Loaded with pears, perfectly sweet and melt in the mouth - this Super Moist Pear Cake recipe is divine! Easy to make and it looks gorgeous, perfect for dessert or afternoon treat!

Super Moist Pear Cake

cake or all purpose flour (sifted)

sugar (fine granulated white sugar)

butter (soft, unsalted)

canola oil (or vegetable oil)

tsps. baking powder

tbsps. vanilla extract

eggs

milk

pears

salt

lemon

tbsps. confectioner suger (for dusting after baking)

brown sugar (or less as desired)

cinnamon

Preheat oven to 350 F.

Peel and slice the Pears.

In an electric mixer bowl, whip up the sugar and butter until well combined for about 1 minute.

Add in the vanilla, lemon zest and eggs. Continue mixing on high speed for 1-2 minutes until they are well combined.

Add in the baking powder, sifted flour and a pinch of salt. Mix again for about 1 minute.  Gradually add ½ cup of milk and ⅓ cup oil while mixing on low speed. Mix for another minute or two on low speed.

Line the bottom of the pan with parchment paper and grease or spray a round spring foam baking pan then pour the batter in. Ideally, a 10 x 3 inch deep pan is the best size.

After placing the batter in your pan, spread a layer of the sliced pears to cover the whole batter. Sprinkle some cinnamon and the brown sugar on top of the pears.

Bake in a pre-heated 350  F oven for 40 minutes then lay over an aluminum foil wrap on top to cover the cake and bake for another 10-15 minutes depending on your oven. Insert a wooden skewer to make sure it&#39;s completely clean before removing the cake. It may take less or a bit more time depending on your oven.

Remove the cake from the oven and cover with a kitchen towel to let it cool down. It may take up to 1 hour to completely cool down. Dust with some confectioner sugar right before serving.

An easy Pear Cake recipe filled with juicy pears. 

Pear Cake recipe

(1/2 cup or 1 stick) unsalted butter, room temperature

(3/4 cup) caster sugar or granulated sugar

eggs, room temperature

vanilla extract

(1 and 1/4 cups) plain flour or all purpose flour

(3/4 cup) almond meal almonds

baking powder

120 ml (1/2 cup) full fat or whole milk

(1 tablespoon) unsalted butter, melted

(1 tablespoon) caster sugar or granulated sugar

Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Grease and line an 8-inch round cake pan with baking or parchment paper on the bottom and the sides of the pan.

In a large mixing bowl, beat butter and sugar with an electric mixer on medium speed until pale and creamy, approximately 1-2 minutes.

Add eggs and vanilla and beat briefly to combine. 

Add flour, almond meal, baking powder and salt, along with the milk. Gently mix together on a low speed, just until cake batter is smooth and creamy.

In a separate bowl, toss chopped pears in cinnamon. Add pears to cake batter and gently stir. Transfer batter to prepared pan and smooth the top using a spatula. 

In a separate small bowl, combine melted butter, sugar and cinnamon. Drizzle over the top of the cake batter. Use a butter knife to gently swirl mixture into the cake batter. 

Bake for approximately 40-45 minutes or until a skewer inserted into the middle of the cake comes out clean.

Leave cake to cool for 10 minutes before carefully transferring to a wire rack to cool completely.

The cake turned out wonderfully soft and delicious. The family finished most of it off while it was still warm from the oven. Will certainly be making again.

This was so delicious! Such an easy and beautiful tea cake. The combination of pears and cinnamon swirl took it to the next level.

This was exactly what I wanted.  Every pear cake recipe seemed to be a Bundt cake, which I didn't want.  This was a simple 8 inch round.  It smelled amazing while cooking so I couldn't wait until it was finished.  It did not disappoint.  The cake was soft and tasty and the chunks of pears were perfect.  The cinnamon butter topping came out crispy and delicious.  I will make this again and again.

PS - I make this with Gluten Free Flour and Almond Flour.  It still came out perfectly.

My 3 year old son loves baking with me and this morning he woke up and decided we should make a Pear cake. I've never had one before or thought of Pear in cake but I found your recipe and we made it. 
As per other comments,  it is so delicious. The three of us have eaten a third of the cake already when it was warm out of the oven!

Definition of comfort food! Such a pleasure to bake (and eat!) this cake! Pantry/baking staples, easy to follow instructions and a warm, delicious treat = happy baker!

My family doesn't do cinnamon, so I switched with some stem ginger syrup over the top.  Next time I will chop up the ginger and sprinkle over before baking as well.  This is a next level base cake!  Thank you very much for sharing!

An easy pear cake made with olive oil, lemon zest and nutmeg, with ripe Red Anjou or Bosc pears baked right into the top.

Easy Pear Cake

+ 1 tbsp granulated sugar (divided)

extra-virgin olive oil canola oil

nutmeg

all-purpose flour

tsp baking powder

vanilla ice cream (to serve (optional))

Preheat the oven to 350°F (180°C). Butter a 9-inch (23 cm) round cake pan.

In a medium bowl, whisk together ¾ cup of the sugar and the olive oil. Add the eggs, one at a time, beating well with a rubber spatula after each addition. Add the lemon zest, salt and nutmeg. Stir to combine. Sift in the flour and baking powder. Stir until just combined

Transfer the batter to the prepared pan. Use a spatula to spread it in an even layer. Place the pears, cut side up, in the batter, but don’t press them in more than about ½ inch, as the batter will rise as it bakes. Sprinkle the remaining 1 tbsp of sugar on top. Bake for 30 to 32 minutes, until golden brown and a toothpick inserted into the centre comes out clean. Let cool in the pan for a few minutes before serving.

Cut the cake into squares and serve with a scoop of vanilla ice cream, if desired. Store leftovers in an airtight container in the fridge for up to 4 days.
