Easy Salmon and Pea Risotto

In a large pan, saute the onions 2 tablespoons of olive until and two tablespoons of butter they are cooked and soft but not browned.

Add the garlic and cook for another minute.

Add all the rice and stir it around with the other ingredients to toast the grains thoroughly without browning.

Raise the heat to high, add the wine and reduce it until nearly all of the liquid is absorbed into the rice.

Stir in the stock, lemon zest, and lemon juice. reduce the heat, stir and leave to cook covered 15-18 until the rice is just undercooked (Checking after about 15 minutes to make sure no additional stock is needed. If the risotto looks dry, add some of the remaining stock).

While the rice cooks,&nbsp;Bring the stock for the salmon to a boil; Add the salmon fillets, reduce to a simmer, cover, and cook 5 minutes (until just underdone.&nbsp; It will finish cooking in the risotto).&nbsp; Once done, break up the salmon to your liking.

When the rice is just undercooked, add the peas, stir and cook until the rice is done.

Add the chopped parsley, the butter, and grated Parmesan cheese. Mix together.

Add the salmon and season to taste before serving.

Preheat oven to 180°C/350°F (all oven types).

Heat stock: Heat up the chicken stock until just before boiling using whatever method suits - stove or microwave.

Pour everything into casserole dish: Pour the stock into a small casserole pot ~24cm/10&quot; wide. Then add all the remaining Risotto ingredients - rice, butter, onion, garlic, pepper.

Bake 35 minutes: Cover with lid or foil, bake 35 minutes or until rice is just cooked - tender but not mushy. The risotto will still look liquidy - that&#039;s what you want to ensure risotto is creamy at the end!

Stir vigorously: Remove from oven, stir ta few times to break up rice. Add finishing butter and parmesan, then stir vigorously until the watery liquid becomes creamy, and mostly evaporates/gets absorbed.

Goal - oozy and creamy:The risotto should be oozy and creamy, not thick, gluey or stodgy. If it gets too thick, add 1 tbsp of boiling water at a time to loosen it up, stirring well after each addition.

Taste for salt: Taste for seasoning and adjust (I find it&#039;s just right).

Serve asap! Serve while hot and creamy, topped with more parmesan if desired!

Add lemon rind, juice and herbs, stir through gently just before serving.

1.2 litres/2 pints chicken stock

Heat the stock in a pan over a very low heat &ndash; have a ladle at the ready. Melt the butter and olive oil in a high-sided, non-stick frying pan. Add the onion and a large pinch of salt, then cook, stirring, for 5 mins until softened and fragrant but not colouring. Tip in the rice and coat in the oil and butter, cooking for a few mins until beginning to toast. Pour in the wine and cook, stirring, until it&rsquo;s absorbed. Add the saffron and begin to add the stock, a ladle at a time, stirring continually. Add more stock as it&rsquo;s absorbed. After 25-30 mins, all the stock should be absorbed and the rice should be creamy and al dente.

Add the Parmesan and stir until melted. Turn off the heat and stir in the egg yolk. Season and serve with a peppery rocket salad, if you like.

Asparagus Risotto -It's Easier Than You Think!

asparagus (cleaned, trimmed,

shallot

celery (fresh, minced)

garlic (fresh, minced)

arborio rice (uncooked)

white wine or chicken broth

butter (room temperature)

Place the broth in a medium saucepan and bring it to a boil.

Trim ends of asparagus and cut into 1-inch pieces. Add the asparagus into simmering broth and cook for about 3 minutes. With a strainer, transfer asparagus to a bowl; reduce heat under broth to obtain a low simmer. Keep warm throughout the time we are making the risotto.

Over medium heat, drizzle olive oil in another heavy-bottomed saucepan.

Sauté the shallot and celery for about 5-7 minutes until translucent. Stir frequently.

Add the minced garlic and sauté for another 30 seconds or so while stirring frequently.

Add the rice.

Keep stirring this rice mixture (frequently) for about 4- 5 minutes. The edges of the rice should begin to turn translucent and just beginning to turn a light golden brown.

Add the wine (or broth) and stir constantly until almost all absorbed. This should take 30-60 seconds.

Stir in a ladle of hot broth (about ½ cup) into the rice mixture.

Stir until the broth is absorbed.

Keep adding the broth (½ cup at a time) until it is absorbed, stirring every few minutes or so.

At the end of 16-20 minutes, start tasting your risotto. The texture should be al dente but still creamy.

When you achieve this texture, add one more ladle of broth. Add the cooked asparagus and stir until the broth is almost all absorbed.

Remove from heat and stir in the cheese and butter.

Add zested lemon peel and lemon juice (if using).

Serve immediately in warm bowls with additional Parmesan (if desired).

Asparagus Risotto

Classic mushroom and herb no stir risotto that can be prepared with minimal to zero stirring and hassle! A hearty vegetarian main course for weeknights or special occasions.

Easy No Stir Mushroom Risotto

chicken broth

(360 mL) water

(2 oz; 60 g) unsalted butter

kosher salt

garlic (finely minced)

(360 g) carnaroli rice (or arborio (see notes))

parmigiano-reggiano cheese (plus more for serving)

sautéed mushrooms and herbs (see recipe below)

black pepper

(30 mL) extra virgin olive oil

(15 g) unsalted butter

(½ lb) fresh shiitake mushrooms (stems discarded and caps thinly sliced)

(½ lb) oyster mushrooms (tough stems discarded and sliced)

garlic (finely chopped)

thyme leaves (plus more for garnishing)

rosemary leaves

Prepare the Risotto: Combine the chicken stock and water in a medium saucepan and bring to a very low simmer.

In a large Dutch oven (or heavy-bottomed pot), heat the butter over medium heat until lightly bubbling. Add the onion and a large pinch of salt, and sauté for 5 to 7 minutes, or until the onion is very soft and translucent. Add the garlic and sauté for 30 seconds to 1 minute, or until fragrant. Add the carnaroli rice and toast, stirring constantly with a wooden spoon, for 2 to 3 minutes. The individual rice grains should be slightly translucent along the edges.

Add the white wine and continue to cook for 2 to 3 minutes, or until the wine has been completely absorbed in the rice. Add 5 cups (1.2 L) of the hot broth mixture to the pot, stir, reduce the heat to low, cover, and simmer for 15 to 18 minutes. Remove the lid and stir twice during the cooking process, adjusting the heat as necessary to maintain a low simmer.

Prepare the Mushrooms: As the risotto is cooking, sauté the mushrooms. Heat a very large (more surface area the better) sauté pan over high heat. Add the olive oil and butter, followed by the mushrooms, spreading them into a single layer with a wooden spoon. Sauté the mushrooms for 3 to 5 minutes, stirring occasionally, or until they have caramelized and the bottom of the pan has formed a nice light brown fond. Add the garlic and stir until fragrant, about 30 seconds.

Remove the pan from heat and deglaze with the dry white wine. Place back on the heat, add the chopped thyme and rosemary, and continue to cook until all of the white wine has evaporated. Season with salt and pepper to taste. Set aside.

Once the risotto has finished simmering, add 1 cup (240 mL) of hot broth and stir gently and continuously with a wooden spoon, for 3 to 5 minutes, until the risotto is creamy and has thickened considerably. Add the parmesan and stir until evenly incorporated. Remove from the heat, cover, and allow to sit for 5 minutes. Stir in the remaining 2 tablespoon of butter, lemon juice, and most of the sautéed mushrooms. I like to resere a small amount for topping each portion. Add the remaining broth (or as much as you desire) to help loosen the risotto if it has gotten too thick. Ideally, risotto should be loose enough that it flows when tilted in a bowl or plate. 

Season the risotto to taste with salt and pepper and serve in pre-warmed bowls or plates. Garnish with additional sautéed mushrooms and sprinkle with freshly grated parmigiano-reggiano cheese and a few thyme leaves.

Place the stock in a medium-sized pot over high heat. Bring it to a simmer and then lower the heat so that it stays warm. Add the salt to the pot, 1 teaspoon at a time. You want it to taste just a little saltier than you&#39;d like.

Saute onion

Place the olive oil and butter in a large pot over medium heat. Add the onion and cook, stirring frequently, until it is soft and just starting to brown, about 5-7 minutes. Add the garlic and cook for 1 minute more.

Add rice

Add the arborio rice to the pot and stir it for 1 minute.  Add the wine to the pot and stir until it has been mostly absorbed.

Stir risotto

Add a ladle full of the hot broth to the pot and stir well. Continue stirring occasionally until it has been mostly absorbed, about 1-2 minutes. Continue adding the broth, 1 ladle at a time waiting until most of the broth has been absorbed by the rice before you add more. Stir the rice a few times between each addition of broth. The risotto is cooked when the rice is soft but not mushy .. think al dente pasta. This step takes about 20 minutes.

Finish

When the risotto is soft remove the pot from the heat and stir in the parmesan cheese and then season to taste with sea salt and fresh ground pepper.

Japanese Style Risotto with Seared Salmon

We start by marinating the salmon fillets. In a shallow dish, combine soy sauce, white wine and brown sugar. Add salmon fillets, coat both sides. Set aside to marinate.

In the meantime, tear the shiitakes into small pieces, finely dice the celery stalk, mince the garlic and finely chop the onion.

Heat 1 tablespoon oil over high in a heavy bottomed pot or skillet. Add shiitakes and cook until they release their moisture. Add 1 tablespoon oil and cook until they start to brown. Stir in soy sauce and cook for 1 minute more. Remove from skillet.

Reduce heat to medium low and add 1 tablespoon oil. Then add the celery, onion and garlic. Cook for 2 minutes until fragrant. Add rice and toast for 1 minute. Deglaze with white wine, simmer for 2 minutes while scraping up the brown bits from the bottom of the skillet using a wooden spoon.

Add 2 ladles chicken broth at a time, stirring frequently, until the broth has been almost completely absorbed before adding the next 2 ladles. Cook until the rice is almost al dente, about 15 minutes. It&#39;s possible that you don&#39;t need to use up all of the broth. Stir in shiitakes. Dissolve miso with 2 tablespoons hot broth and add to risotto. Simmer about 5 minutes until the risotto is ready, add more broth if needed.

In the meantime, prepare the salmon. Heat oil and butter over medium high in a nonstick skillet. Add salmon and sear 4 minutes per side.

Serve salmon over risotto, top with black pepper, chives and sesame seeds. Enjoy!

This was incredible. I made it for my mom tonight and didn’t make any changes at all to the recipe. The risotto took around 45 minutes. She declared it “the best thing I’ve ever made”.

This was absolutely fabulous! Made it with crimini as that’s what I had on hand. Seared the salmon in a hot pan and it was delicious. Served with some sautéed green beans with sesame oil and seeds on top of all. Thank you!
