Linguine in Shiitake Wine Sauce! You can't believe this pasta is vegan, super creamy with a trick to making glossy, delicious pasta.

Linguine with Shiitake Mushroom Wine Sauce

olive oil

garlic cloves,

shiitake, chopped (or a combination of mushrooms)

salt

pepper

red pepper flakes

dry white wine

linguine

vegan butter

Italian parsley

Heat the olive oil in a large skillet over medium heat. Add the garlic and cook until just browned, about 30 seconds-1 minute.

Add the mushrooms and cook until browned and all water has evaporated, about 10-15 minutes. Stir often, making sure mushrooms don&#8217;t stick to the bottom of the pan. Stir in the salt, pepper and red pepper flakes once browned.

Once the mushrooms are browned, add in the wine and scrape the pan, getting up any browned bits of mushrooms. Simmer until most of the wine has been absorbed.

While the mushrooms are cooking, bring a large pot of salted water to a boil. Add the linguine and cook for a little more than 1/2 of the recommended time on the package.

Add the very al dente linguine to the skillet along with 2 ladles of pasta water (not regular water, pasta water has starches that allow the sauce to cling). Increase the heat to medium-high and continually toss the noodles with the sauce. Once the water is absorbed, add more water, 1 ladle at a time, until pasta is al dente and cooked through.

Remove from heat and stir in the butter and parsley. Toss again and serve.

Made this tonight after finding some Shitake mushrooms at our Farmer's Market. I didn't have any dry white wine so used white wine vinegar, substituted whole wheat linguine (Delallo Organic, made in Italy) and real butter. I can't believe how perfect it came out! Seriously, this is the best whole grain pasta I've made without adding either lot os cheese and cream, or red pasta sauce. The delicate flavors all came from just the mushroom saute. What I loved most is the method of cooking the pasta. That is the biggest takeaway for me, and a real game changer! Thanks so much!

Linguine with Shiitake Wine Sauce

Creamy mushroom pasta is packed with buttery garlicky mushrooms swimming in a delicious creamy Parmesan sauce. Quick and easy make in 20 minutes.

Creamy Mushroom Pasta

dry pasta, spaghetti, fettuccine, or linguine

+ 1/2 lb. brown mushrooms, halved

black pepper

butter

garlic,

all-purpose flour

heavy cream (or half and half cream)

Parmesan cheese, grated

cup fresh parsley, finely chopped

Bring a large pot of salted water to a boil over medium-high heat. Add pasta and cook until al dente (fully cooked but still firm), or according to package directions, about 10 minutes. Drain well and set aside in the pot. Drizzle a little olive oil and toss together to keep the pasta from sticking together.

In a large skillet, heat olive oil over medium-high heat for 2 minutes until the hot oil sizzles. Add mushrooms and season with salt and pepper. Sauté for 5-7 minutes until nicely browned on all sides.

Add butter, garlic and flour. Stir well for 1 minute until fragrant and well-combined

Add heavy cream, parsley and Parmesan cheese, and parsley. Stir well and bring the sauce to a simmer. Reduce heat to medium and keep stirring until thickened to a desired consistency.

Add cooked spaghetti into creamy mushroom sauce and toss well to combine. Sprinkle with extra Parmesan and fresh parsley on top, and serve immediately.

Mushrooms in a creamy balsamic sauce tossed with fettuccine pasta. It's easy to make and so delicious!

Balsamic Mushroom Pasta

fettuccine pasta

butter, divided

shallot, finely diced

baby portabello mushrooms, sliced

balsamic vinegar

heavy cream

fresh parsley, chopped

Cook the fettuccine according to the directions on the package.

While the pasta is cooking prepare the mushroom sauce. In a large pan, melt 1 tablespoon of butter with 1 tablespoon of olive oil over medium heat. Once melted, add the shallots and garlic and cook for a few minutes or so, just until softened. Add the sliced mushrooms and toss them around to get them coated in the butter and olive oil. If needed, add an additional tablespoon of olive oil if the mushrooms get too dry. Let them cook and brown for about 8 minutes.

Pour the balsamic vinegar into the pan and stir everything together making sure to scrape up all of the browned bits on the bottom of the pan. Add the other tablespoon of butter. Cook everything together for a couple of minutes and then turn off the heat and move the pan off the burner. Pour in the cream and parmesan cheese and stir to combine. Add the cooked fettuccine to the sauce and toss to combine. Add the fresh parsley and season with salt and pepper.

Serve with additional parmesan cheese sprinkled over the top.

This has been my most successful Pinterest recipe, hands down. It’s insanely easy, yet tastes like it’s restaurant quality. All of the flavors work together so well. I could not be happier to have this pasta recipe in my arsenal!

made vegan option of this today.. swap heavy cream for coconut milk, added broccoli, sweet peppers and nutritional yeast and tossed in fresh cilantro. was tempted to add other seasoning but didn't and it was very tasty! definitely a keeper! thank you

This is a 10 very OMG good thanks for sharing.  I did add some of my own spices and sprinkled on a lil oatmeal flour before adding the vinegar. Delish!

OMG this is delicious!  Husband and I both loved it, it's definitely a keeper, and the quantity is just right for 2 persons.  Going to double it to make it for friends.  (I did add 1/8 tsp crushed red pepper, just for kicks).  Other than that, just as given.
