Keto Chocolate Chip Cookie for One

almond flour

coconut flour

monk fruit

unsalted butter, softened

vanilla

salt

keto approved chocolate chips

In a small bowl, add all the ingredients listed above. Mix together using a fork until combined.

Mold into 1 or 2 cookies. Place in the refrigerator for 5-10 minutes to allow the flavors to meld together and to keep the cookie from spreading while baking.

Place cookie on a parchment lined baking tray and bake at a 350 degrees for 6 minutes or until the edges start to brown. Remove from oven and let cool completely before handling.

Place cookie on a piece of parchment paper and microwave at 100% or high for 45 seconds. Let cookie cool completely before handling.

Place cookie on the pre-greased air fryer grilling tray. Bake at 350-360 degrees for 6 minutes. Let cookie cool completely before handling.

How to make Keto Chocolate Chip Cookie for One.

Keto Snowball Christmas cookies are the melt in your mouth cookie you look forward to each year.  Made with almond flour, this cookie is keto friendly, low-carb, sugar-fee, and gluten-free.

Keto Snowball Christmas Cookies

almond meal/flour

butter (softened)

powdered sweetener (or more, to your taste)

tsp vanilla extract

pecans

cinnamon

½ tsp baking powder

sweetener

Cream

Preheat your oven to 165°C/325°F. While the oven is preheating mix your softened butter and powdered sweetener together in a bowl until it is creamy and smooth.

Next, mix in the rest of your ingredients for your dough. Your dough should be thick, slightly crumbly, and able to hold its shape when rolled or scooped into a ball. Form your dough into 24 1-inch balls and arrange them on a baking tray.

Bake

Bake your cookies on the middle rack in your oven for 15-18 minutes or until your cookies no longer look wet and are firm to the touch.

Cool

Remove the cookies from the oven and roll in powdered sweetener while still hot. Let the cookies cool and then roll in powdered sweetener once more or sift sweetener over the top of the cookies. Enjoy!
