Minestrone Soup (Copycat Olive Garden Minestone)

Drizzle olive oil in the bottom of a large dutch oven or deep stock pot.

Add diced onions, chopped celery, carrots and both types of zucchini to the pot and heat everything up on the stove top over medium high heat. Mix everything together and allow it all to cook.

When the veggies have softened, add garlic, a scoop of tomato paste, salt, pepper, Italian seasoning, crushed tomatoes, cannellini beans, black beans, and pasta.

Add a bay leaf then pour the broth into the pot.

Mix everything together. Bring the contents of the pot up to a boil and then down to a simmer. Cook everything together until the pasta reaches al dente.

Remove the bay leaf and the soup is ready to serve! Try serving it with homemade croutons, fresh parsley, and some crushed red pepper.

Made with small pasta and loads of veggies in a tomato broth base, this easy vegetarian minestrone soup is a satisfying, filling dinner!

Dutch oven bread (,

Warm the olive oil in a large dutch oven pot over medium heat. Once hot, add the onion, carrot, and celery; sauté, stirring occasionally, until the onion turns soft and translucent, about 3-5 minutes. Add the garlic and cook, stirring constantly, until fragrant, about 20 seconds.

Add the potatoes and zucchini; mix everything together.

Add the tomato paste, thyme, and oregano; mix together.

Add the vegetable broth, diced tomatoes (with their juice), water, bay leaves, salt, and pepper; stir to combine. Bring to a boil, then reduce the heat to a very light simmer for 15 minutes.

Stir in the pasta, kidney beans, and kale. Bring to a gentle bubble and simmer for about 15 minutes until the pasta is cooked, but not mushy.

Add the butter and mix until melted.

Serve immediately with fresh chopped parsley, freshly grated parmesan, and some rustic bread to mop up the broth!

I made this exactly according to recipe and loved the flavor. I found it took longer to prepare than 20 minutes. Also, for me I think one cup of the pasta is too much. But that is just my preference. I will make again.

30 Minute Minestrone Soup with Sausage

14.5 ounce can diced roasted tomatoes

chicken stock (prefer low sodium)

kidney beans (drained and rinsed)

elbow pasta (or any small pasta)

pepper

Heat large dutch oven or soup pot to medium high.

Add sausage to pot. &nbsp;Cook and crumble sausage. &nbsp;Drain all but 1 tablespoon of fat. (if using lean chicken sausage omit this step.)

Add onion, carrots, celery, garlic and parsley to  sausage and cook until veggies are just tender.

Reduce heat to medium. Add tomato paste, crushed tomatoes and diced tomatoes.  Cook for 2-3 minutes.Add italian herbs.

Add chicken stock, beans, pasta, salt and pepper and bring to a simmer. &nbsp;&nbsp;

Cook for 10 minutes or until pasta is al dente. &nbsp;Taste for seasoning. &nbsp;Serve with fresh parmesan cheese and bread!
