Easy Veggie Quesadillas with Melted Mozzarella and Cheddar

cherry tomatoes

onion

½ bell pepper, red ((your fave colour))

spinach

tbsp red pesto ((check the notes, if you want to make your own))

cheddar cheese

mozzarella

whole grain tortillas ((check the notes, if you want to make them homemade))

Wash the tomatoes and pepper, peel the onions and cut them all into thin slices - the cheese too.

Wash the spinach and let it drain in a sieve.

Grab a tortilla and spread a layer of pesto over half of it. A tablespoon works well.

Add a light layer of cheese on top and a quarter of the tomato, pepper and onion, followed by a few spinach leaves.

Top it with another layer of cheese.

Then fold the other half of the tortilla on top and place in a large frying pan (nonstick).

Heat for 2-3 minutes. Flip and heat for another 2-3 minutes until the cheese has melted - a good indicator is a little running out the side.

Pro Tip: place a heavy pot on top of the quesadilla so that it flattens nicely and cooks more evenly - this will also stop the insides escaping! If you don't like the thought of putting a pot directly on your quesadillas then put a plate between the two.

Easy Sweet Potato Black Bean Quinoa Bowls drizzled with a zesty Cilantro Lime Crema. This fresh vegetarian meal is filled with roasted sweet potatoes, black beans, quinoa, roasted red peppers and corn. 

Easy Sweet Potato Black Bean Quinoa Bowls with Crema

potatoes,

cumin

smoked paprika

garlic powder

salt

water

dry quinoa

red peppers, thinly sliced

red onion, thinly sliced

optional: jalapeno, sliced

avocado, sliced

cilantro

plain greek yogurt

lime juice

honey

dijon mustard

red pepper flakes

salt & pepper

In a small bowl, add olive oil, 1 teaspoon cumin, 1/2 teaspoon smoked paprika, 1/2 teaspoon garlic powder, 1/2 teaspoon salt. Mix together.

In a large bowl, add sweet potatoes and the olive oil seasoning. Toss to coat the potatoes with the mixture.

Spread the sweet potatoes on a baking sheet in a single layer.

Bake for 20 minutes. Remove and set aside.

In the meantime, rinse quinoa with water. Then add 2 cups of water and quinoa to a small sauce pan. Bring to a boil. Then cover and reduce to simmer for 15 minutes or until liquid is evaporated. Remove from heat and fluff quinoa with a fork.

To a small food processor add fresh cilantro, greek yogurt, red wine vinegar, lime juice, olive oil, honey, dijon mustard, red pepper flakes, ground cumin, smoked paprika, garlic clove, salt and a pepper to taste. Blend until smooth and cilantro is finely chopped.

Assemble the Sweet Potato Bowls. To a large bowl add quinoa, sweet potatoes, black beans, roasted red pepper, red onion, avocado, corn and then drizzle with dressing. (optional sliced jalapenos)

Very yummy!  Al the flavors go well together. A balance of sweetness combined w spicy.

The cilantro lime crema doesn't have any lime. (Bowl is even better with roasted pepper and onion. Black beans and corn are good with a little roasting, too.)

An extremely easy and comforting vegetarian chili. 

Vegetarian Chili

pinto beans, drained and rinsed

black beans, drained and rinsed

kidney beans, drained and rinsed

vegetable broth

Absolutely DELICIOUS!! Great quick dinner! My son,who doesn't like chili, loves it. What a tasty vegetarian meal. Winner, winner, vegetarian dinner!

a good rule for most peppers, the longer it cooks the hotter it gets. Good recipe, make your modifications early, like one person said , you can always add more spices later.

I don't miss the meat at all!!!  Since my wife and I went vegetarian last year this has been my go-to chili recipe.  Delish!

Although I used to think meatless chili would be a waste of the other ingredients, I am now a believer. Very tasty! Only had a can of regular diced tomatoes and a can of stewed whole peeled tomatoes in pantry but they filled in nicely for the fire roasted ones. Added some celery because I wanted to get rid of it and use canned green chilies instead of fresh due again to a poorly stocked pantry.  Loved it despite my alterations. Yummy.

When trying a new recipe I try to follow to a tee, but I changed this one a little bit.  Because I use a lot of cumin when I cook I reduced the amount. To taste.  I also reduced to 1/2 an onion.  I have a great vegetable broth I use so it gave the chili a great flavor.  Next time I think I will use tomatoes with chili’s ( like Rotel). My family loves spicy.  I will keep this one in my recipe file.

This is the first vegetarian recipe I have ever made for my family (quarantine food). We are trying to switch to a less meat-heavy diet. It is BY FAR the best chili I've had, and this is coming from a former major carnivore. Unlike some other commenters who wanted less cumin, I like heavy seasoning, so I added 1.5x the cumin (next time I will add even more), triple the oregano, and about 0.75 tbsp of ground white pepper. Also put in about 2 oz of unsweetened baker's chocolate and sweet potato cubes, celery, and corn.
It is so delicious. I can't believe it's healthy. And it requires so few dishes. This makes me excited to try vegetarianism. Served it with a dollop of greek yogurt and chives on top and with a side of cornbread. I'm so glad I found this recipe.

Okay so don't laugh...my prep time is at least an hour maybe more! I peel, cut, and such by hand and add celery, and more bell peppers. It's the 4th(?) time I've made it because it's THAT good but are you all mostly using a food processor for prep?

To the comments against raisins...incase you are ignorant to vegan/ vegetarian diets, iron is difficult to get in our diets. Savory and sweet does in fact mix well together based on the individuals preferences.
You can add dark chocolate with red chili pepper or have you ever heard of brown sugar added to Chilis? And what the hell does age have to do with it all?

This was a wonderful recipe. It is easy to make and quite delicious.

Made a chunky chili 
only 1 can beans (chickpeas). Not a fan of beans. 
substituted with more celery, and sweet potato. Wanted to add corn but was already chunky. If adding sweet potato, then simmer for 45ish minutes

This is a very simple and delicious no meat chili. I made it according to the recipe. Bonus is that it’s zero points on Weight Watchers if you don’t add the cheese or sour cream.

Excellent delicious I added portability mushrooms and raisins.  Love it. I will make. All the time

Toast

Toast the pine nuts in a skillet on medium low heat for 5 minutes. Then add them to a food processor.

Toast the cashews in the same skillet for 10 minutes, tossing gently. Then transfer to your food processor.

Blend

Add the the remaining pesto ingredients into your food processor except the olive oil. Pulse until everything is mixed, then slowly pour in the olive oil with the food processor on. Keep blending until the pesto is smooth and creamy. Set aside.

Spiralize

Use a spiralizer to create zucchini noodles, then add them to a large bowl.

Slice

Slice your tomatoes in half and place into the bowl with the zucchini noodles. Slice the mozzarella balls in half and add to the bow.

Using a spoon or spatula, remove all of the pesto from the food processor and add to the bowl. Mix all of the ingredients together until well combined, and serve!

Preheat the oven to 425 degrees Fahrenheit.

Thinly slice the onion. Slice the bell peppers. Chop the cauliflower into small florets. Chop the mushroom into bite-sized pieces. Add the veggies to a big bowl and toss them with the olive oil, chili powder, cumin, paprika, garlic powder, onion powder, and kosher salt.

Line 2 baking sheets with parchment paper. Add the vegetables in a single layer. Roast 15 minutes, then remove the sheets, stir the veggies, and sprinkle on another 1/2 teaspoon salt spread between the trays (1/4 teaspoon on each). Stir again, then return to the oven and roast another 10 minutes until tender.

Meanwhile, pit the avocados. Scoop out the flesh into a bowl and mash with a fork. Add the lime juice, salt, and cilantro.

Heat the refried beans in a small sauce pan.

If desired, char the tortillas by placing them on an open gas flame on medium for a few seconds per side, flipping with tongs, until they are slightly blackened and warm. (See How to Warm Tortillas.)

To serve, place the refried beans and roasted veggies in tortillas, and top with guac-ish.

This nostalgic sloppy joe recipe features a ground plant-based meat substitute cooked with chunky vegetables in a sweet and tangy tomato sauce flavored with lots of delicious spices!

Sweet and Tangy Vegetarian Sloppy Joes

olive oil (extra virgin)

½ medium yellow onion (diced)

½ green or red bell pepper (seeded and chopped)

garlic (minced)

lb plant-based meat substitute (such as Impossible Foods

salt + black pepper (to taste)

herbs de provence (or Italian seasoning)

turmeric (or ground mustard)

liquid aminos (or lite soy sauce)

balsamic vinegar

liquid smoke

dark brown sugar

hamburger buns (for serving)

Heat olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add chopped onion and bell pepper and cook until onion is translucent, about 2-3 minutes. Add garlic and cook about another minute until fragrant.

Add meat and break apart with wooden spoon. Season with salt + pepper, garlic powder, herbs de provence, smoked paprika and turmeric. Cook until meat is browned and almost cooked through, stirring occasionally, about 3-5 minutes.

Add crushed tomatoes, liquid aminos or lite soy sauce, balsamic vinegar, liquid smoke and brown sugar to meat mixture. Stir to combine all ingredients. Reduce heat to medium-low and simmer uncovered until thickened and reduced, stirring occasionally, about 10-15 minutes depending on your desired consistency. Remove from heat.

Toast four hamburger buns in the oven and top each bottom bun with a few spoonfuls of sloppy joe mixture. Add toppings if desired and enjoy!

Sichuan peppercorns

Sesame oil ((for cooking))

½ tbsp light soy sauce

Crush the Sichuan peppercorns in a mortal and pestle, then gentle toast the peppercorns until fragrant (but not burnt!) and set aside.

Add a splash of sesame oil to a wok/ large pan. To this add, the mushrooms and cook until the water has evaporated. 

Then add the onion, garlic and ginger. Cook for a few minutes until fragrant.

Stir in the Chinese five spice , toasted Sichuan peppercorns and the chilli paste. Sauté for a few minutes until your kitchen smells oh-so-cosy!

Stir in the rice vinegar, soy sauce sand sugar. Mix well to evenly combine.

Add the stock/ water. Bring to a boil, then turn the heat down and add cubed pieces of silken-firm tofu. Gently fold in the tofu, being careful not to break the pieces.

While stirring, pour in a corn flour slurry ( 1/2 tbsp cornstarch mixed with 1 tbsp cold water). 

Let it simmer for 5-10 minutes for the sauce to thicken and absorb all those savoury flavours. 

Serve hot, over rice or noodles and DIVE IN
