Transform beef mince into a comforting Russian-style meatball stew with mushrooms, paprika and soured cream

Meatball stroganoff

beef mince

red onion

garlic

pack small button mushrooms

tomato purée

tbsp sweet paprika

plain flour

beef stock cube stock

soured cream

Season the beef and shape into walnut-sized meatballs. Heat the oil in a pan and cook the meatballs until brown on all sides. Scoop out of the pan and set aside. Add the onion to the pan and cook for a few mins to soften. Add the garlic and mushrooms, and fry for a few mins until the mushrooms soften and start to brown a little. Stir in the tomato purée, paprika and flour for 1 min, then add the stock, bit by bit, to make a smooth sauce. Return the meatballs to the pan, cover and simmer gently for 15 mins or until the meatballs are cooked through.

Stir in the soured cream and most of the parsley, and season to taste. Serve scattered with the remaining parsley, with rice, mashed potato or tagliatelle.

A 30-minute, one-pan delight of a weeknight dinner. 

Easy Chicken Stroganoff

chicken breasts (about 1 lb)

all-purpose flour,

olive oil

butter

oz cremini mushrooms, sliced

yellow onion, chopped

dry mustard

Worcestershire sauce

garlic,

chicken broth

sour cream

salt and black pepper,

Egg noodles,

Cut chicken into 1-inch pieces. Season liberally with salt and pepper, then toss in the 1/4 cup flour.

Add 2 tablespoons of the olive oil to a skillet over medium-high heat. Working in batches if needed, cook the chicken until lightly browned on both sides, about 3 minutes per side. Remove to a plate and set aside.

If needed, add remaining tablespoon of oil before browning the second batch.

Add butter to pan, followed by mushrooms and onions. Let cook until liquid releases and cooks off, about 6-8 minutes.

Stir in mustard powder, Worcestershire sauce, and garlic. Cook 1 minute.

Stir in broth, scraping up any browned on bits from the bottom of the pan with a wooden spoon.

Add the chicken back in and let simmer for a few minutes, stirring occasionally.

Reduce heat to low, then stir in sour cream. Season with salt and pepper and serve over egg noodles or mashed potatoes. Enjoy!
