frozen shredded hash brown potatoes

pepper jack cheese (shredded)

deli honey ham (diced)

onions

eggs (beaten)

milk

salt

Farmer’s Ham &amp; Egg Breakfast Casserole

Coat a 2-quart &nbsp;baking dish with non-stick cooking spray. &nbsp;An 8x8 or a cast iron skillet work great.

arrange potates evenly in the bottom of the dish. Sprinkle with Cheese, ham and green onions.

In a bowl combine eggs, milk, salt, and pepper. Pour egg mixture over potato mixture.

Bake, uncovered, in a 350 oven for 40-45 minutes or until a knife inserted near the center comes out clean. Let stand 5 minutes before serving.

Prepare as above, cover;chill up to 24 hours bake uncovered for 50-55 minutes.

Breakfast Sausage and Egg Casserole

eggs (up to 10 eggs (see note below))

whole milk (or skim milk or unsweetened plant-based milk)

cheddar cheese (or your favorite cheese,

chopped fresh herb (basil or rosemary are lovely)

black pepper

nonstick cooking spray

preheat oven 350F.

grease baking dish

Spray your casserole dish with nonstick cooking spray (I like avocado oil spray) or grease with oil or butter to prevent the egg casserole from sticking to the bottom of the pan.

melt butter and cook meat and potatoes

In a large skillet, over medium-high heat, melt the butter. Once melted, add the sausage and break it up with a wooden spoon to create crumbles. After about 3 minutes, stir in the diced potatoes. Cover the skillet and cook until the sausage is brown and the potatoes begin to sweat and soften (about 8-10 minutes).

Add the spinach to the skillet and continue to cook, uncovered, for about 2 minutes until wilted. Stir in the chopped green onions.

Pour the veggie and sausage mixture into the casserole dish and spread it out in an even layer. Instead of a casserole dish, you can use the same skillet used to cook the sausage and potatoes, as long as it&#39;s oven-safe. If you&#39;re doing this, simply turn off the heat and move to the next step.

In a medium-size bowl, whisk the eggs, milk, cheddar cheese, fresh herb, salt, and pepper.

Pour the egg mixture over the top of the cooked sausage mixture.

bake for 30-40 minutes

Bake the casserole for 30-40 minutes, or until the center of the casserole is firm. Check on the casserole around the 30 minute mark.

let cook for 5-10 minutes
