Cashew butter is a food spread made from raw or roasted cashews. It is rich and creamy in flavour and when stored the oils and solids separate easily requiring it to be mixed before each use. It is recommended to store the cashew butter in the refrigerator after the first use to prevent it from...

Add cashews, coconut, oats, and dates into a food processor. Process on high until crumbly.

Add in cashew butter, syrup and vanilla and blend again until a dough starts to come together. If that's not happening, stream in water one tablespoon at a time until a sticky dough forms. Pulse in the sprinkles.

Remove the lid and form the mixture into balls.

Transfer to a plate, and drizzle with coconut butter. Top with sprinkles to finish. Enjoy immediately, or for an even better texture, cool in the fridge for at least 30 minutes.

Healthy Cake Batter Energy Bites

These low calorie cake batter truffles are made with heat treated flour and don&#39;t contain any eggs! These truffles are completely safe to eat so you can scoop away to your hearts content! And the best part? You can enjoy these truffles for just 40 calories each or 245 calories for the entire batch! 

40 Calorie Cake Batter Truffles

g 3% fat cream cheese

55 g 0 calorie icing sugar

g all-purpose / plain flour

g sugar-free sprinkles

Pre-heat oven to 180°C (356°F). 

Pour the flour onto a prepared baking tray and spread until there is a thin layer across. Bake for 5-7 minutes, or until an instant read thermometer reads 74°C (165°F). Allow the flour to cool before using. 

In a medium bowl, combine the cream cheese, the heat treated flour and icing sugar until smooth and lump-free. The batter will be thick but very sticky. 

Fold in the sugar-free sprinkles and form 6 balls from the batter. It is easier to do this using a scoop rather than your hands as the batter can be very sticky.

Either enjoy the truffles straight away or set them on a flat surface prepared with parchment paper and refrigerate. The truffles with firm up in about an hour. To speed up the process, freeze them for 20 minutes.
