Bring a large (5 or 6 quarts) pot of water to a boil and season with 3 tablespoons kosher salt.

Cook the pasta according to package directions until al dente (usually about 11 minutes). Scoop 1/2 cup of the pasta water out of the pot and set aside, then drain the pasta and transfer to a bowl.

While the pasta is cooking, pat the shimp with a paper towel to dry them. Sprinkle lightly with salt on both sides.

Put a large (12-inch) skillet over medium-high heat. Pour in the oil. When it starts to shimmer, add the shrimp in one layer. Cook 2 minutes, then turn them over and continue cooking until they turn pink and opaque, about 1 more minute.

Add the tomatoes, garlic, butter and chili to the pan and stir. When the butter is melted, add  2 or 3 tablespoons of the reserved pasta water and swirl around until saucy (add more if needed, a tablespoon at a time).

Pour the shrimp and sauce over the pasta. Top with the parsley and Parmesan cheese to taste. Toss gently and serve. Enjoy!

Garlic Butter Shrimp Pasta Recipe

Inspired by Marry Me Chicken, this 30-minute dish combines juicy shrimp, pasta, and creamy sun-dried tomato sauce for bold, satisfying flavors. Perfect for any occasion, it&#x27;s a crowd-pleaser not to be missed!

Marry Me Shrimp Pasta

rigatoni

unsalted butter

salt (divided)

tsp black pepper (divided)

garlic powder

tsp sweet paprika

Get your prep done before you start to cook. Peel en devein the shrimp. In a bowl, combine shrimp with paprika,  garlic powder, ½ teaspoon salt and ½ teaspoon pepper. Set aside.

Mince the garlic, grate the Parmesan, chop the sun-dried tomatoes and chop the basil leaves.

Boil the rigatoni al dente in salted water, according to the package directions. Drain, when ready.

searing

In the meantime, heat oil and butter over medium high in a large skillet. Place shrimp in a single layer, and sear for 1 minute per side. Remove from skillet into a clean bowl.

cooking

Add garlic, sauté for 1 minute over medium low. Then add the sun-dried tomatoes, Italian seasoning, and the remaining salt and pepper. Cook for 1 minute more. Add flour, stir until incorporated. Deglaze with chicken broth, simmer for 2 minutes while scraping up the brown bits on the bottom of your skillet with a wooden spoon.

Pour in cream and stir in tomato paste, bring to a boil. Allow the sauce to simmer for 3 minutes or until the pasta finishes cooking. Next, add lemon juice and basil. Finally stir in Parmesan.

Toss with pasta and shrimp. Finish off with chili flakes. Enjoy!

Couple of adjustments that I made; don’t use the flour, add pasta water instead. Pasta water already has starch in it, which acts as a thickener. Also, instead of using all the broth, use part of it and sub white wine. It added a lovely addition to the taste! I used calamarata (or pacchiere, it’s also called)  pasta.

I struggle to make recipes come to life in my kitchen but this recipe was detailed and user friendly. It is the tastiest dish I have made from any recipe outside of my family and I will definitely be remaking it. It has made me hopeful to explore other recipes on the site.

Amazing. Only differences were that I used fire roasted tomatoes instead and added a little sugar to the sauce at the end. Restaurant quality for sure.

I made this with a few substitutions since I am gluten and dairy free, it turned out delicious! I will say next time I am buying my shrimp already cleaned 😛 it took so long!! Other than the prep this was a huge hit, thank you so much for sharing the recipe!

Salt and pepper

Soak the cashews

Place the cashews in a small heatproof bowl and cover with just-boiled water. Set aside to soak for 15-30 minutes until they become pale and plump. You can proceed with the next steps while soaking.

Cook the pasta

Bring a large pot of generously salted water to a boil. Add the gluten-free spaghetti and cook according to package instructions, but drain the pasta about 2 minutes before it’s fully done to allow it to finish cooking later with the sauce. Reserve approximately 3/4 cup of the pasta cooking water and set the pasta aside.

Prepare the Cajun spice mix

In a small bowl, combine 1 teaspoon kosher salt, 1/2 teaspoon black pepper, 1 teaspoon onion powder, 1 teaspoon garlic powder, 1 teaspoon dried oregano, 1 teaspoon paprika, 1/4 teaspoon dried thyme, and a pinch of cayenne pepper if using. Mix well.

Cook the shrimp

Pat the raw shrimp dry with paper towels to remove excess moisture. Toss the shrimp in a medium bowl with 1 1/2 teaspoons of the prepared Cajun seasoning to coat evenly. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once hot, add the shrimp and cook for 3-4 minutes, turning occasionally, until just cooked through and opaque. Remove the shrimp to a plate, leaving any oil and brown bits in the pan.

Sauté vegetables and aromatics

Reduce the skillet heat to medium and add the remaining 1 tablespoon of olive oil. Add the diced onion, sliced red and orange bell peppers, and chopped garlic. Sauté for 3-4 minutes until the vegetables are tender. Stir in the remaining Cajun seasoning and tomato paste and cook for an additional 1-2 minutes, stirring frequently to combine. Remove from heat.

Make the cashew cream sauce

Drain the soaked cashews and add them to a blender with 1 1/2 cups of chicken broth and 2 tablespoons nutritional yeast. Blend on high for 1-2 minutes until completely smooth and creamy with no cashew pieces remaining.

Combine pasta, shrimp, and sauce

Return the vegetable and spice mixture skillet to medium-low heat. Add the par-cooked pasta, cooked shrimp, and the cashew cream sauce to the skillet. Stir gently to combine, scraping up any browned bits from the bottom to infuse flavor. Simmer gently, tossing occasionally, until the sauce thickens enough to coat the pasta and the noodles finish cooking to al dente.
