Gambas Pil Pil is a Spanish tapas dish. King prawns cooked in olive oil, featuring paprika, garlic, and chilli. The prawns are juicy, with a spicy flavour from the chilli and garlic oil. Easy and quick to cook, in a frying pan, then transferred into a hot earthenware tapas dish.These garlic and chilli prawns also make a fantastic starter. Serve with fresh bread to dip into the spicy oil.

Gambas Pil Pil - Garlic and Chilli Prawns

King Prawns (Raw peeled)

90 ml Olive Oil

Garlic

Chilli Pepper

Paprika

Salt and Black Pepper

Parsley

Prawns

Add the prawns and cook on one side for 2 minutes

Infuse

Add garlic, chilli and paprika stir in to the oil

Flip

Serving

Transfer to a warm tapas or serving dish, with the garlic and chilli oil.

In Morocco we have a similar but different recipe, it's called pil-pil shrimp tagine, I hope you'll try it :)

So juicy and flavorful. I also love the colors in this recipe it’s as if the eyes eat first with this one! So good, an unforgettable dish!

I tend to up the ingredients a little for our taste, but we can’t get enough of this pil pil! Fantastic! We also use the Spanish larger
Prawns (langoustines) as we live here in axarquia. I must say it
even beats most tapas bars too! Even our Spanish guest are 
impressed.

Grandson of 13 years loves this recipe which he had for the first time in Portugal earlier in the year. 2023.  He's developing his pallet towards the really flavoursome Portuguese menus. Great stuff.. Thank you for this great recipe. Will be cooking it with him next time he comes.

Just come back from Spain and had this dish on a daily basis. We are going to try your recipe tomorrow along with Patatas Bravas, Padron Peppers and Cream Cheese stuffed Pepper Dew peppers, not forgetting marinated anchovies. We will let you know if we enjoyed it as much as when we were in Spain

Prawns, passata, and a handful of ingredients are all you need to make this simple pasta recipe.

Saucy Prawn Pasta

Shell-On Prawn

Red Chilli

Red Wine

Passata

Spaghetti

Salt

Start by de-heading and peeling your prawns. Set the prawns aside.

Heat a splash of olive oil in a frying pan over a medium-high heat and add the prawn heads and shells. Cook for about 4 minutes until pink and fragrant.

Peel and add 2 of the cloves of garlic and sizzle for a minute, then pour in the wine and let it reduce for a few mins.

Add the tomato passata and cook for about 10 mins until thickened. While the sauce cooks, devein the prawns (if you want to).

Pour the sauce mix through a colander into a bowl or jug. Use a spoon to squeeze as much sauce through as possible. Drizzle a little water over the prawn shells to rinse everything through the colander.

Pour the sauce back into the pan, taste and season and continue to cook gently while you put your pasta on to boil in plenty of salted water.

Place a separate pan over a medium high heat and add a splash of olive oil. Add the prawns and fry for a couple of minutes. Slice and add the garlic and chilli and cook for another 2 mins.

Once al dente, drain your pasta and add to the prawns and toss well. Plate up and top with a handful of chopped parsley.
