easy tortellini recipe

<p>Just 20 minutes and one skillet is all you'll need to get this delish Tuscan Tortellini on the table. Everything, including the tortellini, gets cooked up in one big pan. Busy weeknights, here we come.</p>

20-Minute Skillet Tuscan Tortellini

olive oil

green bell pepper,

onion,

garlic, chopped

lb bulk Italian sausage (no casings)

tomato-based pasta sauce

broth

half and half

19 oz frozen cheese tortellini

baby spinach, torn to bite size

black pepper

Parmesan cheese

In a very large skillet, heat oil over medium heat until hot. Add bell pepper, onion, and garlic. Stir constantly until fragrant, 30 seconds. Push mixture to the edges of pan and add sausage into the center of pan. Cook and break up sausage; once it&#8217;s half-cooked, stir together with the vegetable mixture and continue cooking until browned.

Add pasta sauce, tomatoes with juices, chicken or veggie broth, and half/half. Stir and bring to a simmer. Add frozen tortellini, stirring to submerge tortellini in the sauce. Cover and simmer until tender, about 7-8 minutes. Remove from heat. Add spinach and stir just until wilted. Add 1/4 tsp freshly ground black pepper (or to taste.) Serve immediately with freshly shaved/shredded Parmesan cheese.

This was awesome! My husband reminded me over and over again to make sure I wrote it down in our personal favorites recipe book! Definitely a keeper! And the fact that it was sooo easy and quick to make made it even better!

Wonderful! We are half vegetarians around here, so I browned the sausage separately and mixed in with half the pasta mixture right before serving...it was still amazing.  A new family staple for sure.  Thank you!

Delicious! I used Italian Turkey sausage and crushed tomatoes, adding basil and Italian seasoning in lieu of prepared sauce. To use up the 1/2. Bag of frozen spinach I thawed it, slightly warmed it in the microwave and it worked beautifully!   
My daughter won’t eat pork sausage or jarred pasta sauce and loved this.  It took very little extra time to use the crushed tomatoes.   Wonderful! Thank you!

This One Pot Gnocchi with Spinach and Chicken is full of goodness!  It’s flavorful, easy, and tender. The sauce is delish!  Quick weeknight dinner, yet tasty enough for guests.



One-Pot Gnocchi with Spinach and Chicken

You only need simple ingredients, one pan and 15 minutes to have this easy but gorgeous Spinach and Ricotta Tortellini with Creamy Tomato Sauce on the table. Vegetarian tortellini is transformed into a fulfilling family meal with a comforting creamy, cheesy and tomatoey sauce.

Spinach and Ricotta Tortellini with Creamy Tomato Sauce

red onion, finely diced

tsp garlic

150 g (5 1/2 oz) cherry or grape tomatoes

chicken stock

tomato paste (concentrated puree)

(250 ml) thick (heavy/double) cream

(100 g)

baby spinach leaves

spinach

chilli

Heat the olive oil in a heavy-based pan with a lid over medium–high heat. Add the onion and garlic. Cook, stirring, for 2–3 minutes or until softened.

Add the tomatoes. Cook for 2 minutes, stirring. Use the back of your spoon to gently squash the tomatoes and release their juices.

Add the chicken stock and tomato paste. Stir for 1 minute.

Add the cream, parmesan and pepper. Bring to a simmer.

Add the spinach, stir until just wilted. 

Add the tortellini directly into the pan from the bag (no need to precook, see note 2). Stir through the sauce.

Reduce the heat to low, cover and cook for 2 minutes or until the pasta is just cooked through. (Too much or too little liquid? See note 3.)

Remove from the heat, stir through the parmesan and serve.

Top with extra parmesan and the Italian chilli oil, if using.

Such a great recipe to have on hand for a quick-to-prepare dinner choice in the week. I have used this recipe several times already.

Never leave Rana pasta in the shelf if it’s on sale, staple in the home!

Have made this recipie twice now and it is a big hit with 2 very hungry teenage boys.  Will definitely be adding this to our regular meal plan rotation.

So tasty and easy.  We eat meat most nights but I thought I would give this a try for a meat free Monday.  I was so impressed, it’s so delicious and not boring tasting like I thought a vegetarian meal would be 🤣 I can’t wait to make it again!

Spinach & Ricotta Tortellini with Creamy Tomato Sauce - 30 days of family dinners on a budget#recipe

Creamy Ham and Cheese Tortellini uses an easy alfredo sauce recipe with cubed ham, peas, and seasonings to make a 20 minute one-pot meal! 

Tortellini Alfredo Recipe

tortellini

unsalted butter

garlic (, minced)

heavy cream

Parmesan cheese (, shredded, plus additional for garnishing)

coarse kosher salt

pasta water

peas

red pepper (,

Boil water in a large pot or Dutch oven. Salt well (pasta water should be as salty as seawater). Cook 20 ounces fresh tortellini according to package directions for al dente. Reserve 1/2 cup of the pasta water. Drain well and set aside.

In the same pot, add the 1 1/2 cups cubed ham over medium heat, tossing until browned. Remove to a plate and set side.

In the same pot over medium heat, melt the 1 tablespoon unsalted butter and saute the 2 cloves fresh garlic, stirring until soft, approximately 2 minutes.

Whisk in the 1 cup  heavy cream and 1 cup fresh Parmesan cheese, 1 teaspoon coarse kosher salt and 1/2 teaspoon freshly ground black pepper. Simmer over low heat until it thickens and cheese melts. You might still see little bits- this is the garlic and is fine.

Stir in the 1/2 cup  reserved pasta water and 1 1/2  cups frozen peas, cooking for an additional 1 minute over low heat. Add the ham and tortellini, tossing to coat and reheat.

To serve, top with additional grated Parmesan cheese and crushed red pepper, if desired.

This is good and easy to make. But my cheese always turns into a big clumpy mess, is there a reason for that? I'm using fresh shredded parmesan.
