easy taco dinner

Enjoy the best of both worlds with Healthy Taco Pasta. Perfect for when you can't decide, need something quick, or want a kid-friendly meal sure to fill bellies. Made with ground beef, select veggies, pasta, and more!

Healthy Taco Pasta 

dry pasta (I used brown rice fusilli)

olive oil

white onion, diced.

garlic,

red pepper, diced.

beef

can black beans,

can corn, drained and rinsed

taco seasoning

15 oz can diced tomatoes (fire-roasted preferred)

tomato sauce

cheddar cheese

Preheat oven to 350F and grease 9&#215;13 casserole dish.

Cook your pasta according to package. Drain accordingly. Set aside.

In a large pan or dutch oven over medium-high heat, add oil. Once hot, add onion and pepper. 

After a few minutes when onions and peppers begin to soften, add garlic.

One minute later, add ground beef. Cook until no longer pink, then drain everything in fine mesh strainer.

Add black beans, corn and taco seasoning. Stir to combine, then add diced tomatoes and tomato sauce. 

Let simmer for 5 minutes over low heat, then stir in cooked pasta.

Pour into casserole dish and top with cheddar cheese. Bake in oven for 10 minutes at 350.

Let cool for a few minutes before serving.

This taco bake was super easy to throw together and a great thing to meal prep at the beginning of the week. I was not sick of it at all and it makes so much food! Easy to freeze the leftovers too. I am adding this to the weekly rotation for sure!

This dish is absolutely delicious. I made a batch for my partner and me, and it lasted for 8 meals total and we never got tired of it. The fire roasted tomatoes provide the perfect flavor, definitely include them! Will be making over and over!

Sheet Pan Chili Lime Shrimp Fajitas

raw deveined shrimp, with

red pepper, sliced

green pepper, sliced

yellow pepper, sliced

onion, sliced (large)

limes (1 juiced, 1 sliced for condiment)

garlic cloves,

chili powder

cumin, ground

red pepper

salt

ground pepper

Preheat oven to 450 degrees.

Line baking sheet with foil or parchment paper for easy clean up.

Mix olive oil, chili powder, crushed pepper, cumin, garlic, juice of 1 lime,  salt and pepper in small bowl or measuring cup.

Add sliced veggies and shrimp into large bowl and toss with olive oil mixture

Spread onto prepared baking sheet.

Bake for 8-10 minutes or until veggies are soft and starting to brown and shrimp is cooked through.

Serve with remaining lime slices.

Easy to make beef stuffed Taco Cups for a snack or dinner!

wonton wrappers

tomato (diced)

shredded cheese

sour cream

onion

preheat oven to 350 degrees

In large skillet brown ground beef and add taco seasoning following direction on package.

Add diced tomato.  Remove from heat and set aside.

Spray 12 cup muffin tin with non stick spray.

Add ONE wonton wrapper to each muffin tin tray. Place one tablespoon of cheese onto each wrapper.

Place one additional wrapper on top of cheese with corner on opposite sides.  Fill second wrapper with several tablespoons of beef taco filling using up all the beef filling.
