Instant Pot Cheesy Ziti (Johnny Marzetti)

spaghetti sauce

beef broth (I used unsalted)

rigatoni (or any 12 minute pasta)

mozzarella (or combination of Italian cheeses)

parmesan cheese

Set Instant Pot to saute then add the diced onion and green pepper then cook until softened. Add the garlic and saute about a minute. Add the ground beef, Italian sausage, oregano, pepper, salt, and hot red pepper flakes. Cook until the meat is no longer pink.

Turn off the saute function, add the beef broth, Worcestershire sauce. top with pasta but do not stir. Cube the cream cheese and dot the top of the pasta. Pour the spaghetti sauce on top. Do not stir. Close the lid and cook on high pressure for 5 minutes then follow with a quick release in short bursts.

Set pot to saute then add cheese and stir until melted. Rest for a few minutes if desired then serve immediately or store in an airtight container for up to one week.

Baked Ziti

16 ounce ziti noodles

olive oil

garlic (pressed)

onion

mild Italian sausage

marinara sauce

Italian seasoning

salt

mozzarella cheese (divided)

whole milk ricotta cheese

parmesan cheese (divided)

Tablespoons chopped fresh parsley (divided)

black pepper

eggs

Cook ziti pasta according to package directions. Once cooked, drain and set aside.

While pasta is cooking, heat a large skillet with olive oil over medium high heat. Saute garlic and onions in hot skillet for 2 minutes. Add beef and sausage and continue cooking until browned. Drain off excess fat and return meat to the skillet.

To the skillet, add marinara sauce. Use your favorite pasta sauce or make your own! Add Italian seasoning, salt, and red pepper flakes. Simmer on low heat until pasta noodles are done cooking. When noodles are done cooking add half of the meat sauce to the noodles. Reserve the remaining sauce for layering.

In a small mixing bowl, combine 1 cup of the shredded mozzarella cheese, ricotta cheese, 1/4 cup of the grated parmesan cheese, 2 Tbsp of fresh parsley, pepper, and eggs. Mix until combined.

Assemble the baked ziti in a 13x9 baking dish. First pour in half of the meat covered noodles in the bottom. Dollop half of the cheese mixture over the top, spreading evenly, followed by 1/2 cup of shredded mozzarella cheese and half of the reserved meat sauce.

Repeat with the remaining pasta noodles, cheese mixture, meat sauce. Top with the remaining 1/2 cup of mozzarella cheese and the remaining 1/4 cup of grated parmesan.

Bake uncovered in 375 degree oven for 20-25 minutes, until bubbly and cheese is melted. Remove from oven and top with 1 Tbsp of fresh parsley. Serve hot and enjoy!
