Lemony Shrimp and Asparagus Spaghetti

I made this tonight. Delicious. I didn’t have cream so I used milk. Came out great. I think with the summer coming I may add cherry tomato halves at the end.

Great recipe and very easy.  Next time I think I'll skip the heavy cream and just use pasta water at the end.

Absolutely great recipe, and I only used 1T heavy cream.  I'm not sure it is even needed.  The lemon flavor in this is delightful. I also believe this could be made with fresh green beans as well!  This is going to be a staple in our home since my husband loved this dish.  Since there is only two in our home, the leftover were our lunch the next day.  Not a bite was left.  Please try this, you will not be disappointed.

One Pot Spaghetti

beef

garlic (minced)

Salt & black pepper (to taste)

marinara sauce (homemade OR 1 (24-ounce) store-bought jar)

tomato paste

balsamic vinegar

basil

oregano

thyme

sugar (optional)

beef broth

spaghetti noodles (broken

Parmesan cheese (optional) (for serving)

Fresh minced parsley (optional) (for serving)

red pepper flakes (optional) (for serving)

Set a large pot or Dutch oven over medium-high heat. Add the ground beef and cook until no longer pink, breaking apart and stirring as the meat cooks. Stir in the minced garlic and cook for another minute or two until fragrant.

Drain the grease from the pot and season the beef with salt and pepper, to taste. Add the marinara sauce, tomato paste, balsamic vinegar, dried basil, dried oregano, dried thyme, sugar (if using), and beef broth. Stir well to combine, bring to a boil, and then reduce heat to a low simmer (about medium-low).

Lay the broken spaghetti noodles on top of the sauce, criss-crossing them and pressing them down until submerged by liquid. Do not stir at this point.

Cover and cook, stirring every 5 minutes, until the excess liquid is absorbed and the pasta is al dente, about 15 to 20 minutes total (see NOTES below).

Stir well and serve immediately, topped with plenty of Parmesan cheese.

I made this last night, and we liked the flavor, but I don't know how it could feed four since it wasn't really enough for the two of us for dinner. Next time I'll increase the spaghetti and other ingredients. And since the author never clarified the amount of honey, I settled for 1.5 tablespoon since in the video it appeared to be around twice the amount of vinegar. I'd increase that, too, next time around since I think it needed a bit more sweetness.

This is one of my son's favorite dishes! I add more broccoli and make a little more sauce too since they always ask for 2nds and 3rds. Thank you.

Made this tonight with different veggies. I used mushrooms, red & orange bell peppers, spinach, jalapenos and mixed in some left over pork I had; came out good but was salty. Next time I will use the low sodium soy sauce or not use as much..

Skipped the rice vinegar, my daughter thought i had a PFchain sauce she didnt know we had , it was a hit , served with Costco orange chicken. Thank you for the life saving recipe.
