Lamb sausages rissoles with Greek risoni salad recipe

(1kg) thick good-quality lamb sausages,

black pitted olives, chopped

oregano

(200 grams) feta, crumbled

preserved vine leaves, rinsed, drained

risoni

garlic clove, peeled

lemon

tbs extra virgin olive oil,

cherry tomatoes, quartered

red onion,

Lebanese cucumber, halved lengthways, thickly sliced

chargrilled capsicum, chopped

Traditional Greek Salad with Red Wine Vinegar and Oregano Salad Dressing Vinaigrette! Packed with Feta, Tomatoes, Peppers and Onions, so easy and delicious!

Greek Salad Dressing Recipe

Medium Tomatoes (chopped)

Long English Cucumber (chopped)

Red Pepper (chopped)

Green Pepper (chopped)

Kalamata Olives

½ Red Onion (chopped)

Greek Feta (cubed)

Olive Oil

Red Wine Vinegar

Salt

Whisk the Olive Oil, Red Wine Vinegar, Salt and Oregano and set aside for the flavours to meld together. Set aside.

Place the Tomatoes, Cucumber, Red Pepper, Onions, in a large bowl. Mix together. Top with feta. Drizzle with the Greek Salad Dressing and serve

Greek Salad

romaine lettuce

cherry tomatoes, halved

green bell pepper

kalamata olives

marinated artichokes, havled

English cucumbers

red onion

oz feta cheese, crumbled

salt

black pepper

olive oil

red wine vinegar

lemon juice

garlic

Add all of the ingredients to a large mixing bowl.

If you are making the Greek dressing, add all of the ingredients to a food processor or blender and pulse or blend until well combined.

If you are using the Greek dressing, drizzle a little of the dressing over all of the salad ingredients. Use a large mixing spoon or salad tongs to toss the salad until well combined. Add more dressing to the salad if needed or if you are not using a dressing, add more salt, pepper, and oregano to taste.

Made this salad for dinner and my meal prep lunch for the week, super easy and delicious!

I never think to make salads, but I saw this and I’m so glad I did- its so easy to pull together but so good- and I love the light dressing! We added some chicken tenderloins marinated with oregano- this recipe will definitely be a keeper, but everything I make of yours is!

The Perfect Greek Salad

romaine lettuce, chopped

grape tomatoes (or cherry tomatoes)

red onion, chopped (roughly 1 small red onion)

green pepper, chopped

whole Kalamata olives

feta cheese, crumbled

extra virgin olive oil

sea salt

black pepper (or more to taste)

In a large bowl, combine the romaine lettuce, cherry tomatoes, red onion, cucumber, olives and feta cheese.

In a small bowl, make the lemon Greek salad dressing by whisking together the olive oil, lemon juice, oregano, salt and pepper.

Pour dressing over the salad and toss to combine. Add more black pepper to taste.

This recipe is so easy to follow and turned out amazing! It tasted like a salad I would have been served at a Greek restaurant.

There's a good recipe in here trying to get out, but there is too much red onion in proportion to the other ingredients; pepper is overkill when there is that much red onion; there is no need for salt because the olives and feta are already salty enough; and there is no need to dirty a second bowl whisking together the dressing when you can just pour the individual ingredients over the vegetables and then toss. Maybe it depends on what kind of kalamata olives you have, but we found whole olives too strong, and I'd cut them at least in two in the future before serving.
