Egg Pizza with Scallions

ball Best Pizza Dough (or Food Processor Dough or Thin Crust Dough)

scallions (green onions)

mozzarella cheese

Pecorino Romano cheese

eggs

Olive oil

Kosher salt

Follow the Best Pizza Dough recipe to prepare the dough. (This takes about 15 minutes to make and 45 minutes to rest.)

Place a pizza stone in the oven and preheat to 475°F. OR preheat your pizza oven (here’s the pizza oven we use).

Prepare the toppings

Slice the green parts off of the scallions so they form long ribbons. In a small skillet, heat 1/2 tablespoon olive oil. Add the scallions and sauté until slightly tender, stirring, for 1 minute. Remove from the heat.

When the oven is ready, dust a pizza peel with cornmeal or semolina flour. (If you don’t have a pizza peel, you can use a rimless baking sheet or the back of a rimmed baking sheet. But a pizza peel is well worth the investment!) Stretch the dough into a circle; see How to Stretch Pizza Dough for instructions. Then gently place the dough onto the pizza peel. 

Quickly assemble the pizza

Brush olive oil over the dough and sprinkle with kosher salt. Sprinkle with the mozzarella cheese, then the Pecorino cheese. Top with scallions. Carefully crack two eggs on top and sprinkle with a bit of kosher salt.

Bake the pizza

Transfer the pizza to the pizza stone using the pizza peel, and bake until the egg white is set and the yolk is still runny, about 7 minutes.

Yum. I got most of the moisture out and added butter brushed on all surfaces on crust and cooked the crust way longer, but that's because I like crispy goodness! It's a hit.  I added fresh basil and five eggs each in a little cleared out well. Lol! Let IT set a bit! I cut between eggs so each slice had an egg in the middle. It feeds five this way.  Also 12 mins in oven for eggs with one min under broiler for perfect, slightly runny but cooked warm eggs! Omgoodness! Thank you for this receipe!

Honestly, one of the best breakfast pizzas I have ever had! So easy to make and turned out amazing. I used onions instead of chives.

Add add shaved Parmesan to the crust with garlic and onion salt. Topped it with a combination of mozzarella and cheddar then laid my eggs down then torn spinach leaves, cilantro, and green onions and bacon on the top. Yum yum

Eggs hard cooked after 15 minutes, next time 10 minutes.  Otherwise, turned out great!

Breakfast pizza, made with eggs, bacon, and cheese, is a great way to spice up your weekend breakfast or brunch routine!

Breakfast Pizza Recipe

bacon (2.90)

large prepared pizza dough* (0.62)

pizza sauce (0.53)

shredded cheese (2.49)

eggs (1.00)

green onions, sliced (0.35)

Cook the bacon in a skillet over medium heat until brown and crispy. Drain the cooked bacon on a paper towel lined plate.

Preheat the oven to 450ºF. Stretch the pizza dough out over a pizz pan, then spread the pizza sauce evenly over the surface (leave about ½ inch of bare crust around the outer edge).

Sprinkle the shredded cheese evenly over the sauce. Crack four eggs onto the pizza, spaced out evenly over the surface, the crumble the bacon on top.

Bake the pizza for 12-15 minutes in the preheated oven or until the crust is golden brown, the cheese is melted, and the eggs are cooked to your liking (solid whites, firm or liquid yolks).

Top the baked pizza with green onion, slice into 8 pieces, then serve!

This was so good! I have had major heart surgery recently, and have not been in contact with this site that much, but I am back and ready to rock and roll! lol Thank you so much for your great budget friendly recipes. This was dinner tonight, with leftovers for breakfast. It was awesome! I used whole wheat pizza dough which a local market sells. I couldn't stretch pizza dough into an even circle if my life depended on it, so ours was a 'rustic rectangle'. 😝 I used five eggs, plus dollops of homemade pesto. We piled baby spinach on top and ate it with knives and forks. This is a keeper for sure.

That's my go-to pizza order.  It's commonly called an Aussie pizza here... :)

Followed the recipe exactly. I let the classic pizza dough recipe do a three day rise in the fridge. Easy way to take it up a knotch and add a lot of flavor. 

This is pretty good, even without cheese (I know, I know, pizza without cheese is a travesty, but I'm lactose-intolerant - I would eat cheese if I could!). Since I only had regular tomato sauce, I threw on a bunch of spices, including some smoked paprika. Yummy!
