Edamame Salad with Miso Dressing

sesame oil

soy sauce

rice wine vinegar

mirin

white miso

carrots (see Notes)

Whisk

Combine the dressing ingredients in a small mixing bowl and whisk together until smooth and most of the miso is dissolved.

For the dressing

In a large bowl, toss the edamame, carrots, and cabbage.

Dress

Pour desired amount of dressing over the vegetables and toss until evenly mixed. Top with chopped cilantro and serve.

Edamame Salad is flavorful, nutritious, and easy to make, featuring a bold, naturally sweet garlic-ginger almond dressing, shredded carrots, and crunchy cabbage. Enjoy large bowls as a satisfying and nutritious main dish, or serve it as a side salad with your favorite meals!

Amazing Edamame Salad

oz bag frozen shelled edamame (also known as mukimame)

red cabbage

carrots (about 1 cup)

red bell pepper (diced)

scallions

cilantro

almond butter (stirred well)

tbsp lime juice

tbsp soy sauce (or tamari)

tsp agave or maple syrup

ginger

garlic (minced

almonds (chopped)

Salt (to taste)

Bring a large saucepan of water to a boil over high heat. Add the edamame and boil for 5 minutes or until tender. Drain it and let cool at room temperature for 5-10 minutes, until cool to the touch.

Add the shelled edamame, red cabbage, carrots, bell pepper, scallions, and cilantro to a large mixing bowl.

In a small whisking bowl, combine the almond butter, lime juice, soy sauce, agave or maple syrup, ginger, and garlic. Whisk well until smooth and creamy.

Pour the almond lime dressing over the vegetables. Toss well to combine. Season the salad to taste with salt.

Cover and refrigerate the salad for an hour to marinate or serve it immediately, garnished with chopped almonds.

Delicious salad. I didn’t have red cabbage so I used bagged coleslaw mix. I also used peanut butter instead of almond butter. Easy healthy salad to make and great for leftovers

Soooo good!!! I will definitely make this again. It's a bit different than your standard peanut butter sauce.

I added rice noodles as suggested to bulk it up and doubled the veggies to have leftovers (I may have even trippled - I didn't measure lol) . I didn't add salt at the end, but I added some sriracha and it really took it over the edge. Thanks for the amazing recipe :)
