easy vodka sauce

This penne alla vodka is made using a doctored-up jarred sauce. It is easy to make and every bit as silky and creamy as restaurant vodka sauce. From start to finish, you can have dinner on the table in about 30 minutes.

Penne alla Vodka (with Jarred Sauce)

Tablespoons extra virgin olive oil

red pepper flake (to taste)

24 oz jar marinara sauce

vodka ((sub water

oz cream cheese ((1/2 block))

oz finely grated Pecorino Romano cheese

Tablespoon balsamic vinegar ((if needed for sweetness))

your favorite hearty pasta shape

In a medium saucepan, heat the oil until it shimmers.

Add the pepper flake and swirl for a few seconds to flavor the oil.

Pour in the jar of your favorite marinara sauce and stir well.

Bring to a simmer.

Add the vodka to the empty jar and swirl it around to get as much sauce out as you can. Add this to the pan.

Simmer and stir for about 5 minutes just to reduce the sauce a bit.

Whisk in the cream cheese until melted, and then, over low heat, stir in the grated Pecorino Romano.

Taste, and if needed, add the balsamic for a bit of brightness. I quite liked it in mine.

Cook the pasta according to package directions for about half the time called for.

Add the very al dente pasta and about 1/2 cup of the pasta water to the sauce and stir well over high heat and at a vigorous boil until the pasta is done and the sauce beautifully coats every piece of penne.

You&#x27;ll know it is done when the sauce has reduced back down to its original texture and beautifully coats the now perfectly-cooked pasta.

For an extra-silky sauce, add about 1 1/2-2 Tablespoons of additional olive oil as you boil and stir. The extra oil will emulsify into the sauce yielding a dreamy texture.

Serve with extra grated cheese and freshly ground black pepper.

Pancetta, parmesan, vodka and heavy cream make our easy vodka sauce more than a little better than regular old tomato sauce.

Easy Vodka Sauce

olive oil

yellow onion, finely diced (about 1 cup)

pancetta, diced

garlic cloves,

vodka

tomatoes

salt

heavy cream

Parmesan cheese,

pasta,

red pepper flakes, (optional)

fresh basil,

Cook the onion and pancetta

Heat the olive oil in a large saucepan over medium heat. Once the oil is glistening, add the onion and pancetta and cook, stirring, until the onion has softened and the pancetta is crispy, about 4 minutes. Stir in the garlic and cook until fragrant, 1 minute more.

Add vodka and tomatoes

Add the vodka, tomatoes and their juices, crushing the tomatoes a bit with your hands as you add them to the pot. Bring the sauce to a simmer and cook, stirring occasionally for 30 minutes, or until the tomatoes are cooked down.

Thicken the sauce

Stir in the salt, heavy cream, and the Parmesan. Cook, stirring occasionally, for another 5 minutes, or until thickened.

Serve and enjoy

Serve over the pasta and sprinkle with red pepper flakes, Parmesan, and basil.

Ive made this pasta dish twice now. The flavors are yummy. The first time, I followed the recipe exactly and used pancetta. The second time I used ground Italian sausage, fried in small bites and added an extra 1/2 can of tomatoes to thin the sauce a bit. The sausage made it a little heartier, but either way, its a great pasta option for dinner! Dont skimp on the parm and basil topping. So pretty, and the basil brightens up the flavors. This was delicious!  I didn’t include the pancetta (I didn’t have any) but it was awesome without it.  I added some sautéed chicken for a protein.  Will absolutely make this again.  Thank you!

Wow this was so good! I used turkey bacon, fire roasted crushed tomatoes, and extra garlic! Next time I'll use less cream though, I felt so full so fast but kept wanting to eat and couldn't so that was sad.
