My adult son going this recipe and asked me to make it. He helped. The first time we made it I didn't have fresh thyme or garlic. This time we did. Wow! What a difference! This has to be the best potato soup I ever ate! He added salt after it was finished. I'm actually glad it didn't call for salt because we like to add for our own taste. Also adding bacon and cheese to the serving ads salt. I can't eat it, I'm keto, very low carb not he had me try a spoonful. OMG! Delish!

I followed the recipe and got a pot full of broth with diced potatoes floating in it. Here’s how I fixed that: I poured everything into my food processor and blended it all smooth, then doubled the corn starch and blended it some more. Poured it back in the instant pot and pressure cooked it five more minutes.

Made the potato soup tonight turned out EXCELLENT but i had no idea when pressure cooking your potatoes you will not have  same amount of potatoes that you started with turned out very very delicious  i did add a cup or cup and a half of sour cream to my recipe  and turned out really good so i peeled about 6 or 8 potatoes  that i had left 
(Some very small Yukon golds ) and threw them in a pot on the stove and added to the soup we had left next time i will make a lot more potatoes or can anyone tell me what i can do differently next ? Thanks !!

Used regular broth instead of low sodium. This was a huge hit! Everyone went back for seconds and there was nothing left! Will definitely make again.

Mmmm Yes! I of course added some things on my own and put the bacon inside, instead of on top, I also added a bit more than healthy amount of cheddar in the soup as well.😂 But omg so good!

Made it tonight.  The things I changed were I diced up the bacon and cooked it in the pot first.  I removed the bacon, drained the grease out of the pot and then added the butter and onions.  I made sure to scrape up all of the good bacon bits left behind.  After the milk mixture was added and it had boiled for 5 minutes, I added about a cup of shredded extra sharp cheese to the pot. I used unsalted chicken broth so I added some salt and pepper at the end.   Yummm.  Very good.

I generally cook low sodium. Like being addicted to anything (salt, sugar) when you eat less you can REALLY taste the salt in food. I have a hard time eating soup in restaurants because it’s so salty but the average person puts salt on top of salty food. I thought this soup was great. I added a small amount of salt and pepper and between that and the bacon and fresh herbs it tastes great. You can’t please salt addicts unless they’re eating 1800mg in a serving. This recipe is terrible, as is. The only flavour comes from the bacon And cheese added on top When you serve it!

Tasty. I'll agree, you do need to season. I put around a teaspoon of salt and half a teaspoon of pepper while cooking onions. Added a little more pepper and some celery salt after it was done. Makes more like six servings.

Made this soup last night for dinner.  Did not change a thing and thought it was very good.  For the two of us we have 4 meals.  Used my french fry cutter then diced those to make the potatoes 1/2" cubes.  Went very fast during prep and had plenty of potato cubes in the finished soup.  Added very small amount of sea salt at the end.  Sprinkled ground pepper on top when serving.  I will add a small amount of celery salt as others suggested next time to see how it flavors the soup.  Put the remainder in pint jars and froze them for future meals.  I thought it was a really good soup.  I don't have an Instant pot but used my Cuisinart Pressure cooker.  Good recipe, will keep.

I made this tonight with a few modifications.  It was fabulous.

This simple potato soup with chicken broth recipe is one of the best comfort food recipes we’ve made so far. It has a satisfying savory taste from bacon and cheese and a creamy texture. And yet, it is still healthy.

Simple Potato Soup with Chicken Broth Recipe

unsalted butter

olive oil

oz yellow onions (chopped)

oz carrots (chopped)

oz celery (chopped)

garlic

potatoes

all-purpose flour

unsalted chicken broth

tsp salt

tsp black pepper

0.5 oz spring onions (chopped)

0.25 oz oven-cooked bacon (chopped)

oz cheddar cheese (shredded)

Heat a pot over high heat. Add olive oil, butter, onions, carrots, and celery. Cook for 2 minutes or until translucent, stirring constantly. Add minced garlic and potatoes; continue to cook for another 2 minutes.

Add all-purpose flour to the pot and mix it in with other ingredients. Add chicken broth, salt, and pepper. Bring to a boil, then reduce the heat to medium-low and cook uncovered for 20 minutes or until the potatoes are fully cooked. Add milk and stir to mix. Turn off the heat.

Using a potato masher or a hand blender, mash or blend potatoes and vegetables to make the soup thicker to your liking. (This step is optional.)

To serve: ladle the soup in a bowl or a deep dish, garnish with chopped spring onions, bacon, and shredded cheddar cheese.

This delicious luscious soup is full of hearty, wholesome goodness.  It combines ham, potatoes, onions, carrots, and celery in a creamy, lightly seasoned broth.

Creamy Ham and Potato Soup Recipe

In a large stockpot, heat oil over medium heat. Add onion, celery, carrot, red potatoes, and deli ham. Sauté until the onions and ham start to crisp on the edges; approximately 5-7 minutes. Add the garlic, onion powder, and parsley; cook for 1 minute. 

Stir in the low-sodium chicken broth. Bring the mixture to a boil. Reduce and simmer until the potatoes are tender, approximately 15 minutes.

In a skillet, melt butter and whisk in flour. Whisk over low heat for 3-4 minutes. Slowly whisk in the milk to make it creamy and remove any lumps. When thoroughly mixed and thickened, slowly whisk or stir into soup. Simmer until warm and season with salt and pepper to taste.

There's always room for a good bowl of soup on the table. I love the creaminess in this soup and how hearty it is to fill the hungriest family member. I think I'll warm up with this tonight!

This cozy loaded potato soup recipe has all the flavour of a loaded baked potato in the form of an easy, creamy soup. It&#039;s always a hit!

Vegan Loaded Potato Soup

vegan butter

smoked paprika

½ potatoes (roughly 611 grams)

veggie broth

Silk Almondmilk

sea salt

vegan greek (almond or coconut yogurt)

vegan cheese (optional, but good)

top with coconut bacon recipe here

gluten free flour

In a large stock pot over medium high heat, add in the 2 tablespoons of vegan butter. Add in the onion and garlic and sauté for about 3 minutes, together. Add in the smoked paprika, then the potatoes, veggie broth, Silk Almondmilk, sea salt and ground black pepper. Bring to a boil, then reduce to a simmer for about 20 minutes, until the potatoes are cooked through.

In a separate small pan over medium high heat, add the vegan butter. Allow to melt and then, tablespoon by tablespoon, add the flour to whisk in. Reduce heat to medium heat. Whisk it thoroughly for about 5 minutes while the soup is simmering, until all lumps or flour bubbles are completely removed and it is a thick and completely smooth mixture. Remove from the heat.

Roux

Add the roux into the soup and stir immediately to combine. Also add in the vegan greek, almond or coconut yogurt to combine and stir in. If you're adding the extra vegan cheese, you can stir it in now.

Allow the soup to simmer for another 5 minutes to combine everything and then remove from heat.

Using an immersion blender, blend the soup together until nice and creamy and smooth.

Top with coconut bacon recipe here, vegan yogurt (or cashew cream), scallions and some extra vegan cheese. Enjoy!

Vegan Potato Soup with Kale

unsweetened, plain non-dairy milk (or to taste, optional)

Heat the oil over medium heat in a soup pot on the stove. Sauté the onion, celery, and carrot until the onion is soft and translucent, about 4 to 5 minutes.

Add the garlic, dill, celery salt, salt and pepper and sauté 1 to 2 minutes until fragrant.

Add the potatoes and broth and stir to combine. Increase the heat to high to bring to a boil, then reduce the heat to low and simmer for 15 minutes, or until the potatoes are fork tender.

Using an immersion blender, puree about 1/3 - 1/2 of the soup to create a thick creamy base. (Alternatively, take about 2-3 cups of the soup and purée it in a blender and then return it to the soup pot).

Add the corn and chopped kale, stir to combine, and simmer 5 more minutes to heat through and soften the kale.

Take off heat and add the non-dairy milk, if using.

Serve with a few dashes of sriracha or hot sauce if desired.

Love this recipe!  It was easy to make and full of flavor.

We’ve been vegan for about a year now and I had a non-vegan potato soup that we just loved! And as I usually do with new recipes, I made according to the recipe. I wasn’t feeling the celery salt and dill when I read the recipe- - but let me tell you, I’m glad I added it! 
I like to use my immersion blender but I tend to over blend soups if I do it in the pot. I took a big 4 cup measuring cup and puréed 2 cups of the soup very well with my immersion blender and it made such a nice thick addition. This recipe is definitely a keeper!

To start I cooked a few slices of bacon in the dutch oven. Then I followed the recipe to the letter and then crumbled the bacon on top when I served it. It was a great addition of flavor for my meat loving, dairy/gluten free family of four!

Creamy Potato Soup

This delicious healthy recipe for Potato Leek Soup is deceiving flavorful! A nourishing, soul-satisfying meal made with the humblest of ingredients. Serve with optional Leek oil and Crusty Bread.

Potato Leek Soup

3-4 large leeks, (4-5 cups sliced)

olive oil (or sub butter

garlic, rough chopped

fresh thyme (or 1 tsp dry thyme)

veggie broth or chicken stock

teaspoons salt,

cracked pepper

sour cream

chives

Slice leeks into ¼-inch thick slices. Rinse under running water to remove dirt and sediment. Drain. ( The water will help soften the leeks as well.)

Heat oil in a heavy-bottom pot or dutch oven, over medium-low heat. Add rinsed leeks and garlic and thyme, sauté until tender, golden and fragrant, 8-10 minutes.

Add potatoes, stock, salt, and pepper. Bring to a boil, cover, turn heat to low and simmer, covered,  for 15-20 minutes, until potatoes are fork-tender.

Blend the soup

 When the potatoes are very tender, use an immersion blender and blend the soup until relatively smooth. TIP: Over blending may cause the soup to have a gummy texture.  Alternatively, blend in batches in a regular blender (remember, you don&#8217;t want to fill up a blender with hot liquid, or you will have a soup explosion- so blend in small batches, less than half full,  holding the lid down firmly covered with a kitchen towel. ) 

Return the blended soup to the pot, and whisk in the sour cream. Taste and adjust salt and pepper. Gently warm over low heat.

To serve, divide among bowls, drizzle with the leek oil, sprinkle with fresh chives or scallions.

My partner claims to hate leeks, so I told him was just potato soup and he said it was one of the best soups ever. I also really enjoyed it! I used rosemary instead of thyme but otherwise followed the recipe exactly, and it came out great!

I just made this and couldn't wait to have a cup. It's delicious and I'm sure will be even better tomorrow. I did not make any changes, and could have used more potatoes (only what I had)! The leek oil still needs straining, but I think that will be great too! Thank you!
