cutting. This allows the chicken&#8217;s juices to redistribute.

Serve!

Slice chicken into thin pieces.

Combine all ingredients except 1 tsp oil in large reclosable plastic bag.  Place bag in refrigerator and allow to marinate at least 30 minutes and up to 1 day.

Heat 1 tsp oil in skillet or pan and cook chicken until all sides are golden brown and internal temperature reads 165 degrees (approx. 7-10 minutes). (Discard marinade)

Store any leftovers in refrigerator or freezer.

Tzatziki Sauce

cauliflower rice or lettuce

Prepare Tzatziki Sauce

Prepare the Tzatziki sauce ahead of time and chill it in the refrigerator to allow the flavors to meld while you prepare the chicken.

Make the Marinade

In a mixing cup, whisk together olive oil, red wine vinegar, grated garlic, dijon mustard, dried oregano, dried dill, salt, and black pepper until well combined.

Marinate the Chicken

Pour the marinade into a food storage bag with the chicken breasts, seal tightly, and refrigerate for 1 hour to infuse the chicken with flavor.

Cook the Chicken

Heat a large skillet over medium heat, add the marinated chicken, and cook for several minutes on each side until the internal temperature reaches at least 165°F (74°C).

Prep the Veggies

While the chicken cooks, chop and prepare the cherry tomatoes, cucumber, red onion, and any other desired veggies.

Rest and Slice Chicken

Remove the cooked chicken from the skillet and let it rest for a few minutes before slicing it thinly.

Assemble the Bowl

In serving bowls, add a base of cauliflower rice or lettuce, arrange sliced chicken, cherry tomatoes, and pepperoncini in sections.

Add Remaining Toppings

Add cucumber, Kalamata olives, red onion, and crumbled feta cheese in separate sections, then finish with a dollop of chilled Tzatziki sauce in the center and serve immediately.
